Don’t know if someone has already done this but here we go:

Sunlight Soufflé!

The gourmet is known for the finicky instructions he provides in Uncommon Taste, but this Breton dish is actually simple enough to make, even if you don’t have a hickory wood spoon. The result is a light, fluffy meal of egg & cheese with an exquisite flavor that can easily be tweaked and embellished to your own tastes.

Prep: 20 minutes
Cooking: 20 minutes
Makes: 4 servings
Pairs well with: fresh fruit, toast, coffee or tea
Ingredients:
4 eggs separated into yolks and whites
2 tablespoons unsalted butter
2 tablespoons all purpose flour
3/4 cup warm milk
2 1/2 ounces grated Parmesan cheese (about 3/4 cups)
1/2 teaspoon nutmeg
Salt & pepper
Directions:
1. Preheat oven to 375° and lightly butter four 6-inch ramekins.
2. In a medium bowl, beat the egg whites until they form soft peaks then set aside.
3. In a small sauté pan or skillet, melt the butter over medium heat, then stir to make a roux. Cook for a minute or so until all the flour is incorporated, then gradually add in the milk while stirring. Stir for a few more minutes until the whole mixture has thickened. Remove from heat and stir in cheese, nutmeg and a dash of salt & pepper.
4. In a large bowl, beat the egg yolks for 1 minute, until they are pale & creamy. While still beating, gradually add the cheesy roux from the sauté pan & mix throughly. Gently fold in the egg whites, then divide the mixture evenly between the prepared ramekins.
5. Bake for 20-25 minutes, or until puffed & lightly brown on top. Don’t be tempted to open door for a peek! It can cause the soufflés to collapse. Serve immediately and behold, the brilliance of the sun!

Orange Creamsicle Overnight Oats
½ cup rolled oats
½ cup greek yogurt, plain
¼ cup milk
¼ cup orange juice
1 tbsp chia pudding
1 tsp vanilla extract
Fresh Orange zest
In a bowl, mix the greek yogurt, milk, orange juice, and vanilla extract. Add the rolled oats, chia seeds, and orange zest. Scoop out into a small jar or cover the bowl and let it sit in the fridge for at least 6 hours to overnight.
Banana Brulee Oatmeal
1 cup rolled oats
1 cup water
1 cup milk
1 banana, cut in half
½ tsp cinnamon
Brown sugar
Topping options:
Walnuts
Cacao nib
Shredded coconut
In a saucepan, add rolled oats, water, milk, half a banana, sliced into small pieces, and cinnamon. Mix and let it heat up on medium heat for 8-10 minutes or until the liquid has completely absorbed. Remove from heat and transfer to a bowl. Top with half a banana, sliced lengthwise. Add brown sugar and caramelize with a creme brulee torch. Top with your favorite oatmeal toppings - I forgot to share in the video, but my FAVORITE is shredded coconuts and cacao nibs. The crunch and texture is so good.
Bagel & Spicy Chive & Garlic Cream Cheese hack
Everything bagel
4 oz cream cheese at room temperature
1 tbsp milk
1 tbsp green onions, sliced
1 clove garlic, minced
1 tsp thinly sliced jalapeno
Salt & pepper
In a bowl, add the cream cheese, green onions, garlic, jalapeno, and salt into the bowl. Mix well and then spread on your favorite toasted bagel.
Browned Butter sage & garlic egg in a hole
1 slice of bread, cut a hole in the center
1 tbsp butter, divided
1 clove garlic, minced
4-5 sage leaves
1 egg
In a pan on medium heat, melt the butter and place the toast on the pan for 2 minutes. Flip it over and in the center/hole, add a whole egg. Cover and let it cook until the whites are set - about 2-3 minutes. Move the toast aside and then add the other half of butter, garlic, and sage leaves. Fry them up for a minute until the garlic is golden brown, and then spoon it right on top of the bread. Season with salt and enjoy!
Soufflé pancakes
1 egg separated
1 tbsp ap flour
2 tsp cornstarch
1 tbsp milk
1/2 tsp vanilla extract
1 tbsp sugar
in small a bowl with egg yolk, add flour, cornstarch, milk, and vanilla extract. mix well and set aside.
in a larger bowl with the egg white, mix until foamy then gradually add sugar. whisk until you get glossy stiff peaks.
add half of the egg yolk mixture to the egg white and mix well don't worry about being too hard on it. make sure it's thoroughly mixed. add the rest of the yolk mixture and gently fold it in - don't overmix at this point.
in a pan on medium-low heat, wipe some oil on it then layer scoops of the batter on the pan. add two tsp of water and cover for 2 minutes. to make it fluffy, add an extra scoop of batter on top of and close the lid for another minute. flip or roll the pancake over and add two more tsps of water. cover and cook for another 3-4 minutes until the exterior of the pancake looks dry. make sure to adjust the heat if pan is getting too hot. let it sit after removing the lid for another two minutes to set and transfer to plate. dust with powdered sugar and top with strawberries. enjoy!

Sandwiches with baby LaRusso’s and Johnny’s first attempt at mac and cheese. Ali’s brunch at the country club: egg with lobster and caviar. There were also raspberry pancakes (this recipe is for lemon raspberry pancakes) with gold leaf.

I did enjoy the pancake skit, but I do think using an owl as a stamp is unsanitary. XD As for the Symphonia Cast... Lloyd: He's a simple sort of guy so he probably likes regular old flapjacks. He's also more of a meat kind of person if I remember correctly, so he probably prefers his pancakes as a side to some bacon and eggs (Two of each for double the power? XD) Colette: She is a known fruit fiend so her pancakes are probably filled with blueberry and strawberry and banana and piled high with fruit salad as a topping. I'm not sure how big a condiment syrup is in Japan, now that I think about it. I know Fruit Sando is popular, that is, a soft sweet white bread sandwich filled with whipped cream and fruits. But I'm not sure if they eat these kinds of things with syrups. Maybe? Colette likes fruit so I assume she would have it with syrup and whipped cream, too, but maybe just the whipped cream? Genis: Crepe supremacism. Thin pancakes, strawberry and Nutella filling, powdered sugar and sweet cream. Probably also goes for an egg and cheese crepe as a snack. Raine: You know soufflé pancakes? Those, but severely failed and with lemon because Raine refuses not to experiment. Curdled scrambled egg in the middle, pockets of unincorporated baking powder and flour, and soggy, curdled eggy milky pieces of lemon on the bottom. I also guarantee she's accidentally poured soy sauce on them and insisted they were good and now she does it on purpose. Zelos: Soufflé pancakes but done correctly. Powdered sugar and butter on top, fruit salad (heavy on the melon) on the side. Sheenah: Savory crepes. Literally the breakfast wrap queen. Tons of egg, meat and veggies in a crepe which is then wrapped in a second crepe with a cheese or sauce. Alice: Ham and cheese crepe, coffee with cream, no sugar. If she goes for a sweet crepe, it's strawberry and dark chocolate. And I know you said excluding the Centurions, but how about I do anyway? Tenebrae: Galaxy crepe with Dark Chocolate filling. (Not to eat, he just wants to appreciate the color.) Aqua: Pancake Mural of Richter. Yes to eat. She doesn't need to eat but damn it she's not getting Richter to touch her any other way so... Aster: Would trade his pancakes for a good donut but will bite your head off if you touch his pancakes in the absence of a donut to trade. Flapjacks, butter, boysenberry syrup. Yes boysenberry syrup. I guarantee this would have frustrated Richter to no end because it's not a common syrup and Aster's a diva and demands it. P.S. That distraction tactic won't work on me because I'd just want BOTH a chocolate spoon AND pancakes. Though I do agree pancakes are more filling.

Spent a long weekend digging out a 60’ flowerbed and planting irises and sunflowers and it healed my soul a little. The smell of each type of dirt as I dug it out and filled it back in with dark, rich soil and compost: metallic, petrichor, sweet, the sharp, almost-a-sneeze smell of pine. The fragrant bursts of green as I pulled out weeds.
I want to quit my job and do nothing but dig up my entire yard and plant an entire habitat. I want to do nothing but sit in the sunshine and rest. I want to make endless quilts and learn how to cut dovetail joins so I can make my own furniture. I want to make so much art it fills up the whole house with no room left. I want to learn to sew and create gorgeous handmade clothes. I want to read endless stories and say hi to my neighbor and come inside and cook elaborate dinners. Soufflés and Dutch babies and savory French toast with the fancy cheese and sautéed mushrooms on top. Breakfast for dinner. Apple crumble. Roasts that cook all day. I want to dig potatoes from the ground and pick tomatoes off the vine outside and bring them into my kitchen. I want to snap fresh herbs off their stems as the laundry hums in the other room. I want the windows open as the smell of Murphy’s oil soap wafts through the house from the freshly mopped floors.
I want time and energy and music and laughter and the feeling of ease every day. Is that too much to ask?

Our dinner this evening was at Prime C, the second of two specialty restaurants aboard @azamaravoyages Pursuit: Egg Salad with caviar; Classic Steak Tartare with capers, red onion, parsley, Dijon mustard, and brioche toast; Baked Goat Cheese and Onion Marmalade Tartlet with red beets, berries, caramalised pecans, and raspberry dressing; Seared Ahi Tuna (OMG ... soooo good) with white and green asparagus, blue cheese bread soufflé, and sautéed broccoli; and Scotch Whiskey Chocolate Cake with Baileys mousse and vanilla gelato. Deborah Madison’s Soufflé Cheese Toasts
Adapted from The Savory Way by Deborah Madison
Think of this recipe as a template. Slick the bread slices with chile paste, or rub a fresh tomato over them before baking. Use Monterey Jack or fresh goat cheese instead of cheddar. Most any cheese really. Dust on some chopped parsley or chives after the toasts are finished. You’ve got options. Endless ones.
Ingredients
12 baguette slices or 4 slices of larger bread
2 eggs
1 tsp Dijon mustard
Pinch of cayenne or paprika
¾ Cup finely grated cheddar cheese
Salt
1 Tbsp grated Parmigiano-Reggiano
Freshly ground black pepper
Directions
Preheat the oven to 400℉.
Separate the whites and yolks of the two eggs. Lightly toast the bread slices on a baking sheet, then set aside.
Beat the yolks with the mustard and cayenne or paprika in a medium bowl, then stir in the grated cheddar. Beat the whites with a pinch of salt until they form quite firm peaks. Fold the beaten whites into the yolk mixture. Divide evenly among the toasted bread on the baking sheet, then sprinkle each with the Parmigiano-Reggiano. Bake until puffed and golden, about 6 minutes. Grind on some black pepper and serve immediately.

DAY 50, SEPT 20, Paris, France 🇫🇷
Today we had nothing on the docket so we slept in, and you know we don’t do anything halfway! At 11am, we got out of bed, and Chels went for a run while Sam got our usual from the bakery down the street. Paris life is pretty great!
We didn’t have a whole lot we wanted to do today which was just fine because we have been going each and every day since we started this trip! After Chels’ run, we got ready to go walk around, and grabbed some picnic materials from the store.

One of the places we hadn’t seen yet was the Notre Dame, and even though it was still closed from the fire a few years ago, we wanted to see it! So, we took the metro, and sat in front of the cathedral for a few minutes to take it all in.

From there, we were craving a little picnic action by the Eiffel tower, because we had seen so many people doing it when we were there last (at Champs de Mars). So we brought our microfiber towels and our picnic materials and camped out in the park. It was a fantastic little snack, and then we got back to playing Rummy. We’re all tied up now (Sam hates to admit). It started to sprinkle so we finished up our game, and then it started raining a bit more! As they say, Paris is beautiful in the rain.

On the way back to the hotel, we found a running store, so Chels was able to get some new inserts (all the walking and hiking and running we’ve been doing has worn them out!). 
Tonight was our real fancy plans for the trip though! We had reservations at this amazing restaurant called Comice in the 16e. It was a little out of our comfort zone, but Sam had really wanted to try a multi-course meal in Paris just to see what it was about! Get ready for the play-by-play!

1st up was the complimentary appetizer, some little cheese balls that tasted like soup! They were super tasty. Then, we had a tomato basil gazpacho that was super good as well, with some homemade sourdough toast. Next up was our first course, two appetizers: a fish carpaccio with lime and celery, and foie gras with stone fruits. AMAZING. We also sprung for the wine pairing that was so incredible! Comice is run by a husband (chef) and wife (sommelier). Each wine we had perfectly matched the dish.

For the main courses we had a pasta with shellfish, and a french chicken dish with polenta. So tasty. We then took a little diversion from the planned menu to try some traditional french cheeses! Unfortunately we didn’t catch the names of all of them, or much pictures for that matter, because were so caught up in the moment! We paired the cheese with a wine from near Lisbon which was super cool as well. Dessert was the last thing to eat, and we had a traditional chocolate soufflé with vanilla ice cream and a tawny wine that tasted like port! Seriously this is one of the best dinners we’ve had together! And definitely the most expensive!

To top off our evening we had a lovely walk back to the metro with a full moon, and another light show on the Eiffel tower.
