self-quarantine activities
1. Complete a puzzle: The more pieces the better! Feeling extra saucy? Take on a Rubik's Cube. More of a word person? Crossword puzzle!
2. Start a journal or blog. Sure, it can be about the coronavirus, but it could also be about a specific interest from chess to cheese. 
3. If it won't bother your neighbors: Dust off that old instrument and practice.
4. Text all your exes just in case you have one more thing you wanted to get off your chest.
5. Write poetry. Perhaps you can craft a haiku for Mother's Day, or something without a specific structure. Just try it!
6. Watch all the really long movies you’ve avoided until now.
7. Download Duolingo, or a similar app, and teach yourself a foreign language.
8. Finally read “Infinite Jest,” “Les Miserables” or even “The Stand.” Go all in and read “Ulysses.” You got this. 
9. Meditate. Try lying down with your eyes closed, palms up and while focusing on your breath. Or spend 20 minutes sitting crosslegged and repeat a soothing word to yourself in your head. (The latter is more like transcendental meditation.)
10. Face masks, moisturizer, oh my! Treat yourself to a 10-step skin care routine you don’t have time for during a normal work week.
11. Look at pictures of puppies.
12. Put together the most attractive charcuterie board possible, but you can only use foods you already have in your fridge and cupboard.
13. Take note from "Tangled" star Rapunzel, who has an entire song about how she's spent her days alone in a castle. Activities included in her ditty: Ventriloquy, candle-making, papier-mâché and adding a new painting to her gallery.
14. Write actual letters to family and friends. After that? Write thank-you notes to service people who you remember went out of their way for you.
15. Learn calligraphy. YouTube can help.
16. Finally read the rules to those long and intense board games you've never played with the family. Encourage the family to play.
17. Put on a soap opera. Mute the sound. Create your own dialogue.
18. Have a space in your home where all of the tupperware goes? Organize it and actually match lids to containers.
19. Try on all your clothes and determine whether they “spark joy” á la Marie Kondo.
20. Better yet, go through this process with your junk drawer and supply shelves. 
21. Have a roommate meeting about how to be more considerate of one other, especially while you will likely be spending more time together. Bring baked goods.
22. Bake those goods.
23. Watch the films that won Oscars for best picture.
24. Watch films that won Independent Spirit Awards for best picture. 
25. Watch films that critics say should have won those aforementioned awards.
26. Read all the New Yorker issues piled on your desk.
27. Will Tom Hanks into recovery from coronavirus by watching every Tom Hanks movie chronologically. 
28. Knit or crochet.
29. Use Skype, FaceTime, Google Hangouts or Marco Polo to video chat with your long-distance friends.
30. Try out at-home aerobics or yoga videos. Consider downloading a fitness app with curated workout playlists.
31. Look at yourself in the mirror. Attempt a self portrait with pencil and paper.
32. Take a bubble bath (bonus: Add a glass of wine).
33. Make a classic cocktail, from negronis to Manhattans and aperol spritzes. Don't forget the garnish.
34. Coloring books: They’re not just for kids.
35. Take time to reflect: What have you accomplished in the last year? What goals are you setting for yourself in the next year?
36. Write a short story or get started on that novel.
37. Actually try to reproduce something you see on Pinterest. Probably fail. Try again.
38. Clear out the family room and camp indoors with all blankets, popcorn and scary movies.
39. Finally get around to fixing that broken door knob and loose tile or cleaning scuffed up walls. 
40. Acquire a foam roller and treat yourself to some physical therapy. 
41. Pretend you're 13 years old and fold a square piece of paper into a fortune teller you put your thumbs and pointer fingers into. Proceed to tell fortunes. 
42. Learn how to braid (fishtail, French, etc.) via YouTube tutorial..
43. Throw out all your too-old makeup and products. (Tip: most liquid products have a small symbol on them noting expirations, usually six months to a year. This includes sunscreen!)
44. Interview your grandparents (over the phone, of course) and save the audio. Can you create an audio story or book with that file?
45. Go through your camera roll, pick your favorite pics from the past year and make a photo book or order framed versions online. 
46. Go on a health kick and learn how to cook new recipes with ingredients you may not be using already, from miso to tahini.
47. Create a Google document of shows or movies you’re watching and share it among family and friends.
48. Make a list of things for which you are grateful. 
49. Have your own wine tasting of whatever bottles you have at home. Make up stories about the journey of the grapes to your mouth.
50. Work on your financial planning, such as exploring whether to refinance your loan or ways to save more money. 
51. Perfect grandma’s bolognese recipe.
52. Make coffee, but this time study how many beans you use, which types, how hot the water is, how long it brews and whether any of that makes a difference.
53. Buy gift cards from your favorite local businesses to help keep them in business while we quarantine.
54. Watch “Frozen 2,’ which went up early on Disney Plus. Another new movie on the streaming service: "Stargirl." 
55. Write a book with your family. Pick a character and each member writes a chapter about their adventures. Read aloud to each other. 
56. No March Madness? Have a Scrabble tournament. Or Bananagrams. Pictionary, anyone?
57. Get into baking with "The Great British Baking Show," but your technical challenge is baking something with the ingredients you have on hand (that you didn't already use in the charcuterie board).
58. Indoor scavenger hunt.
59. Alternate reading the Harry Potter series with your kids and cap each one off with the movie.
60. Dye your hair a new color. No one else needs to see it if you don't like it.
61. Read Robert Jordan’s 14-book “Wheel of Time” series before it streams on Amazon starring Rosamund Pike. 
62. Write a play starring your loved ones. Perform it via a video call app. 
63. Go viral in the good way by making a quarantine-themed TikTok.
64. Rearrange your sock drawer. Really.
65. Stop procrastinating and do your income taxes.
66. Make lists of all the museums, sporting events and concerts you want to visit when they finally reopen.
67. Get into comics with digital subscriptions on your tablet, like Marvel Unlimited. 
68. Rearrange your furniture to make it seem like your home is a totally different space. 
69. Practice shuffling playing cards like a Poker dealer. Be ready for employment opportunities once all casinos open back up.
70. Organize your spice rack alphabetically or get crazy and do it by cuisine.
71. Teach your dog to shake. Hand sanitizer optional.
72. Memorize the periodic table. You never know when that will come in handy.
73. Order and put together some IKEA furniture. Time yourself.
74. Get a free trial of a streaming service and binge-watch as much as you can before it expires. 
75. Apply for a new job. You have remote work experience now. 
76. Learn a new style of dance via YouTube, from bellydancing to breaking.
77. Update or write your will and organize your affairs. Yes, it sounds melodramatic and morbid but let’s face it: This is a task many of us avoid because we never have the time. Now we do.
78.The parades have been canceled but you can still make corned beef and cabbage for St. Patrick’s Day.
79. Bring out the Legos. Build your house inside of your house.
80. Watch the "Star Wars" movies in this and only this order: Rogue One-IV-V-II-III-Solo-VI-VII-VIII-IX.
81. Two words: Coronavirus beard! Grow it, moisturize it, comb it, love it.
82.  Learn the words to "Tung Twista." Get them so ingrained in your brain that you can rap them as fast as Twista can. Impress everyone. 
83. Been meaning to get some new glasses? Try on new frames virtually on sites like GlassesUSA.com.
84. Attempt things with your non-dominant hand, from writing to brushing your teeth. Prepare to be frustrated.
85. How many words per minute can you type? See if you can get speedier by taking a typing course.
86. Prepare to verbally duel a bully who wants to discuss the evolution of the market economy in the Southern colonies, by memorizing Matt Damon's "Good Will Hunting" speech. 
87. Learn origami. Make cranes for your loved ones.
88. Stretch. Work on your flexibility. It's possible to get the splits back, right?
89. Try to speak in pig Latin. Or, "ig-pay, atin-Lay."
90. Talk to your plants. How are they doing? Make sure they are getting the amount of sunlight they should be. Check their soil. Water if necessary.
91. Deep condition your hair and put paraffin wax on your hands. Enjoy your soft hair and nails.
92. Consider donating money to food banks to help families struggling to get meals.
93. Write a song. If you want to make it about your time inside and put it to the tune of "My Sharona" and replace "Sharona" with "Corona," do what you have to do.
94. Study the art of beatboxing.
95. Try moving in super-slow motion. It's OK to laugh at regular speed.
96. You know how there are dozens of ways to wear a scarf, but you only wear it the one way? Learn the other ways.
97. Learn Old English words. Pepper them into your conversation. Wherefore not?
98. Try on a new shade of lipstick. See how long it takes your partner to notice it.
99. Take deep breaths, in through your nose and out through your mouth.

My 13 Favorite Low-Carb Foods (and 3 to Avoid)

Finding low-carb foods that actually taste good and aren’t chock full of fake, chemical-laden ingredients is a tough pursuit—one I’ve been on since I was diagnosed with Type 1 diabetes nearly twenty years ago. But I never gave up! And now I’m going to share a few of my favorite products and recipes that will help you keep your carb intake low, keep your tastebuds happy, and fill your body with mostly whole, real delicious food!
Soft & Fluffy Bread Rolls from The Diet Doctor (recipe)
These are a staple in my house. I eat two or  to three small rolls every day and let me tell you, not only do I not need insulin for them (unless I melt some chocolate chips on top in the microwave), they also make your digestive tract sing thanks to all that fiber. While you may have to do a little shopping around to get the right ingredients (I highly recommend ordering Anthony’s almond flour and psyllium husk on Amazon for a good price), once you make them the first time, they become really easy. I make a double batch every few weeks and store them in the fridge and freezer so I can eat them every day!
Edamame Fettuccine Pasta from Seapoint Farms (product)
I’ve tried a lot of low-carb pastas. And there are a few good ones out there, but...this one is the best. First of all, you could eat half the box and only consume 22 grams of non-starchy carbs after subtracting the dietary fiber. The texture, the taste, the fact that you can’t over-cook it and accidentally turn it into mush—it’s just so good.  Even my stubborn father-in-law ate it and loved it! Honestly, I won’t bother buying any of my former low-carb pasta choices because this one is so exceptional.
Edible Cookie Dough from Lions Pack (product)
This peanut butter based “dough” is scary delicious. And sure, if you eat the whole jar, the carb count isn’t low anymore, but if you keep this tucked in the fridge for a spoonful (or two) after dinner each night as your “dessert,” the carb content is wonderfully low for something that tastes like a strawberry poptart or a s’more or a cinnamon roll or...Oreos!! Every flavor is gluten-free and vegan, and the flavor options are endless. It’s not cheap, but if it helps you stay on track and avoid the real Oreos, it might become a worthwhile staple in your home.
Bread, Bagels and More...from The Great Low-Carb Bread Company (product)
I love everything this company makes, but am especially impressed by the bagels -- which even my husband liked. Their breads are soft, fluffy, and look and taste like bread. Their low-carb recipe secrets focus primarily on a highly effective combination of oat fiber, almond flour, flax meal, and stevia. Did I mention many of their products are also gluten-free? Their hamburger buns and pastas won’t take away from enjoying those classic meals. They even have low-carb soft-pretzels. You’ve gotta check these out. Delicious, I promise!
Discover Chocolate from Discover Confectionery (product)
Oh, this stuff is good. Many of their flavors are deliciously unique (probably because this is a UK-based product), and it tastes and feels and looks like real chocolate! An entire bar will deliver about 13 grams of low-impact carbs, and is filled with real food ingredients--not chemicals and fake junk. The only flaw of this product is the price.
Flaxseed Muffin in a Mug from a variety of sources (recipe)
This muffin is one of my morning go-to recipes. It takes less than 5 minutes to make a single serving. It’s full of real ingredients, super healthy fats, lots of fiber, and sometimes...chocolate chips! Mix ingredients in a dry coffee mug. Microwave for 70 seconds. Pop it out onto a plate. Cut into 3 slices and add a little butter or...whatever! My favorite version of this includes a tablespoon of chocolate chips to get my chocolate fix without breaking the “carb bank.”
Quest Protein Bars from Quest Nutrition (product)
While I wouldn’t want to encourage using protein bars as a meal replacement (‘cause let’s be honest, they are definitely not made of “whole” food ingredients), these are a great go-to if you’re trying to avoid real desserts, or when you need on-the-go “Oh, my gosh, I’m starving” kind of food from the bottom of your bag. They come in a billion flavors, including birthday cake, cookies ‘n cream, and cinnamon roll. After subtracting the fiber, the remaining carbs are pretty low-impact, and they’re plenty satisfying.
Spiralized Veggies from a variety of sources (product)
Even if you don’t have the “as seen on TV” veggie spiralizer, you can buy pre-spiralized zucchini and carrots to make a your own low-carb “pasta.” (Yes, carrots contain some carbs, but hose carbs are coming from a source that’s a whole food, high in fiber, and packed with essential vitamins.) You can find them in the fresh produce aisle at your grocery store, or in the freezer section at Trader Joe’s, along with frozen cauliflower rice. Simply throw them in a large saute pan with a little oil, add some herbs or sauce, and you have a low-carb and super healthy “pasta” dish.
Really, Really Easy Breadsticks from Kirbies Cravings (recipe)
Ditch the starchy breadsticks and even the pizza crust and make this effortless zero-carb flatbread instead. Literally, you just toss eggs, cheese and herbs into a food processor. Zap zap zap. Pour that batter onto parchment paper in a cookie pan. Bake. Voila! 
Chia Seeds from a variety of sources (product)
Chia seeds are definitely trendy these days, but for a good reason: you can make delicious breakfast or dessert pudding with this little seed from Mexico. Soak in just a couple tablespoons overnight in your milk of choice (low-carb milks like coconut or almond would be ideal), and by morning you’ll find you have a thick cup full of chia seed pudding that only contains about 1 gram of carb after subtracting the fiber. You can make it sweeter with your preferred alternative sweetener, or jazz it up with a little peanut butter and a tablespoon of real chocolate chips. Checkout more easy recipe ideas from GnomGnom.
Zucchini Pizza Bites from LowCarbYum (recipe)
Honestly, you don’t even need to know how to read to make these. It’s so easy, and so customizable, too! Chop zucchini into medium-thickness slices and top with a little pasta sauce (check your label closely to avoid buying a high-sugar sauce), a little cheese and 1 slice of pepperoni per slice of zucchini. Pop them in the oven until the cheese is fully melted—delicious low-carb pizza night. Kids will like them. Picky husbands who don’t care about their carb intake will like them. I haven’t offered them to my father-in-law yet, but I bet he might even enjoy them, too!
Romaine Lettuce! No...seriously! Swap it for all bread....
The easiest way to cut the processed, starchy carbs from a sandwich or tacos or even a hamburger is to simply keep a giant stash of romaine lettuce in your fridge at all times. Lay strips of bacon with chopped tomatoes and mayo on romaine for a low-carb BLT. Ditch those corn-laden taco shells and turn Mexican night into a fresh crunchy salad by filling a bowl with fresh crunchy romaine lettuce. Add a little salsa, a little hot sauce, maybe a little more cheese...taco night never tasted so good! (And did you know, romaine lettuce is just as loaded with awesome nutrients as spinach and kale? )
3 “LOW CARB” FOODS TO AVOID
Shirataki Noodles
Okay, some people must love these, but I’m not one of those people. While they don’t contain carbs, these “noodles” are also  void of basically any nutrition whatsoever and come in smelly liquid with an unpleasant taste that takes a lot of rinsing and a lot of sauce to cover up. They also have a texture that makes me feel like I might be accidentally chewing on someone’s ear cartilage. If you’ve never tired, you should...at least once. But don’t surprised if you find yourself needing to make something else for dinner after the first bite.
Julian’s Bakery Breads from Julians Bakery (product)
These seem like a dream come true...before you’ve actually tasted them. I’m sorry to say that these extremely low-carb bread varieties are not only not tasty but even  hard to even swallow. I choked on the first bite, to be honest. They are dry, weirdly textured, and void of any real flavor (at least a flavor you’d enjoy eating). There must be diehard fans out there, because this company has been around for a while...but I’ve never met them.
Diet Soda
Many people will disagree with me on this one, but at least hear me out. A diet soda here and there--let’s say, once a week--is no big deal. But if diet soda has become your go-to source of hydration every day of the week, not only are you consuming a heck of a lot of chemicals, you’re also only going to make your sweet tooth crave more and more sweet things. When I finally quit drinking diet soda, things with no sugar in them at all started tasting deliciously sweet--like flavored seltzer with a dash of apple cider vinegar. There’s also a great deal of conflicting research on the safety of many artificial sweeteners, and on whether or not they may be increasing a person’s insulin resistance, because their bodies to need more insulin, not less.

Almond Butter Fruit Dip (vegan, dairy-free, sugar free)

This Healthy Almond Butter Fruit Dip a clean-eating alternative to the HFCS-filled fruit dips in the store.  It's great not only as a dip, but also as a glaze or eaten right off the spoon.
Bonus–this dairy-free fruit dip also special-diet friendly–it's vegan and low carb with a nut-free option.
I love dips of all kinds. 
And there's a good reason why. 
Dipping makes everything taste better. Don't you agree?
I'm sure all of the parents out there would agree that while it can be hard to get kids to eat a lot of veggies, when you pair those exact same veggies with a dip, the veggies are more apt to disappear.
And that goes for adults too.
I mean, I love vegetables, but I really don't like eating them plain. And I very much dislike eating them raw and plain. But pair them with this delicious Avocado Dip or this Sesame-free Hummus, or this Vegan Ranch Dip, or some other delicious dip, then those same not-so-tempting vegetables will be gone in a flash.
Of course, there are those people who don't like dips. Our oldest is one of those. I don't understand it, but he doesn't really like dips. Well, let's qualify that–he doesn't like dipping things into dips, and he doesn't like dressing on his salads, but but he will eat dips on rice, plain, or he'll spread them on breads, wraps, and such.
I think it's a texture thing, but that doesn't totally make sense since he will eat the same texture in another context, he doesn't like them.
So my non-dip-loving son, loves this dip, but he doesn't like dipping things into it. But he'll eat it with a spoon or he'll drizzle it onto Buckwheat Pancakes or Teff Waffles, or he'll even put it on Vegan Chocolate Ice Cream, but no way will you find him dipping any kind of fruit in it.
Come to think of it, he doesn't like fresh fruit anyhow so…..
I digress.
Anyhow, no matter your dipping desires, this Dairy-free Fruit Dip is delicious.  In fact, it's almost always gone super fast whenever I make it.
The Need for a Healthier Almond Butter Fruit Dip
I used to love those ooey gooey super sweet caramel apple dips when I was younger, but wow are they loaded with all kinds of things that I don't want to or can't eat anymore. 
high fructose corn syrup (linked to cancer!)
partially hydrogenated oils 
disodium phosphate
mono and diglycerides
potassium sorbate
white sugar (causes all sorts of issues)
Ick.
Since we've changed out lifestyle to be whole food and lower-carb, there was really no way I was going to be buying that for myself or my family. And truly, I never have. By the way, they are pricey too! And homemade dip is not. Frugal whole foodies, you will love this vegan fruit dip!
This dip, though it's not a caramelly dip, is really tasty.  And is made of only healthful ingredients.
And it's super fast to make!  My kind of busy mom–kids need something yummy to eat now–recipe.
How This Healthy Vegan Fruit Dip Came to Be
Most of the vegan fruit dips out here are loaded with dates. I love dates, but they are super high in carbohydrates (and sugars), something that is a no-no for those of us struggling with candida.  So I wanted to develop a recipe for a fruit dip that would work for our family. Since our oldest has a life-threatening allergy to dairy, it needed to not only be low-carb, but it also needed to be a dairy-free fruit dip.
I found several versions of nut butter based dips on a few websites, thought about what I liked about each of them, and then made a number of versions until I found just the right flavor.
This is it.  Just right sweetness with a touch of cinnamon to add the perfect extra something.
We even made a special trip to buy some apples to go with it since we didn't have any in the house (what was I thinking–making a dairy-free fruit dip without apples???)
My youngest son was totally thrilled about the whole thing. First of all, he loves apples. Second, he had never had a fruit dip before (and he really liked this one), and the grocery store we went to has a really fun mechanical horse that kids can ride on for just 1 penny! He rode with dad and brother while mom shopped.
How nice to have extra blessings added to an otherwise mundane las minute apple-buying errand.
Ways to Use this Super Versatile Almond Butter Fruit Dip / Sauce:
Fruit dip (of course) for apples, pears, bananas, strawberries. Please note that strawberries are loaded with pesticides.  Choose organic or non-sprayed if possible.) Apples, pears, and bananas taste the best.
Nut Snack Topping (use soaked and dehydrated, if possible)
Oatmeal or Hot Cereal Drizzle or your favorite breakfast cereal like this Homemade Cream of Rice (see my post on soaking grains.)
Syrup Alternative for pancakes or waffles like these Teff Waffles or these Buckwheat Pancakes
Cake Drizzle–this would taste fantastic on cakes like this Oatmeal Cake (my husband likes this option since he's not a frosting fan at all).  A friend of mine told me that she added chopped pecans to this recipe to make a “German Chocolate Cake” type of frosting for her favorite gluten free cake and she said it was great. Sounds like a fantastic idea! It would make a great lite frosting on these Paleo Carob Cupcakes too.
Popcorn Topping – how about dipping popcorn in this dip–or just drizzle it on top!
Baked Good Topping–on recipes like Focaccia Flax Bread or Oat Bran Muffins or Paleo Gingerbread Cookies
On a Spoon!
One nice thing about this Almond Butter Fruit Dip is that you get the wonderfully rich taste of almond butter with about half the calories and fat since you're thinning out the almond butter.  Of course, these are good fats, but all things in moderation and if you are needing to watch your caloric intake, this really helps.

Recipe Notes for this Almond Butter Fruit Dip
Nut substitution: You can substitute other nut or seed butter as desired or needed. See my post on Homemade Nut or Seed Butter. Pecan would be especially nice. Sunflower will add a more peanutty taste to the final product.
Coconut milk alternative: Any other non-dairy milk such as coconut milk can be used instead of almond milk. My Easiest Almond Milk and Easiest Coconut Milk are great make-your-own options. Coconut and cashew milk will yield a creamier final product.
Sweetener alternative: You can use 2 Tbsp of any other healthy sweetener instead of stevia. However, if you use a liquid sweetener you may need to use a slightly different amount, so read this post for help with substituting sweeteners. Vegetable glycerine is a good option.
Alcohol-free vanilla extract option: In case you need to avoid alcohol (since it's not cooked off in this recipe, here is a link to an alcohol-free vanilla extract.
Topping Tip: Feel free to add more non-dairy milk to the dip to make a thinner dip or sauce for topping pancakes, hot cereals, and more.
You can alter this recipe as you like.
Some great variations include:
Use maple syrup for a more mapley taste (is that a word?)
Add chocolate or carob for a chocolatey treat!  Start with 2 Tbsp or carob or chocolate and go from there.
Add shredded coconut for a coconutty / nutty blend.  
Add chopped nuts for a chunky topping / dip.
Add cacao nibs or chocolate shaving for a chocolatey nutty dip or topping.

This Easy Healthy Fruit Dip is dairy and sugar free. Great not only as a dip, but also as a glaze or eaten right off the spoon!
1 cup organic almond butter ((see notes for nut-free alternatives))
1 cup coconut milk ((or other non-dairy milk))
2 scoops pure stevia extract powder ((1/16 tsp))
3 Tbsp xylitol ((see notes for alternative sweeteners))
1 tsp organic vanilla extract

Can Dogs Eat Chicken Broth?

The short answer is yes!
In fact, chicken broth is a great way to make your dog’s kibble more appealing
It is a non-toxic, generally safe dog food topper.
I add “generally safe” because there are some situations it isn’t the best choice.
But if you have a healthy dog who is a picky eater, adding chicken broth to jazz up their food is a safe way to do that.
I used to use chicken broth all the time to get Daisy to eat.
She was a picky eater, and a few tablespoons on her kibble would be enough to get her to eat her whole bowl of food.
Types of Chicken Broth
There are three main varieties of store-bought chicken broth options.  
Low Sodium Chicken Broth
Low sodium chicken broth is preferable.
Dogs do not need the added salt commonly found in regular chicken broth. 
Chicken Broth with Onion Powder
The one thing that my vet cautioned me on regarding using chicken broth is the onion content.
Some broths have onion powder, and some have onion concentrate.
If you can’t find an onion free option, choose the one with onion powder as it is less potent. 
But again, use caution when feeding onion to any dog.
It only takes about 100 grams of onion to make a 44 lb dog sick[1]. 
Ultimately, it is always best if you can find a broth that is free of onions, like Trader Joe’s Savory Chicken Broth.
Chicken Bone Broth
Bone broth is not only safe but also carries some additional health benefits.
Bone broth and standard broth are very similar, except that bone broth is thicker because it contains collagen-rich gelatin.

The benefits of making your own broth are:
You control everything that goes into the broth
You don’t need to worry about sodium or onions
If you have a dog with food allergies, making your own broth may be safer
For example, Trader Joe’s chicken broth contains corn, which Calvin is allergic to!
Is Chicken Broth Good for Dogs?
Chicken broth does not carry a significant amount of vitamins and nutrients.
However, it does make an excellent low-fat dog food topper.
So if you are adding it to your dog’s food and it gets them to eat, then yes, it is perfect for them.
Also, low sodium chicken broth diluted in water can aid in keeping your dog hydrated[2].
But overall, standard chicken broth doesn’t bring much in the way of health benefits to dogs or humans.
Should You Give Your Sick Dog Chicken Broth?
Chicken broth can aid sick dogs by helping to stimulate their appetite.
It is a low-fat, low calorie, flavorful option to help get a sick dog to eat again, especially if you warm it up first.

Dog Food and Treat Recipes with Chicken Broth
I’ve been baking homemade dog treats for over 12 years.
Sophie has always had severe allergies, and 12 years ago, when she came into my life, there weren’t a lot of hypoallergenic dog treat options.
One fabulous way to make basic dog treats taste better is to use chicken broth to make the treats all the more yummy.
There are several great dog treat recipes you can make with chicken.
Below are some of my favorites:
3 Ingredient Frozen Dog Treats
These are perfect for the hot dog days of summer!
Ingredients
1 cup chicken broth
1 cup peanut butter (Choose the right type!)
2 tablespoons chopped fresh parsley
Directions
Pour the chicken broth into a silicone ice cube tray and fill each section halfway
Put the chicken broth into the freezer
Warm up the peanut butter slightly and mix in the parsley
After the chicken broth has set in the freezer for one hour, remove it from the freezer
Use the peanut butter and parsley mixture to fill the tray the rest of the way
Freeze for 4 hours or until hard
Chicken and Oat Dog Treats
Not all dogs can have whole wheat flour.
This recipe uses oats so it would make a great choice for dogs with allergies.
Ingredients
2 1/2 cup rolled oats
1/2 cup chicken broth
1/2 tsp salt (optional)
1 egg
Instructions
Preheat the oven to 325 degrees
Mix together oats, broth, and egg in a mixing bowl
Add salt if your chicken broth is unsalted and your dog can handle the salt
Pour onto wax paper
Knead for 3 minutes then let stand for 3 minutes; the dough will start to become firm
Roll out until the dough is half an inch thick
Cut into shape and transfer to baking sheet lined with parchment paper
Bake for 20 minutes
One tip when making dog biscuits be sure to bake them thoroughly. Otherwise, too much moisture will invite mold to grow.
Oh, and be sure to let the biscuits cool all the way before giving them to your dog!

Ingredients:
24 organic or pasture-raised chicken wings
1 Tbsp aluminum-free baking powder
½ tsp salt
¼ tsp pepper
¼ cup extra-virgin olive oil
½ cup tomato sauce
6 medium garlic cloves, minced
1 tsp Italian-style seasoning
1 tsp paprika
cayenne pepper
coleslaw, kimchi or sauerkraut (for side dish)
Directions:
Preheat oven to 400° F.
In a bowl, combine chicken and baking powder. Season with salt and pepper.
Place chicken wings on a roasting tray and bake 35–40 minutes, until chicken is browned.
Remove chicken and reduce oven temperature to 350° F.
In a separate, large bowl, combine the oil, tomato sauce, garlic, Italian seasoning, paprika, and cayenne (to taste).
Stir the browned chicken into the bowl of sauce, until the wings are well covered.
Return wings to roasting tray and bake for another 12 minutes.
Serve with a side of coleslaw, kimchi or sauerkraut.

Plus, at just 15 cents each, eggs are an economical choice for feeding a hungry crowd.” Based on what you like, go crazy with hot sauce, spices, herbs, and even salsa as toppings.
Makes 20 deviled eggs; prep time: 5 minutes; cook time: 7 minutes
Ingredients:
10 large eggs, hardboiled
1 ripe avocado
1 lemon, juiced
1 Tbsp Dijon mustard
salt, to taste
black pepper, to taste
smoked paprika
Directions:
Once eggs have cooled, slice in half lengthwise and remove the yolks.
Combine yolks, avocado, lemon juice, mustard, and salt and pepper to taste in a food processor.
Process until smooth.
Add mixture to a zip-top plastic bag, cutting off a ¼-inch piece at the bottom corner. Pipe the filling into the halved egg whites.
Dust with black pepper and paprika, and enjoy.

Makes 4 servings; prep time: 20 minutes
Ingredients:
1 pound tilapia, cut into four ½-lb. pieces
4- to 5-inch yellow corn tortilla shells
For the spice mix (combine):
1 Tbsp paprika
1 tsp granulated garlic
1 tsp granulated onion
½ tsp sugar
salt and pepper
For the sauce (combine):
½ cup mayo
1 Tbsp tomato paste
1 tsp worchestire sauce
1 tsp fresh ground black pepper
1 tsp red wine vinegar
1 tsp ground chipotle
¼ lemon zested
1 garlic clove minced
2 cups finely shredded cabbage
½ cup thinly sliced red onion (tossed in lime juice and a touch of salt)
1 avocado, sliced
fresh cilantro, to garnish
lime wedges, to garnish
Directions:
Dust the tilapia with the spice mix. Sear in a hot, non-stick pan over medium-high heat for about 4–5 minutes a side. Remove the tilapia, wipe the pan and add a touch more oil. Toast the shells in the same pan for about 8 seconds a side (until warm and slightly toasted).
Place a few avocado slices on the base of the tortilla, top with one piece of seared tilapia. Top the fish with a good amount of cabbage, top with the onions, drizzle with the sauce and garnish with fresh cilantro. Serve with a wedge of lime.

MIXT Impossible™ Meatballs
This plant-based recipe by MIXT Culinary Director Matt Colgan is satisfying yet good for you. It’s also guaranteed to impress any carnivores in your crowd who are yet to try the whole vegan meat thing yet.
Makes 16 meatballs; prep time: 10 minutes; cook time: 15 minutes
Ingredients:
1 pound Impossible™ Burger (now available at select grocers nationwide)
3 tbsp garlic, minced
4 tbsp shallots, minced
1 bunch fresh oregano, chopped
1 bunch fresh parsley, de-stemmed and chopped
1 bunch fresh basil, de-stemmed and chopped
1 pinch chili flake (more if you like it spicy)
1 Tbsp salt
1 tsp ground black pepper
2 Tbsp olive oil
Directions:
Preheat oven to 400°F degrees. Line two baking sheets with parchment paper. Sauté garlic and shallots in olive oil over medium heat until soft and translucent (approx. 5 minutes). Set aside and allow to cool.
When garlic and shallots are cool, mix with fresh herbs, spices, and Impossible™ Burger in a large bowl. Form meatballs to be approximately 2 inches in diameter. Space evenly on baking sheets.
Bake in the oven for 13–15 minutes until exterior of meatballs brown and begin to caramelize. Remove from oven and allow to cool slightly. Heat up your favorite marinara sauce and add meatballs to sauce.
Bring to a gentle simmer. Serve meatballs immediately atop pasta or as a filling for a plant-based sub sandwich.

Sinless Seven-Layer Dip
James Beard award–winning cookbook author Virginia Willis shares this delectable recipe from her cookbook Lighten Up, Y’all. “Seven-layer dip is one of those decadent, delicious dips that render folks absolutely senseless, so before you know it, you find your willpower has gone way south of the border. Don’t tell anyone this is a healthier version, and I promise they will never know,” she writes of the dip.
“I learned the technique of extending the creamy avocado in the guacamole by adding steamed broccoli, peas, or edamame at Rancho la Puerta, in Tecate, Mexico, a destination spa where I teach Southern Comfort Spa Style. It’s a great tip to use as a layer in this dip, or just when you make guacamole solo.”
Makes 24 servings (6 cups); prep time: 15 minutes
Ingredients:
1 (14.5-ounce) can low-sodium pinto beans, rinsed and drained
1 tsp ground dried red chiles
juice of 1 lime
1 avocado, halved and pitted
½ cup broccoli florets, shelled English peas, or shelled edamame
coarse kosher salt and freshly ground black pepper
1 cup chunky salsa
1 Tbsp chopped fresh cilantro
1 jalapeño chile, cored, seeded, and chopped (optional)
½ cup light sour cream
½ cup plain 2 percent Greek yogurt
1 (4-ounce) can chopped chiles
½ cup grated reduced-fat Cheddar cheese (2 ounces)
4 green onions, trimmed and chopped
Directions:
Place the beans in the bowl of a food processor fitted with the metal blade. Add the ground chiles and half of the lime juice. Pulse until smooth. Using a spatula, place the puree in the bottom of a 2-quart casserole dish to make the first layer. Set aside.
If the processor bowl is just a little bit dirty, and as long as you scraped out most of the beans into the serving bowl, go ahead and add the avocado, broccoli, and the remaining lime juice to the bowl. Season with salt and pepper. Process the guacamole until smooth. Spoon the guacamole on top of the beans to create the second layer.
In a small bowl, stir together the salsa, cilantro, and jalapeño. Pour the salsa mixture over the guacamole for the third layer.
In a small bowl, combine the sour cream and yogurt. Spoon the sour cream mixture on top of the salsa for the fourth layer. Pour over the chopped chiles for the fifth layer. Top with grated cheese and chopped green onions for the sixth and seventh layers. Serve immediately.

Jackfruit French Dip Sliders
“This slider version of the traditional French Dip is perfect for game day,” says Stephanie Dreyer, the founder of Veegmama. “I love that I can make it ahead of time and set it out buffet-style in a slow cooker to let everyone assemble their own sandwiches when and how they want whenever they get hungry during the game.”
Makes 12 sliders; prep time: 10 minutes; cook time: 30 minutes + 30 minutes passive time while jackfruit marinates
Ingredients:
2 cans jackfruit
5 Tbsp vegan Worcestershire sauce, divided
1 Tbsp red wine vinegar
salt and pepper to taste
1 Tbsp olive oil
1 large onion, chopped
10 garlic cloves, minced
2 tsp Better Than Bouillon (Beef)
2 cups boiling water
¼ cup red wine
2 Tbsp tomato paste
1 tsp dried thyme
2 bay leaves
slider or panini rolls
dairy-free mayo such as Wildwood Garlic Aioli
dairy-free provolone style cheese such as Follow Your Heart or Violife
cornichons, for serving
Directions:
Drain the jackfruit and place in a bowl with 1 tablespoon of Worcestershire sauce, red wine vinegar, salt, and pepper. Stir to combine and let marinate a half-hour.
Meanwhile, combine the Better Than Bouillon and water. Stir well and set aside.
Heat the oil in a large stockpot or Dutch oven. Cook 3–4 minutes until golden brown. Add the garlic and cook a minute or two more until fragrant.
Add the jackfruit and the marinade to the pot, along with the prepared broth, wine, tomato paste, remaining Worcestershire sauce, thyme, and bay leaves.
Cover and simmer 20–30 minutes. You want the jackfruit to be tender but not mushy.
Transfer the jackfruit to a cutting board (leave the broth in the pot). Using two forks, shred the jackfruit.
Return the jackfruit to the pot with the juices.
To serve, slice the rolls and spread with dairy-free mayo and top with dairy-free provolone style cheese, if desired. Serve with cornichons.

Easy Keto Cauliflower Hummus
“This recipe is extremely easy and keto-friendly,” says Randy Evans MS, RD, LD, and consultant of Fresh n’ Lean. “As we know, New Year's resolutions will be in full swing around this time but that doesn’t mean your diet has to suffer because of unhealthy Super Bowl food.”
Makes 8 servings; prep time: 35 minutes
Ingredients:
1 pound raw cauliflower florets
¼ cup tahini
2 cloves garlic
2 Tbsp lemon juice
7 Tbsp olive oil
¼ tsp cumin
¼ tsp ground pepper
½ tsp salt
1 Tbsp toasted pine nuts (optional)
⅛ tsp paprika (optional)
Directions:
Place cauliflower florets on a baking sheet and toss with 1 tablespoon olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
Roast cauliflower at 400°F for 20–25 minutes, or until soft.
Combine roasted cauliflower and remaining ingredients in a food processor and mix until smooth.
Serve with your choice of keto-friendly vessel. Optional: Garnish with a little drizzle of olive oil, toasted pine nuts, and a dash of paprika.

Pinto Bean and Potato Salsa Verde Tostadas
“I love the idea of a tostada bar for game day. It takes the traditional chips and salsa fare to the next level,” says Dreyer. Don’t like pinto beans? Swap ‘em for black beans.
Makes 12 tostadas; prep time: 25 minutes; cook time: 30 minutes
Ingredients:
2 russet potatoes
2 Tbsp olive oil (divided)
½ tsp salt
1 cup chopped onion
1 14.5-ounce can pinto beans, drained and rinsed
1½ jars (10 ounces) Salsa Verde (such as Trader Joe’s)
12 corn tortillas
3 avocados
1 lime
2 cups shredded romaine lettuce
pico de gallo (optional, for serving)
lime wedges (optional, for serving)
Directions:
Preheat the oven to 400°F. Meanwhile, scrub the russets and dice them into small pieces.
Spread on a baking sheet lined with a silicone mat and toss with 1 tablespoon of olive oil and salt.
Roast for 30 minutes, stirring halfway through the cooking time.
When the potatoes are done cooking, heat a large pan over medium heat and add the remaining one tablespoon of olive oil. Add the onion and cook until translucent (about four minutes).
Add the drained beans, potatoes, and the Salsa Verde. Simmer 10 minutes until the liquid is absorbed.
Taste and season with salt and pepper.
Meanwhile, brush the tortillas lightly with olive oil. Place on a baking sheet and bake at 350°F for 10 minutes.
While the tortillas bake, make the guacamole: Mash the flesh of the avocados in a bowl with the juice of one lime. Season with salt to taste.
To serve, spread a layer of guacamole across the tostada. Top with lettuce and two to three generous tablespoons of the pinto bean and potato topping. Top with more Salsa Verde and/or pico de gallo.
Serve with lime wedges.

Hidden Spinach Healthy Guacamole
Every game day gathering needs a bowl of guac. To give it a nutritious boost, this guacamole recipe from Sarah Bond, nutritionist and creator behind the vegetarian food blog, Live Eat Learn, incorporates an entire bowl of fresh spinach.
Makes 2 cups; prep time: 10 minutes
Ingredients:
1 cup spinach
3 avocados ripe
1 lime juiced
¼ cup finely chopped red onion
1 jalapeño
1 garlic clove
salt and pepper to taste
Directions:
Blend: With a handheld immersion blender or a food processor, blend spinach, 1 of the avocados, and lime juice until a smooth puree is formed, scraping down the sides to get everything mixed nicely.
Mix: Chop the remaining avocado into small chunks, then roughly mash into the puree, along with the onion, jalapeño, and garlic. Once you reach a consistency to your liking, season with salt and pepper. Optionally stir in tomatoes and cilantro.

Beer Cheese and Roasted Onion and Watercress Dip
“Super Bowl parties tend to have one or two dishes that everyone will go for–one being dips with chips. Both the Roasted Onion and Watercress and Beer Cheese dips that we serve at Lot 15 in NYC are tasty, nostalgic and simple for the at-home chef to make for large groups,” says Executive Chef Stephen Parker of Lot 15 in New York City. Make these dips a day prior to Super Bowl Sunday (or at least the morning of) to allow the flavors to completely come through and serve each with an assortment of veggies and chips.
Beer Cheese Dip
Makes 4 cups; prep time: 15 minutes; cook time: 20 minutes
Ingredients:
2 jalapeños, roasted
2.5 pounds Velveeta
16 ounces water
16 ounces Pilsner
⅛ cup flour
⅛ cup cornstarch
Directions:
Heat water until boiling and mix in cornstarch and flour. Add beer and mix until all ingredients are incorporated.
Chop jalapeños with a knife or pulse them in a food processor.
Melt cheese in a double boiler or in the microwave and mix into the beer water mixture, and fold in peppers.
Let cheese cool and serve in your favorite party dish.
Roasted Onion and Watercress Dip
Makes 2 cups; prep time: 15 minutes; cook time: 20 minutes
Ingredients:
1 Spanish onion, roughly chopped and roasted
2 Tbsp olive oil
kosher salt and freshly ground black pepper
one 8-ounce package cream cheese, room temperature
½ cup sour cream
¼ cup finely grated Parmesan
2 Tbsp mayonnaise
1 tsp Worcestershire sauce
2 Tbsp thinly sliced chives, plus a pinch for garnish
2 bunches chopped watercress
Directions:
Toss onions in olive oil and place in the oven at 325°F, roast onions until golden brown. Let onions cool to room temperature.
Add cream cheese, sour cream, parmesan, mayo, Worcestershire, and seasonings into a food processor until everything is incorporated. The mixture should be a creamy smooth texture.
Transfer dip into a mixing bowl, add chives and watercress and fold in with a spatula. Serve in your favorite party dish.

Make the sauce: Combine all ingredients using a whisk.

Assemble on rye bread and top with vegan cheddar cheese, lettuce, and tomato.

Chicken Tortilla Soup with Lime and Hominy

Makes 12 cups (1–2 cups per serving); prep time: 15 minutes; cook time: 30 minutes
Ingredients:
1 Tbsp extra virgin olive oil or canola oil
1 yellow onion, diced
2 poblano chiles, medium size, seeded and diced
1 jalapeño, seeded and diced
3 cloves garlic
1 Tbsp cumin
1 tsp chili powder
1 tsp coriander, ground
1 tsp paprika, ground
4 limes, juiced
2 14-ounce cans diced tomatoes, no salt added
32-ounce chicken broth, low sodium
1 tsp salt
1.5–2 pounds chicken thighs, boneless, skinless, cleaned
1 cup corn
1 14-ounce can Hominy, drained and rinsed well
1 handful cilantro, chopped
a few glugs of hot sauce like Cholula
Directions:
Heat a large dutch oven over low-medium heat. Add oil and sauté onions and chilies about 10 minutes until they soften and onions are translucent.
Add garlic and spices and saute another three minutes.
Add in lime juice, tomatoes, salt, and chicken broth, stirring to combine. Cover and increase heat to bring to boil, then reduce heat to low and add chicken thighs.
Simmer covered until chicken is cooked through and falls apart easily, about 10–15 minutes.
Carefully remove chicken from the pot and shred or chop, then return to the pot. Add in corn, hominy, cilantro, and hot sauce.
Adjust seasoning as desired and serve with extra lime wedges, sliced jalapeños, and more cilantro.

Ground Beef and Couscous Stuffed Baby Bell Peppers
“Using bell peppers as the base for this dish not only adds nutrients and fiber, it also makes [things] colorful,” shares Rania Batayneh, MPH, nutritionist and bestselling author of The One One One Diet, who notes you can swap chickpeas for the ground beef to make this dish vegetarian.
Makes 4; prep time: 15 minutes; cook time: 35 minutes
Ingredients:
cooking spray
4 baby bell peppers
1 Tbsp extra virgin olive oil
1 pound lean ground beef (or one 15-ounce can of chickpeas, rinsed and drained)
2 cups chopped onion
8 mini baby-bell peppers, divided
6 cloves garlic, minced
1 jar (16 ounces) chunky tomato sauce
1½ cups couscous
8 ounces shredded Monterey Jack or other white cheese
½ cup salsa
Directions:
Preheat the oven to 375°F. Spray a 13" x 9" baking dish with cooking spray.
Cut the peppers in half vertically and remove their stems and seeds. Place them in the baking dish, cut side up.
In a large skillet over medium heat, cook the olive oil and chickpeas, stirring frequently, until heated through, about 5 minutes.
Add 1 ½ cups of the chopped onion, the bell pepper, and the garlic. Reduce the heat to low, add the tomato sauce, and let simmer while preparing the couscous.
Prepare the couscous according to package directions, adding the remaining 1⁄2 cup of chopped onion to the water before adding the couscous. When the couscous is cooked, combine it with the chickpea mixture.
Fill the bell pepper halves with the chickpea mixture and top them with the cheese. Bake for 20 minutes or until the cheese is bubbly and slightly brown on top.
Top each pepper half with one tablespoon of salsa and serve.

Salmon Ceviche
Maggie Unzueta of in Mama Maggie’s Kitchen is a fan of making this with frozen fish—“[it] doesn’t have that yucky frozen fish flavor,” she says—and suggests making it a few days before game-day.
Makes 4 servings; prep time: 25 minutes; cook time: 1 hour
Ingredients:
8 ounces salmon, fresh or frozen
6 limes (juice only)
¼ onion, diced
1 garlic clove, finely diced
1 jalapeno, finely diced
2 tomatoes, diced
½ bunch cilantro, chopped
1 tsp salt
1 avocado, diced
Directions:
Chop up the salmon into small pieces.
In a large container, add chopped salmon, lime juice, onion, garlic, jalapeno, tomato, cilantro, and salt.
Mix well.
Cover and place in the fridge for 1 hour.

Low Carb Buffalo Chicken Dip

Makes seven ½ cup servings; prep time: 5 minutes; cook time 30 minutes
Ingredients:
20 ounces canned chicken
8 ounces cream cheese
½ cup Frank’s Red Hot Buffalo Sauce
½ cup ranch dressing
8 ounces shredded mozzarella cheese
Directions:
Preheat the oven to 350°F.
Let cream cheese soften for a little bit. Once softened, put it in a medium-sized bowl.
Add ranch dressing and buffalo sauce. Mix until almost smooth.
Drain cans of chicken, then slightly shred the chicken and add it to the bowl. Mix well.
Add shredded cheese, and mix everything.
Put into a casserole dish and bake for about 30 minutes or until it is bubbling.

Fresh Spinach-Artichoke Dip
You can trust a beer enthusiast to deliver on game day. Christina Perozzi, Editor of Goose Island’s Ingrain Magazine shares this simple dip that boasts major flavor.
Makes 6 servings; prep time: 15 minutes; cook time: 25 minutes
Ingredients:
1 14-ounce can artichoke hearts
1 medium shallot
1 clove garlic
1 bunch spinach
½ cup Greek yogurt (plain)
½ cup mayonnaise
4 ounces mozzarella (shredded)
2-inch piece parmesan cheese (finely grated)
sea salt
freshly ground pepper
olive oil
Directions:
Preheat oven to 375°F.
Chop one 14-ounce can artichoke hearts (drained, juice discarded), one medium shallot, a clove of garlic, one bunch of spinach (leaves only; two large handfuls).
Place vegetables in a medium bowl.
Stir ½ cup Greek yogurt (plain) + ½ cup mayonnaise, four ounces mozzarella (shredded), and two-inch piece parmesan cheese (finely grated), sea salt, freshly ground pepper (both to taste) into artichoke-spinach mixture.
Rub olive oil lightly over the bottom of a small baking dish and spread artichoke-spinach mixture evenly in dish.
Sprinkle a little parmesan (grated) on top and bake for 20-to-25 minutes, until very hot. (Broil for a few minutes until golden brown, if you’d like.)
Serve immediately with pita chips, tortilla chips, or raw veggies (bell pepper scoops, broccoli or cauliflower florets, carrots, or a mix).

Crunchy Spicy Chicken Salad
This crave-worthy recipe from recipe blogger Kate, founder of Babaganosh works well with crackers or tortilla chips. Make a double batch and put on a sandwich.
Makes 4–8 servings; prep time: 10 minutes
Ingredients:
2 10-oz cans chicken breast, drained
½ red or orange bell pepper, seeds removed and finely diced
1 celery stalk, thinly sliced
2 scallions diced
¼ cup slivered almonds
3–4 Tbsp mayonnaise
1 Tbsp of lemon juice (from ½ lemon)
2–3 tsp hot sauce, such as Tabasco (or more or less, to taste)
salt and pepper, to taste (optional)
Directions:
In a medium bowl, combine all the ingredients from the chicken breast through the hot sauce. Mix well.
Season with salt and pepper, if desired.
Serve immediately or chill in the fridge until ready to serve.
Serve with tortilla chips or crackers for dipping and scooping.

Rosemary Garlic Popcorn and Pumpkin Seeds
Your Super Bowl party would be worthless without snacks. But chips and pretzels don’t always really hit the spot. Emily McLaughlin, in-house certified fitness trainer and nutrition expert at 8fit, shares one of her favorites that you’ll quickly want to incorporate into your regular snack rotation.
Makes 4 servings; prep/cook time: 10 minutes
Ingredients:
2 tsp coconut oil
1¼ ounce popcorn kernels (uncooked)
dash of salt
½ tsp black pepper
1 tsp garlic powder
2 tsp rosemary (fresh)
1 ounce pumpkin seeds
Directions:
Put the oil into a large metal pan on medium heat. Place 3 individual kernels in the pan and cover.
Once you hear them pop, uncover and add the rest of the kernels so that they form a single layer in the pan.
Cover and shake the pan a little to cover all the kernels with oil.
Once you hear it pop intensely, shake the pan every 15 seconds to help the unpopped kernels to pop and prevent popcorn from burning. When it's not popping anymore, uncover and put the popcorn into a bowl.
Top with salt, pepper, and garlic powder. Add chopped rosemary (optional) and pumpkin seeds. Serve and enjoy.

Warm Brussels Sprouts with Apple Chutney and Coconut Flakes
“You can make the chutney a few days ahead to cut your cooking time down on game day,” says Jason Fullilove, current chef-in-residence at Abernethy's in downtown Los Angeles. If you’d like, use red wine vinegar instead of apple cider vinegar.
Makes 8 servings; prep time: 15 minutes; cook time: 30 minutes
Ingredients:
6 cups brussels sprouts, cut into halves
4 green apples (such as Granny Smith), peeled, cored, chopped into ½-inch pieces
1 Tbsp fresh lemon juice
zest of 1 orange
1 large garlic clove
1 red bell pepper, diced
1 chile de árbol
1 shallot
1 cinnamon stick
1½ tsp salt
½ cup sugar
½ cups of apple cider vinegar
¼ Tbsp of finely diced ginger
pinch of toasted coconut flakes, for garnish
Directions:
Start the chutney. Bring vinegar and sugar to boil in heavy, large, non-aluminum saucepan, stirring until sugar dissolves. Reduce heat and simmer 10 minutes. Remove from heat.
Toss apples and lemon juice in large bowl. Add apples and remaining ingredients to your saucepan mixture.
Simmer until apples are tender and chutney thickens, stirring occasionally, about 30 minutes. Place in bowl.
Cool. Cover; chill. (Can be made 1 week ahead. Keep chilled.)
Toss your halved brussels sprouts with salt, pepper, and olive oil—roast in 350-degree oven for about 20 minutes until golden brown and edges begin to get crispy.
Toss warm brussels sprouts and room temperature apple chutney together. Squeeze juice from ½ a lemon and 2 tablespoons olive oil.
Place in serving bowl, and garnish with toasted coconut flakes.

Instant Pot White Chicken Chili
This recipe from streaming fitness and nutrition platform OpenFit may be nourishing, but it also makes for a damn tasty Super Bowl Sunday chili. Serve it over rice, pasta, or veggie noodles or roll into a tortilla.

Ingredients:
4 tsp extra virgin olive oil
½ large white onion, peeled and diced
2 green bell pepper, seeds removed and diced
​1 tsp garlic, minced
​2 cups white button mushrooms, cleaned and cut into quarters
​2 medium carrots, peeled and diced
​2 tsp ground cumin
​2 tsp chili powder
​½ tsp ground oregano
​1½ cups low-sodium vegetable broth

Everyone has been asking me how I survive the Paleo diet. I have made promises that I would share my secrets, but life has been absolutely crazy and I truly apologize.
So, here it goes.
I cannot have sugar, soy, dairy, gluten, anything starchy, and it has to be all organic or at least all natural with no added hormones and antibiotic free. I am going to post pictures of items that I use in place of common snacks/foods that people eat that I can no longer have.
Let’s start with sugar. Natural sugar from organic fruits are okay, but I cannot eat fruit in the evening because it will raise my fasting blood sugar in the morning. Instead of regular sugar, I use Stevia. It is made from a plant which makes it much more healthier than Splenda or Sweet n’ Low.
They also have stevia drops for sweetening. For example, I have a paleo chocolate chip recipe that I use vanilla stevia drops in place of vanilla extract. Still tastes just as good. My mom uses a lot of the different flavors during holidays for a lot of our paleo dessert dishes.
Another way to sweeten foods is by using raw, organic honey. There are many different brands you can find at Kroger, Whole Foods, Meijer, Lucky’s Market, etc.
I have never really been a fan of soy sauce to begin with, but you would be surprised how many foods have soy in them. Soy is definitely not good for people who suffer from thyroid issues. In place of sauces, I use coconut aminos. It is absolutely delicious. You can use it for sautéing vegetables and pouring over any lean meats. Your best bet at finding this item is at Whole Foods, Lucky’s Market, or ordering off of Thrive or Amazon.
When I tell people that I am non-dairy, they give me crazy looks like, how??? Honestly, I’ve never been much of a milk drinker to begin with. So cutting out dairy wasn’t completely difficult. You can drink Almond or Coconut milk in place of regular milk. I’m not a huge coconut milk fan, but I love Almond milk. Also, I use Daiya non-dairy cheese. You can find Almond and Coconut milk at Meijer, Walmart, Kroger, Whole Foods, Lucky’s Market, etc. Mostly the same for the cheese.
Also, I have to use a non-dairy mayonnaise. The best brand that tastes good? “Just Mayo”. Flavor is Hampton Creek. You can find this at Kroger and any Whole Foods store, but I would advise you to get it at Meijer because you get a bigger container for a much more reasonable price.
I mentioned earlier that Paleo sweets do in fact exist. Yes, people. There are ways to make delicious sweets. How? The first example is by using things such as raw honey or stevia as natural sweeteners instead of using pure granulated sugar. Also, we use coconut flour, almond flour, or both instead of white flour. Of course if you have a nut allergy or coconut allergy, you would have to research alternatives, but if you do not have these allergies, then they are perfectly fine to use to make sweets and all kinds of different breads.
How do I cook my meats or  sauté my vegetables? I am not allowed to use vegetable oil and they advise you to only use olive oil at cool temps. So, I don’t use any oils at all. I use a specific butter called Earth Balance that is soy free. This can be found at any grocery store. Be careful when using for baking in the oven, it does tend to have a smoking point.
I cannot have regular salt, it must be sea salt.
I cannot have rice, corn, or white potatoes, but I can have organic sweet potatoes.
Water must be my best friend, but if I have a craving for something else, my favorite pop to drink is Zevia. There is no caffeine and Stevia is the sweetener that is used. You can find this at Kroger, Meijer, and any Whole Foods Stores. My favorite flavors is Ginger ale, Orange, and Grape!
My guilty please is Enjoy dark chocolate chips. You should still limit yourself on how much you eat of them because if you aren’t careful, it can still elevate your sugar. I also use these in my Paleo Chocolate Chip Cookie recipe that I obtained through Pinterest. I would advise purchasing these at your local Kroger because they are $2 cheaper than if you were to go to a Whole Foods store.
For snacks, I eat Plantain or Sweet Potatoe chips instead of regular chips. For popcorn, I get Skinny Pop. These can be found at any grocery store except for Plantain chips. You can only find these at Lucky’s Market or select Big Lots. (Big Lots is much cheaper of course.)
I also love unsweetened coconut chips. I get the Simple Truth brand at Kroger.
The best snack to have are sea salted almonds or pecans. Always keep these on hand for in between meals. These are much more healthier for you than the other snacks I mentioned.
You would think peanuts are good for you, right? They actually aren’t. Peanuts are Legumes which contain lectins. These are the kind of proteins that cause damage to the stomach lining and causes issues with your digestive tract. So, say no to the peanut. Instead of peanut butter, try almond butter. It is a great and tasty alternative. Barney is my favorite brand in which I would advise to get at Kroger.
All meats must either be organic or all natural, free of added growth hormones or antibiotics, the same for vegetables and fruits (free of pesticides or chemicals). The best places to go for these meats for reasonable prices are Whole Foods stores or small grocery stores such as Lucky’s Market. When picking out salad dressings, your best bets are any kind of vinaigrettes’. Especially balsamic. Try to avoid eating fast food at all costs. NOTHING processed. When getting meats in cans such as Tuna, they must be BPA free, your cooking ware and containers as well. Pyrex are my favorite containers for baking and storing. One of the most important things about Paleo is staying hydrated with plenty of water in which I have to work on that daily (like everyone else in this world).
Also, who doesn’t love Pizza? I mean, come on! Having to be dairy free and gluten free can be frustrating at times, but, Pie Five has been a life savor for when I am having a craving for pizza. I have the option of gluten free crust and vegan cheese and whatever else I want to add to my pizza. We have two Pie Five stores in Lexington, KY currently. Not only do you have the option of pizza, but you can also add a garden side salad to it. There is one located at the Fayette Mall and one off of South Broadway beside Cookout.
I am going to try and keep my promise from here on out and post a few recipes that I personally use for family meals from time to time. My parents started this diet before me and have truly helped me become prepared for when I started. I have them and Dr. Miller to thank at True Health Solutions. This lifestyle change has been awesome for me! I have never felt better! I do understand that everyone is different and everyone has different issues, but for us, this has truly helped change our lives for the better!
Dad was a Type 2 Diabetic for 14 years and took 3 insulin shots a day, plus he had hypertension, high cholesterol, and many other problems. He was a walking time bomb for a stroke or heart attack. This lifestyle change has added years onto his life. It has also helped my Mother with her Thyroid Disease.
Not only has it helped change his and Mom’s way of life, it has helped me tremendously. I was born without a thyroid gland and developed Type 2 diabetes after giving birth to my daughter. The medications led to severe liver problems and I was severely ill. Now, I am no longer considered a diabetic and I am off all medications except for my levothyroxine for my missing thyroid gland. I have never felt better. I am more upbeat. I no longer drag or have fatigue and I actually have the energy to play with my daughter.

Life couldn’t be better now that I have gotten my health back in order. If it wasn’t for the support of my husband and for me having my daughter as an ultimate drive, I couldn’t have made it this far. I still have a little ways to go and a lot more weight that I would love to lose, but it will happened. For once, I have faith!
