Goat's Milk Rice Pudding
This Goat's Milk Rice Pudding, which I made because my Mum cannot drink cow's milk (or cream!) anymore, is just as delightfully and indulgent, and perhaps even gains in flavour! Thus, I invite you to try it even if no one you're making this for has developed an allergy! Happy Wednesday!
Ingredients (serves 2):
¾ cup arborio rice
½ plump vanilla bean (split lengthwise)
2 ½ cups full-fat goat's milk
¼ cup caster sugar
Red Currants, to garnish (optional)
Soon arborio rice into a large saucepan. Add vanilla bean halve. Pour in goat's milk; and give a good stir.
Heat over a low flame, stirring very occasionally, for about 35 to 40 minutes, until the rice is just tender. At this stage, not all of the liquid will be absorbed, but that is how it should be. Stir in the sugar until dissolved, and remove from the heat.
Allow to rest, at least one hour. The rice will continue absorbing the goat's milk, and the result will be indulgent and creamy.
Then, you can reheat or chill, to serve to your liking.
Serve Goat's Milk Rice Pudding warm, lukewarm, cooled or cold, topped with Red Currants, if you wish.
