In the manga Fuyumi originally has blue eyes, while in the anime she has grey eyes (which I don't know why they changed it). What do you consider more canon, well what are her eyecolores based in your opinion?
Honestly I didn't even notice the difference until it was pointed out to me because the only colored illustration we have of Fuyumi is in that back cover, and that's fairly late in the series. So I'm kinda attached to the idea of her gray eyes and I've described them like that in my fics so far. When it comes to physical appearances I tend to stick to the image I first saw when consuming a series. So for example the same thing happened with Yahaba from haikyuu, and I kept picturing him with brown hair instead of his manga silver.
There are exceptions, though! For example I'm very biased about preferring Shigaraki's manga white to the anime pale blue of his hair. Tho for cosplays I tend to prefer anime colors for accuracy and recognizability since it's annoying when people say that your stuff is "inaccurate" because it follows manga canon. (still mad about Bones changing Hawks' color pallette for the same reason btw hhhh)
Basically, I am a mess, don't ask me to explain why I even have those preferences bc I don't know either dbdhsjhdx
Typically I am one of those people who gets really annoyed when anime adaptations get the details wrong, but for some things I'm more willing to let it slide. Generally speaking, though, I don't tend to consider anime canon as canon, personally, if only because the mangakas only have full control of the choices in the original work. I know they give guidelines to the animators but not always does that achieve an ideal result. Again, see the mistake in Shigaraki's hair color. It's fairly obvious that they based it off the cover of volume 3,

And I assume they didn't double check with Horikoshi if that was accurate. Shigaraki's hair is supposed to be white (as also shown but all the other covers and color spreads he appears in), but manga covers play with lighting and artistic renditions of colors a lot.
The blue of Nagant's hair looks slightly different in every illustration Hori has colored so far, for example:

I almost bought a purple wig because of the picture in the middle.
So, the difference between anime and manga canon might just be a lack of communication between Horikoshi and the anime team, or a genuine assumption based on the association that the kids who take after Rei's quirk are colored with her pallet, and the kids who take after Enji with his.
I guess what's "canon" depends on what medium you prefer / consume. If you asked me what's her "true" eye color I would say blue because that's how the creator draws her, but if you only consume the anime that will be your only frame of reference and you'll answer gray 🤷
