Cold villains. Elegant, refined, maybe, with disinterested eyes and icy composure. Their breath makes a shiver run down your spine, their freezing fingers following the curve of your neck. The coldness is almost, IS inhuman. A ghost of the past come to haunt you for eternity. A vampire, come to steal the life from your veins and the vigor from your step. A victim of scientific experiment gone horribly, horribly wrong.
Vs
Hot villains. Temperamental, wild, feral, full of barely contained desires and unquenchable rage. Their eyes spark and burn and blaze with all the things they want to do. Are they made of fire, or are they just full of energy? Sweaty and passionate and involved. They would never sit from the sidelines. Their very touch leaves blackened ash in the wake. They are so very angry, and will not back down, even if it might be wiser to.

Random headcanon for Slay the Princess.
With how Adversary brings up "Psycho analyzing" her. I love the idea she is actually super technically minded and well read, to the same degree as Tower. Meaning every now ans then she will drop some high conceptual idea in a conversation amd catch the voices and other vessels off gaurd.

What role in the manga is the undertaker meant to be? Is he an anti-hero, is he the end boss, is he the evil villain?
Undertaker's role?
Idk if I'd call him an anti-hero, simply because that's usually the role of a protagonist, like our earl and Sebastian.
I expect the (mostly emotional) end boss to be real Ciel, though he might be accompanied by Undertaker... at least at first. (This is a Mother3 parallel.)
Even Yana-san said at one point that Undertaker isn't a true villain. I expect the "evil" villain to be John Brown, or the queen under the influence/control of John Brown. (Another Mother3 parallel but even stronger as a Mother2 parallel.)
I think of Undertaker as a Severus Snape sort of character. Greatly flawed... but motivated by love to help take down the evil that destroyed the person he loved. Even if it means acting as a double agent... and as an adversary to someone he's sworn to protect. And he's both a foil and antagonist to Sebastian. (Some HP parallel tossed in for good measure.)

Who was Lucifer before he became a fallen angel?
Nobody, Lucifer was never an angel, the name is the invention of Jerome after mistranslating a Hebrew word into Latin via Greek.
Lucifer in the Bible refers in fact to the King of Babylon, probably Nebuchadnezzar II. (Isaiah 14:4, 12)

You are likely thinking of Satan, but we don’t know his name, the Bible never tells us it. Satan isn’t a name, it’s a title, a Hebrew word that means resister or adversary. (Job chapters 1 and 2)
