I kept being like damn I'm hungry constantly what's up w that this is so weird
Then I was like okay it's okay it's winter so you're cold and using up more energy
Then I thought hey why don't I try tracking my food a little bit, see if that helps
Yeah turns out I've been eating way way way too little! Turns out like 1-1.5 meals a day isn't good enough!
Idk I feel better bc there's a good reason but also, eating 3 meals a day sounds hard and expensive
I suppose I could figure out how to beef up my meals to be more filling

Hey friends! I recently got my driver’s license (FINALLY!!!!!), so, if anybody has any recipe recommendations—particularly dinner recipes of easy-to-moderate difficulty OR healthy snack-type things i could take to work—i am ALL ears because i’m about to enter my Meal Planning Era.
#i would also appreciate if some of said dinner recipes made good leftovers!#AND they have to be nut-free so i don’t die lol#those are my specifications#otherwise i’m looking to broaden my food horizons and will try just about anything#my thought is home-cooking about three dishes a week and filling out the rest with leftovers/soup i get from my favorite place#i want to SEVERELY limit my eating out bc i used to enjoy it - but now it honestly just makes me feel sick?????#idk if it’s the T shaking me up or what - but i can just FEEL that i need more nutrients#i wanna get back into exercising too but it’s hard when i feel so BLAH cuz i’m not eating right#so HELP ME OUT!!!!!#not ALL the recipes have to be Super Healthy either#as long as i’m home-cooking it - that’s healthy in my book!!#especially if i can squeeze some roasted veggies in there!#i already make steak and baked chicken and roasted potatoes and very basic salads#but otherwise i’ve really dropped the ball cooking-wise#so i’m completely open!#i am generally trying to stray away from pasta tho - just for another thing#bc i don’t want to consume as many Grains#i’m still having rye bread every morning - don’t get me wrong#but OTHER than that!!!!#ooooh i’d like spicy recipes too please!!#i’ve experimented and i CAN take the heat!!#my coworker and her husband actually make their own hot sauce that i am HYPE to buy once i’m meal planning#they grow their own peppers and everything! it’s cool as hell!!!!

I want a salad. I specifically ordered ingredients to make said salad. (Onions, celery, lettuce. Topped with some buffalo ranch and chicken nuggets. It's not a particularly fancy salad.) I do not want to CHOP said veggies now. I have to WASH them. I have to LOOK them over for bad spots. I have MAKE the salad. I have to cook the chicken nuggets. And chop THEM.
It is too many steps. And I am tired.
I also just managed to get the sink empty of dirty dishes and run the dishwasher though so I'm also like... I don't want to make my sink dirty so soon.
So I cannot eat my salad. and I'm sitting here being like 'man I'm hungry' but literally cannot think of anything else to eat.

Summer Pasta Salad
Very fresh and filling

1 box of pasta shells
1 zucchini
1 avocado
1 lemon
1 red bell pepper
1 can of corn (or use 2 fresh ears of corn)
1/2 of a bundle of kale
1/4 cup of olive oil
salt
pepper
Optional: cilantro
Cook your shells according to instructions on the box. Cut up your zucchini, bell pepper, and avocado. Throw those veggies in a big bowl along with the corn, olive oil, lemon, and salt and pepper (to taste). Once the shells are close to being fulling cooked, throw your washed kale in the pot to let it wilt a little. Once noodles are cooked, put them and the kale into a strainer then transfer to your big bowl. Mix everything up and enjoy!

As an omnivore who likes vegan and vegetarian cooking I think the mistake a lot of people make when trying to convince meat eaters to go plant based is trying to convince them that something you’ve got will replace meat for them.
I like vegan nuggets and real chicken nuggets for different reasons. They taste different. They only taste identical to you because you haven’t eaten meat for five years.
When cooking for myself I only eat meat maybe like three times a week because vegetarian cooking is often cheaper and it tastes good.
Like just give people the actual recipes you use that aren’t pasta. Every time you ask what to eat on a meatless day people are like. Pasta. I don’t want pasta every day.
Point out the foods people already eat that are vegetarian. Like sweet potato fries, veggie chow mein, grilled mushrooms, mashed potatoes, black bean enchiladas, peanut butter sandwiches. Tell people what you microwave when you’re drunk at 3am. Show people that vegetables are so good they’ll want them in their diet.
Also some people are just never gonna go vegan. They’re just not. I’m certainly not, and I love vegan food. But since I’ve fallen in love with vegetarian cooking I eat meat much less and I’m much more careful about picking the meat I do eat. Doesn’t that align with a lot of your goals?
Impossible burger doesn’t taste like meat. But you know what tastes really good? A mushroom fajita taco. Falafel. Potato pancakes with applesauce. Smoky vegan collared greens. Hot potato salad with herbs. Palak paneer with rice. Tofu Pad Thai with extra peanuts. Some of my favorite foods of all time, and I’m a dirty rotten meat eater. Use THAT to get your foot in the door. And be more accepting of some half-assed victories. I’m on your side for the most part, believe it or not. But stop trying to claim certain things are just like meat. You and I both know you don’t plan most of your weeknight dinners around meat substitutes.
