Ancient Recipes: Apricot Dessert (Apicius, De re coquinaria)
Did you know when you Google Apicius, they call him a professional chef?

Given that he was the closest thing Ancient Rome had to Betty Crocker or Martha Stewart, we guess it makes sense. These apricots are a fantastic dessert from De re coquinaria (c. 5th cent. CE), arguably the best-known Ancient Roman cookbook. They likely would have been enjoyed at room temperature, but taste fantastic after being chilled. We make this at every rendition of our Ancient Food Day, and it's always a hit.
Latin: duracina primotica pusilla precoquiis purgas, enucleas, in frigidam mittis; in patina conponis; teres piper mentam siccam; suffundis liquids; adicies mel passum uinum et acetum; refundis in patina super precoquia, olei modicum mittis et lento igni ferueat, cum ferbuerit, amulo obligas, piper aspargis et inferes. (De re coquinaria, 4.177)
Translation (by John Liao): Wash firm, early or small apricots, pit them, and put them in the cold [water]. Arrange them in a pan. Crush pepper and dried mint, pour over liquamen and add honey, passum, wine and vinegar. Pour over the apricots in the pan. Add a little oil and heat on a low flame. Thicken [the sauce] with starch while it simmers. Sprinkle with pepper and serve. 
Ingredients
10-12 apricots (pitted and halved if fresh, rehydrated in water overnight if dried)
1 ½-2 tbsp freshly cracked black pepper (plus extra for garnish)
1 tbsp dried mint flakes
1 tsp garum/liquamen (substitute fish sauce if you can't find/make it yourself)
3-4 heaping tbsp of honey
3/4 cup of red wine
3/4 cup of passum (also known as raisin wine. Substitutes can include cranberry juice (less sweet), grape juice (more sweet), or ice wine (if you don’t have to make this for a school event).
1 tsp of vinegar (2 tsp if you're not using passum/alcoholic passum substitute)
1 ½ tbsp of olive oil
½ tsp corn starch
3-4 tbsp cold water
Our Recipe
Soak halved, pitted fresh apricots in cold water for 15 minutes (skip if using rehydrated fruit)
In a wide pan (at least 3 inches deep), lightly toast the black pepper and mint at medium heat until fragrant.
Add the liquids: honey, passum, wine, vinegar, and liquamen. Bring to a simmer and stir until well incorporated, and the honey has dissolved. Continue simmering to cook off the alcohol. If the mixture begins to reduce too much, add water in small amounts.
Once the desired amount of alcohol has been cooked off, add the apricots. Continue simmering until apricots reach your desired texture (usually 8-12 mins).
Remove the apricots from the pan. Mix cornstarch with cold water into a slurry, and add to the remaining liquid. Stir and cook until thick, then pour over reserved apricots. Let cool.
Serve chilled or at room temperature, with fresh black pepper sprinkled on top.
Below, we served them with libum (Roman cheesecake) and statites (Ancient Greek spelt crepes).

Some more anachronistic ways to serve this can include using it as pie or tart filling, mixing it with Greek yogurt, or serving it with vanilla ice cream while it's still hot (sort of like a poached pear situation).
Some FAQs
Q. "How long do I actually boil the sauce?"
A. As long as you want, depending on how much alcohol you want in the dish (we serve these at school events, so we have to boil it to hell and back to get rid of all the alcohol).
Q. "The ancient recipe says to cook the apricots first, why do you make the sauce first?"
A. When we tried the apricot-first method, the apricots fell apart and turned the whole thing into a jam-like stew because of how long we had to cook the sauce. It tasted great but lacked the nice texture of the whole apricots.
Q. "Can I substitute ingredients 1-1?"
A. Generally, yes. For our passum substitute, we use cranberry juice for its tartness, but any of the three substitutes work. However, if you have the ability to make/buy garum and passum, definitely give it a try!

Sweet Wine and Honey Poached Pears (Vegetarian)

These Sweet Wine and Honey Poached Pears make a delicate, falvourful, light dessert, which is also delightfully warming. Happy Monday!
Ingredients (serves 2):
2 medium pears, not too ripe (they need to be firm to hod their shape)
3/4 cup sweet white wine, such as Coteaux du Layon or Sauternes
1/2 cup water
1 1/2 tablespoon pure, raw honey (something woods-y like heather honey, or if you like a strong flavour, chestnut honey)
1/2 plump vanilla bean
Using a vegetable peeler, peel both pears; set aside
In a medium saucepan, combine sweet white wine and water. Add honey. Finally scrape seeds off the vanilla bean, and stir into the saucepan, along with the empty pod. Bring to a slow boil over medium heat, stirring to mix. 
Once the honey is melted, add pears to the pot. Cook, about 3 minutes, then turn the pears, and cook, another 3 minutes. Then, reduce heat to medium-low, cover with a lid, and simmer, 10 minutes. Finally, remove the lid, reduce heat to a low flame, and simmer, about another 10 minutes, gently turning the pears in the wine and honey syrup every now and then, so they cook evenly, until they are tender.
Serve Sweet Wine and Honey Poached Pears warm.

Roman Pear Cake “Patina”
Today, I'll be making a sweet dessert recorded by Apicius - the simple pear patina, which is kind of like a baked sponge in terms of texture. The original recipe requires some ingredients that are difficult to get a hold of today, so I've substituted some close modern approximations - which work just as well!

Ingredients 5 pears white wine (to cook the pears) 2 tbsp honey pepper cumin 1/2 cup sweet wine 4 eggs 1 tbsp olive oil
Method
1 - Poach pears
To begin with, we need to prepare our pears. Do this by pouring most of a bottle of wine into a pot large enough to accommodate your pears. You can also use water, if you're not keen on using alcohol! Place this over a high heat, and bring it to a simmer.
When it's simmering steadily, carefully place your pears into the liquid, before pouring a couple tablespoons of honey over this. Make sure the liquid covers the pears when they're touching the bottom of the pot. Return to the heat, and let the pears poach partially for about 5 minutes, or until a knife, when inserted into the centre of one, comes out easily.
Drain your pears, and let them cool to room temperature, before you deal with them. Technically the leftover liquid doesn't get used later on, but it's perfectly drinkable as is! It's a super sweet, mildly pear-tasting wine!
2 - Prepare Pear Mix
When your pears have cooled, divide each one into pairs of pears using a sharp knife. Then carefully cut the tough, fibre-filled core of the fruit. The skin of these should be practically falling off, but remove them anyway.
Place the softened fruit into a large bowl, and toss a tablespoon of ground cumin on top of this, along with a few twists of freshly ground black pepper! On top of this, add another squeeze of honey, and a little splash of olive oil. Also pour in a half a cup of a sweet wine into this - I used a bit of the poaching liquid, but passum (a raisin wine) is used in the original recipe, but any sweet wine is suitable. Mix all this with a mortar and pestle - or a fork, if you're not from antiquity - until it's just combined. When it's mixed, crack four eggs into the bowl, and mix everything until there's no more streaks of egg visible.
3 - Bake the Patina
When your mixture is done, go lightly oil a baking dish. It's likely that a terracotta pot would have been used in antiquity, but an ovenproof baking dish works well today. Don't over-oil the inside too much!
Gently pour in your pear mixture, and place the whole thing into the centre of an oven preheated to 180° C / 350° F for about 45 minutes, or until a skewer inserted into the centre of your patina comes out clean.
Let this cool to room temperature before digging in! Don't worry if it deflates a little, this is to be expected and is completely fine!
The finished dish is very sweet, with only a very slight hint of pear. Although it seems a little plain, this pairs fantastically well with hard, salty cheeses, and sharp-tasting dishes (such as olives in vinegar) - as such, it's unlikely that this was eaten alone as a dessert, more likely it was a companion dish that was intended to be a complimentary dish to others.

Poached Pears, Two Ways
WEDNESDAY, Sept. 4, 2019 (HealthDay News) — Looking for an elegant dessert that’s healthy, too?
Poached pears are ideal because they’re sweet and hold their shape well during cooking. They can also be topped with a sweet finish or a surprisingly tangy one. Either way, you can wow guests at your next dinner party.
Pears are a filling fruit, high in fiber and a long list of antioxidants. They’re in season in the fall, but can often be found year-round. Bartlett, Bosc or any other variety will work well for this recipe. Just be sure to choose firmer pears so they don’t get soggy after poaching.
Peeled pears can be poached in red or white wine, depending on the color you’d like them to have when cooked, but will be just as delicious using water and spices.
Sweet or Savory Poached Pears
4 firm pears, such as Bosc or Bartlett
1 tablespoon honey
1/4 teaspoon cinnamon
2 ounces dark chocolate, melted
2 tablespoons slivered almonds
2 tablespoons crumbled blue cheese
2 tablespoons honey
Peel pears and core them from the bottom so that the stems remain intact. Place in a large saucepan and cover with water. Add one tablespoon of honey and the cinnamon. Bring to a boil over high heat. Reduce heat to low and simmer for 20 to 25 minutes until fork tender. Carefully remove with slotted spoon and chill in the fridge.
Just before serving, transfer pears to a large plate, standing them upright. For the sweet version, drizzle with equal amounts of melted chocolate and almonds. For the tangy version, sprinkle with crumbled blue cheese and drizzle with honey. Serve immediately.
Yield: 4 servings

While there’s certainly nothing wrong with going store-bought if the thought stresses you out, that’s not your only option! Consider a type of sweet that inherently lends itself to working within your dietary restrictions—sorbets and meringues, for example, or a creamy, smooth-as-silk caramel flan if you’re planning a dairy dessert. For fresh twists on the classics, we’ve got coconut macaroons enriched with dulce de leche and dipped in chocolate, or an incredibly moist, aromatic flourless cake scented with orange and saffron. Below are 11 of our favorite Passover treats that won’t just do the job, but will impress the heck out of anyone who tastes them.
A note about the recipes that follow: Though some were designed with Passover in mind, others are meant to be more all-purpose, which means some of them contain ingredients not considered kosher for Passover—or, at least, not considered by everyone to be such. Ordinary vanilla extract and vanilla paste are not considered kosher for Passover; you may substitute a kosher vanilla extract or (preferably in recipes where their flavor won’t be drowned out by other powerful ingredients) the scraped beans from a vanilla pod. We lighten up the superrich chocolate base by folding in freshly whipped cream.
