Keeping the Juma Biryani Ritual Alive. This time using @shanfoodsglobal Bombay Biryani Masala. Check my fool proof biryani and try my method❤️
Ingredients:
Chicken – 1Kg (I cut in 10 pcs)
Oil – ½ cup (increase if you want)
Ginger Garlic Paste – 2 tbsp
Onion – 1 Large (thinly sliced and golden fried)
Tomatoes – 500 grams
Potatoes – 400 grams
Yogurt – 1 Cup
Red Chili Flakes – 1 tsp
Red Chili powder – 1 tsp
Turmeric – ½ tsp
Whole spices mix – 1 tsp
Shan Bombay Biryani Masala – 1 Packet
For Rice:
Rice Basmati – 1 Kg
Cumin - 1 tsp
Cinnamon stick – 1-inch pcs
Star Anise – 2 flowers
Salt – as to taste (for Rice)
Vinegar – 1 tbs
For Layering:
Green Chilies – 6 to 8 pcs
Fresh coriander and mint - 1 bunch roughly chopped
Lemon – 1 (Juice), 1 sliced
Fried onions – ½ cup
Method:
Heat oil in the cooking pan and add chicken to the oil and fry with ginger and garlic paste till it changes the color, now add Bombay biryani packet along with, red chili, red chili flakes, turmeric and whole spice mix and cook on high flame. Now grind the tomatoes, fried onion, yogurt together and add to the chicken. After 10 min when the moisture is reduced to half add potatoes and cook till potatoes are tender and masala is on the dryer side and oil has been separated from the masala. Now heat water in a large vessel add the whole spices and salt as per your taste, 1 table spoon of vinegar and cook the rice half way through and strain them and set a site. Now take a pan with flat and large base, start layering by putting first layer of half qty of rice than sprinkle lemon juice, green chilies, mint and coriander, add the chicken and masala and cover with balance qty of rice again sprinkle the lemon juice add lemon slices, green chilies, mint and coriander. Add Saffron color add half glass of water and fried onions ½ cup and cover the pot with aluminum foil and seal it with cover. Now simmer this pot on high flame for 5-8 minutes and then slow down the flame and cook for another 20 – 25 minutes. Open the pot and mix with a rice spoon or plate. Serve hot and enjoy with salad and Raita

How the wild jungle fowl became the chicken | Science

From chicken biryani to khao mun gai, chicken and rice is a winning combo worldwide. But the two are more inextricably linked than even chefs realized. A pair of new archaeological studies suggest that without rice, chickens may have never existed.
The work reveals that chickens may have been domesticated thousands of years later than scientists thought, and only after humans began cultivating rice within range of the wild red jungle fowl, in Thailand or nearby in peninsular Southeast Asia, says Dale Serjeantson, an archaeologist at the University of Southampton who was not involved with the research. The studies, she says, have “dismantled many of the hoary myths about chicken origins.”
Charles Darwin proposed that chickens descended from the red jungle fowl—a colorful tropical bird in the pheasant family–because the two look so much alike. But proving him right has been difficult. Five varieties of jungle fowl range from India to northern China, and small chicken bones are rare in fossil sites.
In 2020, a study of 863 living chickens’ genomes confirmed that the jungle fowl Gallus gallus spaedicus subspecies was the ancestor of living chickens; chickens share more of their DNA with that subspecies than other types of jungle fowl. That in turn narrowed the site of domestication to Southeast Asia. Researchers have proposed fossils as early chickens dating back 8000 to 11,000 years ago in northern China and Pakistan. But genetics of living birds could not narrow the window for domestication, says geneticist Ming-Shan Wang, a postdoc at the University of California, Santa Cruz, first author of the genetic study. And they have not been able to get enough ancient DNA from fossil chickens to pinpoint the date. So paleo-anatomist Joris Peters of Ludwig Maximilian University of Munich teamed up with Greger Larson, a bioarchaeologist at the University of Oxford who is an expert on animal domestication. The duo organized an international team that began a comprehensive reevaluation of chicken bones, their dates, and records on them, from more than 600 archaeological sites around the world. In a separate study, the group directly dated chicken bones found in western Eurasia and Northern Africa.
They found the oldest bones of likely chickens came from a site called Ban Non Wat in central Thailand, where farmers grew rice 3250 to 3650 years ago, the team reports today in the Proceedings of the National Academy of Sciences. Farmers buried many skeletons of young members of the genus Gallus as grave goods along with other domesticated animals—strong evidence that these birds were domesticated chickens, rather than wild jungle fowl. The researchers propose that the rice seeds drew wild jungle fowl to rice fields, where the birds nested in thickets at the edge of the fields and got used to humans.
As the scientists traced the trail of chicken bones across Asia into the Middle East and Africa, they found a “striking” correlation between the spread of dry rice farming, millet, and other grains—and the appearance of chickens. Chickens appeared about 3000 years ago in northern China and India, the team found, and about 2800 years ago in the Middle East and Northeast Africa. The studies finding earlier chickens were flawed, the team argues, because either the fossils were not chickens or the dates were inaccurate.
To find out when chickens first entered Europe, members of the team directly re-dated bones from 23 of the proposed earliest chickens in Europe and Asia. The first chickens in Europe were found in an Etruscan site in Italy 2800 years ago, the team reports in Antiquity today.
The study is backed up by historical records, too—including the Bible. “Chickens don’t feature in the Old Testament,” says the study’s lead author Naomi Sykes, an archaeologist at the University of Exeter. “They burst onto the scene in the New Testament.”

It took another 1000 years before chickens spread north to Britain (with the Romans), Scandinavia, and Iceland. The subtropical birds likely had to adapt to the colder climates, says archaeologist Julia Best of Cardiff University, who was involved in both studies.
Still, it’s only recently that humans began to think of the birds primarily as food. Initially, people traded them as exotic possessions, valued for their feathers, coloring, and loud crow at first light, based on how they were depicted in art and buried as prized grave goods, Sykes says. Early chickens were smaller, she notes, and not a major source of meat. But the team’s review shows that about 500 years after chickens are introduced to each new place, they lose their special status and become an ordinary food.
The studies show that “the dispersal of domestic chickens is a more recent event than has been expected in the past,” says Masaki Eda, a zooarcheologist at Hokkaido University.
Still, Eda says he’d like to see follow-up research to make sure the bones in Thailand are definitely domesticated chickens, not wild junglefowl buried with humans. He also wants researchers to survey other sites in Southwest Asia to connect the dots showing where and how chickens were domesticated as rice and millet cultivation spread throughout Eurasia.
Even though chickens were domesticated later than other animals, they have become the most successful domesticated species on the planet, Larson says. Today, at 80 billion strong, they outnumber us 10 to 1. “This isn’t just about chickens or rice,” Sykes says. “How humans relate to chickens is a brilliant lens to understand how humans relate to the natural world.”

Sabeen’s Story: The traditional spicy biryani is our family’s favourite dish. I usually make it on weekends as we all gather on weekends after such a busy schedule so, I make biryani for lunch or sometimes for dinner as well. Well, I learned the proper method of making from the Shan recipes else from my family. I used to make it with my daughters most of the time and sometimes surprise them.
Prep Time: 2 hours (for lunch I start making it at 11 am and at 1 pm briyani is ready)
Ingredients: (for four to five persons)
3 onions
Half Kg Chicken
Oil (quantity as needed)
4 Tomato’s
Yogurt 3 tablespoon
2 potatoes’
3 green chilies
Salt as needed
Indian Bay Leaves 3 to 4
3 to 4 black peppers
Some Cinnamon
Cloves 3
Cumin seeds 1 teaspoon
Lemon juice 1 tablespoon
Shan Special Bombay Biryani packet
1 teaspoon ginger and garlic pastes
1 kg Rice
For garnishing mint and coriander leaves (quantity as needed)
1 teaspoon red food color
Directions:
Take a big bowl and soak the rice first
Add oil in pot and add add onion, fry until they turn golden brown
Now add chicken and fry until it turns white to light brown
Now add garlic and ginger pastes cook 2 to 3 mins
Add tomatoes, potatoes, one packet of Shan Bombay Biryani Masala Packet
Now cook it for further 10 mins at medium flame
After that add yogurt in it and mix
Add green chilies and slat as per the taste
Add half cup of water and cover it, the flame should be low another thing is also keep checking the gravy
Now take another pot fill half of it with water and add Indian bay leaves 2 to 3, 2 to 3 black peppers , lemon juice, 3 tablespoon salt, Cinnamon, Cloves, and Cumin seeds
When water starts boiling add soaked rice in it and boil them until they get cook not fully cooked
Now off the flame remove the pot and drain the rice in a colander and  another side your gravy is also ready
Now start layering biryani with gravy and rice, first layer of rice and add gravy and like this make 2 layers
Add coriander  and mint leaves now and food color now cover it for 6 to 8 mins
After 8 mins the spicy biryani is ready serve it with Raita and Salad

I felt so rushed doing chores today, I had alot of work to do before my hair appointment on Friday🙅🏻‍♀️. Lol I’ve been a day ahead of myself. Dishoom, Covent Garden Whether you’re a Londoner or tourist, Dishoom’s chain of restaurants is one to brag about and one of my fondest dining experiences in London. With five different locations (Edinburgh, Shoreditch, King’s Cross, Carnaby, and Covent Garden), you wouldn’t expect a long wait for walk-in dining but I would highly recommend making reservations (Thanks Shan!) ahead of time otherwise your wait be up to 45min, but it’s worth it!

Okra fries  Dishoom calamari Having been told that this restaurant was an ‘institution’ we had high expectations and we weren’t disappointed! For those who haven’t had okra before it can be a bit alarming as the innards are slimy so it’s not for all but I loved the spice battered okra fries. We also ordered a serving of their fried calamari to nibble on whilst waiting for the rest of our friends to arrive.

Chicken berry Brittannia Mahi tikka Spicy lamb chops Dishes here are designed for sharing which is perfect for an extensive selection form the menu. Really enjoyed the aromatic chicken biryani which had dried cranberries mixed through to give it a sweet note. For the mahi tikka, they used sustainable Asian basa fillet which is quite a flavourless fish so it relies heavily on the spices but this was delicious. Mouthfuls of tender flakes tszuj’d up with the yoghurty marinade and a spritz of lime juice. Whilst lamb isn’t my favourite, these were punchy in flavour and had us politely fighting over the last chop haha!

Rose & cardamom lassi Sherry Had a sip of the boy’s lassi which was recommended by our waiter and it was as the menu described it, a sweet and subtle perfumed love-letter. Since we had reservations, we skipped the queue but we still had to show the email confirmation before being seated. Whilst we were searching for the email, we were offered a complimentary drink from a selection of chai tea, mint tea or sherry. Yup, sherry! I believe they also bring out snacks for those in the queue every now and then. Reminded me of Japan!

Naan This was the highlight of our meal! Prior to coming here, the naan had been talked up by so many friends who had insisted that I dine at Dishoom. Hand made and baked to order in the tandoor, the naan bread is truly one to froth over. We ordered the garlic naan which had minced garlic and coriander sprinkled through, and also the cheese naan which had lots of melty cheddar, needless to say we had to order more than one round!

Chicken ruby Tender chicken in a rich and flavourful thick curry makhani sauce. Loved the lip smacking, butter based tomato cream sauce mixed in with the basmati rice. Another outstanding dish where we ordered thirds!

Kingfisher beer “Beer came to India with the old British Empire. At present, this mild and malty easydrink lager is India’s choicest favourite.” Needless to say we thoroughly enjoyed our meal, look forward to dining here again on my next trip to London!

Sub chawal saaf kar ky Achi tarhan dho lein or 1 ghnta bhigo dein.
Ab tammam vegetables ko dho kar Julien cut may kat lein or matar ko boil kar lein.
Ab tammam ingredients ko ready karlein.
1 patily may pani boil kar lein phir taste ky mutabeq salt dal dein or yellow food colour dal dein or mix Karen.
Ab chawal shamil Karen or boil kar lein note(chawal ko kani py nahi chorna full boil karna hai).
Jab chawal boil ho jain to chaan kar alag rakh dein.
Ab ek karahi may Oil dal dein.
Ginger, garlic paste shamil karen.
1minute fry karein.
Ab chicken shamil karen.
Chicken ko salt dal kar 2-3 minute tak cook Karen.
Phir chicken masala powder or black pepper powder dal kar mix Karen.
Ab medium fleam par bhunai Karen yahan tak ky chicken gal jay.
Ab chicken may tammam vegetables shamil karen.
Vegetables ko mix karen or kannor chicken cube dal dein sath hi vinegar or soya sauce b dal dein ab in tammam ingredients ko Achi tarhan mix karlein or fleam ko bilkul slow kar dein.
Boiled ki huy chawal shamil karen or 5 minute ky liy cover kar ky steem py rakhin.
Ab ek frying pan may oil dal kar thora garam karein egg beet kar ky pan may dal kar fry kar ky Omlet ready karlein.

Shan-A-Punjab to Move Into Old Rubin’s Space
Move date set for sometime in November or December
Why did the Indian restaurant cross the road? To get to the other side, of course. Brookline’s Shan-A-Punjab — a popular Indian restaurant serving staples like tandoori chicken, dosa, and lamb biryani — is set to leave its current location at 455 Harvard St. this autumn, but it’s not going far.
An employee confirmed the plans, which include moving across Harvard Street into the space once occupied by the bygone Rubin’s Kosher Delicatessen, which closed last summer after almost 90 years in business. The two properties are separated by a mere tenth of a mile — a convenience Shan-A-Punjab’s existing patrons will no doubt enjoy.
Both properties are owned by the Danesh Group, a Brookline-based real estate, development, and management company. The Danesh Group also owns 45 Marion, a luxury apartment complex in Brookline’s Coolidge Corner neighborhood.
When the Danesh Group acquired the Rubin’s property at 500 Harvard St. last summer, Danesh Group principal David Danesh told the Boston Globe that they did so to save Rubin’s “from being knocked down and turned into condos.” Danesh said his real estate group was “doing the best we can to save Rubin’s.” It appears that, at least for now, those plans have changed.
It is unclear what the Danesh Group plans to do with the 455 Harvard St. property once Shan-A-Punjab has vacated. Eater has reached out to the Danesh Group for comment; this story will be updated if new information becomes available.
