Lemon and Garlic Chicken Breasts

Light and fragrant, these Lemon and Garlic Chicken Breasts make a simple yet flavourful lunch. Once cooled, they can make a tasty salad or sarnie, too!
Ingredients (serves 2):
1/2 lemon
1 garlic clove, minced
1 heaped teaspoon Herbes de Provence 
1/4 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
2 1/2 tablespoons olive oil
2 beautiful chicken breasts
In a roasting tin, grate the zest of the lemon halve. Add minced garlic and Herbes de Provence.
Add fleur de sel and black pepper, and give a good stir until well-combined.
Stir in olive oil until well-blended.
With a sharp knife, score the top of the chicken breasts in a criss-cross pattern.
Add chicken breasts to the roasting tin, and rub them thoroughly with the oil, herb and lemon mixture.
Turn them, scored-side down and cover with cling film. Place in the refrigerator, and allow to marinate, at least an hour.
Preheat oven to 200°C/395°F.
Remove cling film, and thoroughly squeeze the juice of the lemon halve over marinated chicken breasts. Turn them scored-side up, and place tin in the hot oven. Roast, at 200°C/395°F, for 25 to 30 minutes.
Serve Lemon and Garlic Chicken Breasts hot, with fluffy white rice or a tomato and basil salad.

Quince Paste Cheese Toastie

On a busy day, or one you lack inspiration, a cheese toastie always makes a simple, comforting meal. And this Quince Paste Cheese Toastie, where the aged cheese and preserve combine harmoniously, is sheer comfort indeed! Happy Tuesday!
Ingredients (serves 1):
2 large slices Sourdough Bread 
1 ½ tablespoon butter, softened
45 grams/1½ ounce Mature (7 to 10 months) Comté or Mature English Cheddar
1 1/2 tablespoon Quince Paste 
Heat a  frying pan over medium-high heat.
Spread butter on one side of one, and both side of the second of Sourdough bread slices. 
On the slice buttered on both sides, arrange Comté, cut into thin slices. Set aside.
Spread the remaining Sourdough slice (non-buttered side) generously with Quince Paste!
Sandwich both laden Sourdough slices together, and place sandwich onto the hot pan. Cook, 2 to 3 minutes on each side, until well-grilled and cheese is melted.
Cut Quince Paste Cheese Toastie in halves and enjoy immediately, with a side of lettuce and a glass of chilled Chardonnay (or other dry white wine, like Entre-Deux-Mers)!

What’s the worst thing you’ve ever eaten?
Now now be careful because I've lived my whole life in two regions with the most wicked cuisines ever lo behold Asia and Northern Europe and by the first I mean really whacky cuisines and the latter just, well, purely dreadful ones 🥲.
I have eaten countless variations of insects and scorpions and actually half of them are genuinely alright but somebody tricked me into eating turtle soup once (i didn't know what it was) and i just felt absolutely horrible for the next months (see that is just pure chaotic evil).
But then again I've lived in the Netherlands previously and I once went to this kind of conference for uni thing where the Dutch made us eat broodje kaas, that is sliced bread with cheese, FOR 3 DAYS. Like, just genuine bread and cheese, repeatedly.
Now, I have nothing against bread my europeans (do not come at me), and only a slight problem with cheese, but there comes a point where it's not so much a matter of exposure as it is a matter of the quantity of exposure.
