watching (or listening) skyward sword playthrough again and thinking how the Stormwind ark has some tidbits that resemble Loftwings but the birds probably went extinct before the ark was made
I know I know timeline doesn't necessarily even connects the two games but let me have fun with this, the devs clearly had a lot of love for skyward sword when they worked on the tears of the kingdom
(also fun to think that Rito didn't exist yet, they would feel right at home at Skyloft)

In my headcanon, I believe that the people of Skyloft have a relationship with their Loftwings that is similar to the Air Nomads and Sky Bison in ATLA. Just like how the Sky Bison were the original Airbenders and the companions of the Air Nomads, the Loftwings were the ones that taught the people of Skyloft how to fly and remain as their "other halves" to this day.
This idea was taken from the canon dialogue in Skyward Sword that states, "Skyloftians consider themselves to be one half of a pair until they are made whole by the Loftwings. When a Skyloftian is young, they meet their bird companion under the Statue of the Goddess. Having a Loftwing and being able to ride it separates the kids from the adults."
This sign of a Skyloftian child turning into an adult is shown as the kid meets their Loftwing counterpart and begin losing their baby feathers. As they grow up, their feathers will gradually molt and be replaced with colors the same plumage as their Loftwing counterparts. Afterward, their Loftwing will guide and teach them how to fly with the help of their parents.
Now you may be wondering, if the people of Skyloft have wings of their own, why do they still ride their Loftwings? Well one reason would be because the children on Skyloft still aren't able to fly for the first several years of their life. As a parent who may have one or more children, having a Loftwing to ride on would be a huge help rather then struggling to carry children and fly at the same time. There are also other circumstances to consider such as carrying large loads such as groceries or furniture, flying far distances, and combat that are all made easier with the help of a Loftwing.
Now back to Sky, seeing as his Loftwing is known for its bright crimson feathers and is modeled after the Shoebill bird you can expect the same characteristics to be shown in his own wings for this au. Despite his poor running stamina, he's a VERY strong flier, if not the best out of all the Links due to growing up in the sky and having a giant bird teach him all the tricks. However, as shown in Skyward Sword, "Loftwings cannot fly during the nighttime since they have a terrible night vision, and only those which have been specially trained can fly in the dark." Sky has most certainly had special training to fly in the dark due to his history at the Knights Academy so he is capable of flying in the dark, but I do believe that his night vision is worse than other Links.

Good question!!
Some of these choices of mine are based off of other headcanons that others have shared and that I agree with but I do not remember where I have seen them before. I take no credit but cannot give credit where credit is due.
That is my disclaimer. ^.^*
Now!
Wild is a Fox.
Do I have a specific fox in mind?... No I do not. But a red fox or a silver fox work just as well in my book.
Warrior is a Stallion
Give Mr. Soldier Man the Pretty Boy TM look he deserves. A war horse with style.
Legend is still his Bunny.
That's just canon and I don't feel like changing it.
Four has Options.
The obvious one would be to make him a Mouse like the minish but I saw one where he was a Humming Bird. ...I'm leaning more for the humming bird because pretty colors. Not to mention that humming birds will also mess you up if given the chance. I think it could go either way and still work. XD
Wind... also has Options.
I've seen a lot of people put his animal as a Seagull and I'm completely inclined to agree. However, I wanna see this boy as an Otter because I think it's adorable.
Hyrule is a Stag.
I feel like there's a hidden joke in that sentence but I don't have the cultural context to pick it out and I'm stealing this as a headcanon because I saw very pretty art once and it's been in my head ever since.
Time is also a Wolf.
I feel like this is also canon and I don't feel like changing it either. If I had to change it though, I would probably say he'd be a silverback gorilla. Make him huge and imposing, protective, the leader, but gentle and tender.
Sky is a Shoebill Stork.
Those birds are literally what loftwings are based off of. But don't make him a loftwing. He's the stork. A different creature entirely.

I think he'd be the Wind Dragon. The connecting horns are based on the goats Link herds in Twilight Princess and I gave his mouth a slight shoebill lean from loftwings.

Headcanons for the Links.
Sky 
A very tired badass. 
He has type 2 narcolepsy- it is mild enough that it doesn't cause too many issues but unfortunately other than trying to sleep he can’t do much for it. 
 Loves big birds. His loftwing is his favorite living being other than Sun so there is some affection for bigger birds that comes through. Through their journey he gets introduced to a bird that resembles a Shoebill and just spends hours watching them. 
One of the best swordsmen.

Time
Uses verbal speech to communicate now that he has grown up and had a chance to move past some of his trauma, however when he is alone with Zelda/ Sheik they typically use only signs.
Only puts up with coocoos for Malon.
Find’s Wild’s Koroks to be incredibly amusing especially when he learns of their pranks. 
Has what they can figure out about the timeline and their places drawn out in a book he keeps with him. 
Warriors
Third oldest of the group- he is only about six months younger than Twilight but refuses to admit it.
Can’t understand Koroks language but he understands and is great with all kinds of fairies. 
Actually has three of the same scarf. He pretends to be completely attached to it like it is one of a kind but almost always has a spare in his bag. 
A one of the best swordsmen of the group. 
Totally uses his scarf to fight people. - he is constantly tripping and smacking enemies or the chain with it when he fights/spars. 
Legend
Actually loves getting his hair done and dying it but since meeting the captain and teasing him he has to be subtle about his appearance. 
Enjoys trading little knit knacks and items with Wild. 
He is actually pretty close with Sky and enjoys just existing with him during breaks and at camp before they go to bed. 
Twilight
Great Horseman. Before his adventure he was a great rider but during his adventure he became great at fighting while on Epona.
He can cook basic things like meat skewers, he knows how to make pumpkin soup but it is completely different from the one from skyloft and because of this he and Sky fight over which one is better every time someone suggests pumpkin soup.  
Sometimes forgets that he could turn back into a person to do tasks. This leads to Time and Four being extremely confused after finding him trying to open doors or the buckles on a bag with his paws. 
Wind
Loves to braid complicated sailor knot like braids into those with hair long enough- i.e. Four, WId, and legend. 
Before the chain's journey he was a terrible cook. He still isn’t an amazing one but after helping Wild cook usually at least one meal a day for months he has learned some valuable skills to show off for his grandma. 
Is amazing at throwing daggers. Learned to win a bet again’t Tetra and has been improving ever since. 
Hyrule
Terrible cook because he is half fairy. His fairy side mixes things up between what would taste good for hylians and what is full of magic/ good for fairies. 
Pyromaniac. He loves a good explosion but none of the Chain believe Wild when he says Hyrule is responsible for half of the explosions they cause. 
Amazing artist. His cave is covered in paintings made from ash and plants that depict his adventure or his nightmares. 
Four
Has the urge to tell the chain about how he is made up of four people at least once a week in the beginning. 
Contrary to popular belief he actually enjoys working with Wild to teach him more about weapon care and making a weapon he can’t break. 
Constantly knocks the knees out from under Warriors, Twilight, and Legend. Not because of short jokes but because he enjoys causing chaos like every reincarnation of the Hero’s spirit and seeing their faces as they go down is too priceless. 
Wild 
His world has soul paint, and he is covered in it but none of the others have it or can see it and it sometimes leads to awkward moments where he mentions some of the colors and the others just stare at him. 
One of the best swordsmen out of the group. He was beating full grown men as a child and he had months for his journey to remember/ relearn. 
Open book about the basics with the chain but most of his journey/ life is kept very private.

Tears of the Kingdom had the perfect opportunity to establish Loftwings among BOTW and rebrand them among longer time LOZ fans as something fun and amazing but they wasted it.
Some people aren’t going to like the Zonai devices (I’m sorry, I find it tedious) and they could have made it easier for fans who don’t like it to get to other sky islands while still allowing those who do to use the Zonai devices and builds as a more challenging and creative solution to getting to the islands.
The main complaint I’ve seen older Zelda fans make about the Loftwings is that they were hard to control and I agree. However, the developers have gotten a lot better at making controlling things easier. I have little doubt in my mind that they could have taken the Loftwings and made them as easy to control as horses.
It would also make it so much easier to explore Hyrule from above and get a true bird’s eye view of it as you wouldn’t have to worry about running out of charges. That is the man thing stopping me, personally, from exploring the sky islands is because they’re so far apart from one another that if required builds to get to them and that takes time and resources even with auto build.
We could have gotten to see Loftwings again! They’re designs are beautiful. Shoebill storms are gorgeous and make a unique and amazing model for them. It was a wonderful design choice in my personal opinion.
We could have either gotten to train them like horses or we could have stuck with Skyward Sword lore and gotten a cutscene. Just imagine walking up to a group of Loftwings and getting to choose one based on your preference and getting a cutscene where it comes up and chooses you! It would have been so cute!
Also, we could have named it. Another complaint I’ve seen about Loftwings in Skyward Sword is how hard it was to get attached because it didn’t even have a name. However, there could have been a stable run by constructs that you could take them to to register, even if you could only register one. You could name it, bond with it, maybe even customize it like with the horses and gather material to give to constructs to make certain reigns or even find them in side quests.
Don’t get me wrong, I love Tears of the Kingdom but it just seems like such a missed opportunity to not include Loftwings again. I know there were complaints about them but it seems they now possess the technology and skill to have those complaints fixed. I miss these big billed birds, okay?
