Ramen Eier - Ajitsuke Tamago

Ob Ramen, Pho oder welche Suppe auch immer, Ramen Eier sind himmlisch!

Für die Marinade: 2 TL Reisessig, 4 TL Mirin, 4 TL Sake, 6 TL Sojasauce, 1 TL Zucker und 1 TL Sesamöl in einem Topf vermischen und kurz aufkochen bis sich der Zucker gelöst hat. Abkühlen lassen.

Eier ins kochenden Wasser einsetzen und (bei Größe L) 7 Minuten kochen lassen. In Eiswasser komplett abkühlen um den Garprozess zu stoppen. Die kalten Eier schälen, in einen zipp-Beutel geben, mit der Marinade begießen und einige Stunden, am besten über Nacht, im Kühlschrank kalt stellen. Und dann herrlich cremig, würzig, salzig in der Suppe genießen! Passt auch herrlich zur frittierten Schweinebauchsuppe!

It was a long, long week (that included getting locked out in the rain and having to scale a 6' fence). So when Friday rolled around, all I wanted was ramen... So I made some! For the first time - even botched the marinated egg (which was still really yummy)! Also topped w/sweet corn, scallions, shiitake mushrooms and shredded carrot. This is a style from #Nagoya made with #szechuan spicy ground pork, #shoyu broth, and topped with bean sprouts and red pepper threads. Excellente journée avant-hier avec @misteradyboo et @kaosvmd qui sont venus à la maison pour un stream cuisine !
