Spinach and ricotta stuffed bacon-wrapped chicken
Take a couple chicken breasts, butterfly ‘em, hammer ‘em out. Sautee some spinach with garlic and olive oil and just a lil’ salt until it’s just collapsed, then take it off the heat and stir in like half a thing of ricotta, you know, enough to stuff two chicken breasts. (I work almost entirely from memory when it comes to measurements, sorry.) Season your chicken breast with black pepper, onion powder, perhaps just a little sweet paprika? Add some lemon zest to the ricotta mixture if you have it. Stuff the chicken breasts with the ricotta mixture and wrap each chicken breast up with a bunch of bacon. Put it in a cast iron skillet and stick it in the oven. Bake it till the chicken is cooked and the bacon is crispy, maybe an hour-ish, maybe a little less. 
WHILE THAT HAPPENS:
Mushroom risotto
Sautee a bunch of mushrooms and some shallots, all diced up, with some butter and garlic. Set them aside when nicely soft and a little browned. Put a cup of abrorio rice in a pan and sautee THAT with a little butter until it’s golden-brown. Add some wine or a non-alcoholic wine substitute, a little less than half a cup, and stir it on medium heat or a little less until the wine has all been absorbed. Add a half cup of chicken stock and do the same thing as with the wine. Then add another half cup of chicken stock. Do that until you’ve added four cups of chicken stock, or until the rice has a nice consistency, al dente and like, creamy but not runny. Stir in the mushrooms etc and a nice amount of parmesean cheese. 
ABOUT HALFWAY THROUGH THE RISOTTO:
Slice some zucchini, toss em with a little olive oil, sprinkle ‘em with some black pepper and garlic salt, stick ‘em in the oven to roast up nice. 
Apologies that I don’t know about gluten content for any of this! Rice is gluten-free usually right? Is wine? I don’t know. Actually I think if there’s gluten in any of this it probably is fairly easy to sub out! I should ask my bud who also has celiac’s and is like a professional chef for some recipes for you, now that I think of it.
