Done with salted egg yolks: week of 6/7/21
Quieter week, but finally used up the salted egg yolks and made the chiffon cake.
Seeded soft sourdough sandwich bread
Grade: B+
Toasted the seeds this time. Also baked my cutting board which resulted in a mysterious strange smell. Oops.
Recipe: soft sourdough sandwich bread recipe from Homemade Food Junkie
Modification: toasted seeds folded into the dough

Sourdough chocolate chip hazelnut scones
Grade: A-
Should’ve used baking soda to reduce the acidity, but otherwise tasted nice, and having the flakiness from the butter was great.
Recipe: sourdough discard scones from Baking from Scratch
Modifications: double cream instead of heavy cream; chocolate chips and toasted hazelnuts as mix-ins

Sourdough salted egg yolk chiffon cake
Grade: A-
I think the savoriness could’ve been stronger and maybe the cake could’ve risen better, but I really like the taste.

Modifications: substituted 50g sourdough starter for 8-inch recipe (baked in 4-inch tube pans + ramekin); reduced sugar

Okay so I call this Huevos El Bosque (Eggs from the Woods) my take on Huevos Rancheros.
Key differences are that it is sourdough discard flatbread with cilantro, instead of corn tortilla switching up the prairie grasslands wheat 🌾 for the Spanish corn 🌽 . For the the meat I used deer meat 🦌 that we hunted and butchered last season (slow cooked and shredded overnight) instead of beef 🐄. And then using a salsa verde to make the green colouring pop more with the avocado, to give it the forest vibes. 🌳 🌲 🌲
I probably would’ve added a sprig of pine needles for the final touch. 😉
I try my best to think of all aspects of a meal. The look, the taste, the placement and arrangement, the source of the ingredients. I’ve never been to cooking school but I understand beauty and food.
