Mushroom Turnovers

Buy premade pie crust, biscuit dough, puff pastry or pizza dough, or make homemade:

Then, make filling:
Saute sliced crimini mushrooms over high heat until toasted golden.
Add chopped shallot, lemon juice, salt and black pepper to taste. Reduce heat and saute until shallot is cooked. Add onion powder.
Optional: can add pieces of cooked potato or broccoli, thyme, spinach, and/or cheese crumbles.
Set aside to cool.
Assemble:

Roll dough thin, cut large circles using lid of 1qt pot.
Put 1 tbs mascapone on each dough circle, some mushroom filling, and a sprinkle of parmesan.

Fold over to make half moon shape, seal with fork. Important: poke vent holes!!

Optional: glaze w/egg yolk.
Bake 400F for 10 minutes.
Ok to sprinkle w shredded cheese during last few minutes.
Cool slightly, or completely.

Pack for picnic or tailgate or lunchbox--or snitch off the tray as soon as they are cool enough not to scorch fingers and mouth.
Also good dipped in mustard, salsa, or malt vinegar.

sweet potatoes - the easy way!
i鈥檝e been doing this once or twice a week :)
1 - 4 nice large sweet potatoes
preheat oven to 400 degrees
wash & dry sweet potatoes
give them each 1 poke in the top (so they don鈥檛 explode)
put foil or parchment paper on a baking sheet
sweet potatoes go in the oven for 1 - 1.5 hours (check at 1 hour and see if a knife slides cleanly in and out!). they will be soft when they鈥檙e done
and they鈥檙e done! throw away the parchment paper/foil and you鈥檙e good to go.
eat them cold by hand, microwaved with butter (or olive oil)/salt/pepper or butter (or olive oil)/brown sugar, they鈥檙e great for all kinds of spices. they naturally caramelize slightly by themselves cooked this way! it also warms up your house and smells beautiful. easy, delicious, nourishing. enjoy!

Pumpkin Cheesecake Shooters - 78kcal/1g protein

servings: 8 - 78kcal/1g protein each
3 1.5 oz total whole chocolate graham crackers
4 oz 1/3 fat cream cheese, softened
1/2 cup pure canned pumpkin
1 tsp pure vanilla extract
3 tbsp dark brown sugar, unpacked
1 tsp pumpkin pie spice
1/4 tsp nutmeg
1/4 tsp cinnamon
8 oz light whipped topping
1. Crush graham crackers in a food processor. Set aside.
2. In a large bowl beat the cream cheese until smooth with an electric mixer.
3. Add the pumpkin, vanilla, sugar, pumpkin pie spice, nutmeg and cinnamon. Beat until well combined and creamy.
4. Use a spatula to fold in 5 oz (1-1/2 cups) of the whipped topping; combine until no streaks remain.
5. Place in a piping bag or ziplock bag with a corner snipped off.
6. To assemble: Sprinkle 1/2 teaspoon of graham cracker crumbs on the bottom of each shot glass. Pipe a layer of pumpkin cheesecake onto the graham cracker crust (about 1 tbsp) followed by a layer of whipped topping. Repeat a second layer and finish with another sprinkle of crumbs.
7. Insert small spoons and refrigerate until ready to serve.

What you need:聽
2lbs medium potatoes (I used russet and a purple skin/white flesh variety from the farmers market)) 2tbls melted vegan butter, store bought vegan cheddar slices, chives, salt, & pepper聽
1锔忊儯Preheat oven 450 degrees F
2锔忊儯Place chopsticks on either side of the length of the potato, slice 1/8 in slice width wise, work your way down the potato, the chopsticks stop your knife from cutting the potato into slices
3锔忊儯 After you finish slicing each potato place them in a bowl of cold water for 30-45min
4锔忊儯 Dry potato and brush tops and sides with melted butter add desired amount of salt and pepper
5锔忊儯 Place potatoes on parchment lined and bake for 20 min
6锔忊儯 Take potatoes out, brush again with melted butter, this time being sure to get way in there between the slices聽 because the potato should have fanned out a bit. Bake 20 min
7锔忊儯 Repeat step 6
8锔忊儯This is where the magic happens, add ripped pieces of cheese between slices of potato. You can use as much cheese as you like. I used about 4 slices.
9锔忊儯 Place potatoes back in oven, cook till cheese is melted and bubbly 5-10 min depending on cheese
馃敓 I topped mine with lots of chives, coconut bacon, sour cream (not pictured). Enjoy my foodie friends 馃挌馃檭馃挄

POTATO PIZZA A CUSTOM HOMESTYLE RECIPE
Potato Pizza is a fairly popular dish in several parts of Italy, a fairly simple dish. It's made by adding a layer of sliced potato to a normal pizza base, drizzle with olive oil and add rosemary. There are other things you can add (such as cheese in this case), but at its simplest form that's it, and it's delicious!
Must be prepared as full pizza, then the sim will serve portions

i think vegetarian food is bad in countries like america because the main focus is on meat substitution, rather than enhancing the inherent flavours of produce. no one would ever judge chicken on how much it can taste like spinach... u have an entirely different set of flavours w vegetables, work with them rather than against them.

For the pesto:
To a food processor add 2tbsp of cashews, handful of basil leaves, handful of chopped kale, 1 crushed garlic clove, 2 tbsp of nutritional yeast, the juice of 1/2 lemon, salt & pepper to taste and a glug of olive oil 馃挌Blitz until creamy. Spread a thick layer of pesto on each slice, add the cheese, some avocado slices and some sauerkraut (if you don鈥檛 like it swap for pickle) Toast the sandwich in a griddle pan until crispy and golden brown around the edges 馃憣馃徎Hope everyone had a lovely day!鉂わ笍 .
