Spent so much time making sushi for dinner and was so excited to have a funky little sushi roll and eat it like a burrito but then my nori ripped apart mid roll and I had to eat it as a salad and apparently my brain doesn’t like the texture of imitation crab + seaweed and rice rn :(

Being disabled and living in a rural area brings so many challenges that I don't think people really understand. If you are considering moving to a more rural area I think you should consider the following realities.
if I can't make food for myself I don't have the option for delivery
if I need to go to the doctor there is no public transportation that comes out here
if I need to pick up my meds someone else has to do it for me, the closest pharmacy is 20 minutes away
even though my car has hand controls, I still struggle to go anywhere because the drive is so long that by the time I get there I'm in too much pain to do anything
if god forbid I need an ambulance, it is going to take a long, long time
I love my life. I love my chickens and geese. I love my garden and being able to grow my own food. I love being away from the loud noises and people in the city.
But it has its price.

I have four (only four) photos of the party (a handful of guests around the fire taken well after dark) not counting post party bathroom selfies that might be salvageable and a bunch of photos of my parents' Christmas tree (taken because we aren't doing a tree this year and I got emotional when leaving)
Not a single photo of food, not a single photo of wine, not a single photo of me with anyone, not a single photo of the guests together or who came, not a single photo taken for social or for myself to prove the day even happened
Just a fleeting moment burnt out like a joyful ember filled with food, music, and people spending time together
I like to think that makes it a successful party

A propos last repost (the low spoons cookbook), one of my goals this year is to compile my definitive, comprehensive Hypoallergenic GI Disease Cookbook On A Food Stamps Budget. Recipes will span several dietary restriction categories: low FODMAP for IBS, low histamine for MCAS, autoimmune protocol for IBD, liquids/purees for gastroparesis, and "gut rest."

GUYS GUYS GUYS
I ATE A WHOLE MEAL
THAT SOMEONE ELSE COOKED
And there was only a little bit of hesitation because of paranoia!
My tummy does feel a little weird though.
But it’s probably because I haven’t eaten much in the last few days and it’s the most food I’ve had. So my belly is just confused.
