I like your idea about Druitt and Unny still in cahoots. It fits well with them both involved in what occurred at Weston. Redmond called on uncle Druitt so he knows the secrets of the Music Hall and the school. And of course none of it would've been possible w/o Unny, and there they both are on the Campania. I never did buy Undertaker's excuse for refusing to reap Druitt or let him be killed. Your idea makes much more sense. Toboso makes us laugh at Druitt so we won't suspect him 2 much, right?

Undertaker and Druitt connections
I suspect that -- unless they are somehow related, and they might be -- Undertaker first became interested in what Druitt was up to when the viscount began selling off children and young women at auctions, if not sooner (and I'll get to that later in this reply).
If Undertaker was called upon to remove remains from any of the buyers, or from Druitt's estate, he'd want to know what they were doing to those victims/bodies. We know he's picked up remains from Phantomhive Manor on numerous occasions; Sebastian has the other servants pile up the remains from the circus troupe attack and cart them to some back or side gate for Undertaker to collect them. Most likely, this was done whenever there was a failed attack at the manor, even before our "Ciel" became earl and master. The Phantomhives, going back however far they go, would have been common targets to anyone who wanted to get rid of the queen's watchdog. And we know that before other servants were even hired by Sebastian and our earl, assassins and thieves were showing up on a nearly nightly basis. Somewhat regularly, in any case.
We now know quite a bit about how our earl ended up with his current servants, but we've learned very little about how he ended up with his various connections; we don't even know how he connected with Vincent's old, remaining network. I imagine that one of the first reconnections he made (besides Madam Red and Tanaka, of course) would be Undertaker. People would show up to the manor, Sebastian would kill them, and then what? Sebastian would have asked his young master how he wants to dispose of the bodies. At first, our earl might have suggested to bury them on the vast estate. But, as the numbers mounted, this would have taken more time and space, plus it could open them up for investigation, if remains were found (by others) that weren't proper burials in the family cemetery. Another option would be to dump them off the grounds, as far away as possible. This could still become a problem. Our earl would remember the creepy undertaker that popped up around the manor (and possibly also the estate grounds) from time to time, back when his predecessor was in charge. During the instruction both boys received about being earl and watchdog, Vincent might have already explained why he has Undertaker in his network... at least the professional reason, though definitely not the personal reason.
I don't know whether Druitt was ever in Vincent's circle, a member of the evil nobles. They probably attended Weston together, but we don't know if he's the Scarlet House prefect. Either way, Druitt might have actually become a subject for investigation before. There's even a scene during the curry arc that could be a hint to that. The jeweled lady that Druitt recalls might actually be Vincent in drag, at some event years ago, there to investigate Druitt or someone else in attendance.
We have no idea how long ago Druitt started trafficking humans, so perhaps it was related to that... and he just got away to do it again and again... much like we've seen him get away with the things he does while our earl is watchdog. Even when Druitt is arrested, he goes free. Probably bribery to corrupt officials. Some of the higher-up ones might be clients/buyers. Yana-san really drives home how much corruption and fraud and abuse there is in her Victorian England. Sadly, it's not too far from reality.
Doctors were largely detested during the era because of some shady practices that many engaged in. Practitioners would be hired to have people committed to asylums... or even to examine girls to see if they were still virgins, so their families could prostitute them out and charge more for their first assignations. Surgeons (for practice) and anatomists got their human dissection subjects through various means; some were acceptable and others were downright despicable. They prescribed dangerous substances as medicines; sometimes the "cures" really were worse than the conditions.
Though Druitt doesn't have a medical practice, he has a medical license. Before he even got into selling live humans, I wouldn't be surprised if he was involved with supplying and/or buying corpses for study. It would be interesting if Druitt cut out the grave robbers by going straight to undertakers for a supply, because he seems like the sort of person who would do a lot of studying on his own, particularly since he's an aristocrat with no intention of opening a public medical practice. Druitt's connections to Undertaker might go back quite a long way, maybe even back to Druitt's Weston years... when Undertaker would have likely re-entered Vincent's life. Who knows, but I'd be very interested to find out.
When Sebastian investigates all the people with events for the social season, narrowing down the ones that might line up with Jack the Ripper, we don't know where he gets all of his information. It's entirely possible that some of it comes from Undertaker, particularly about people like Druitt. Which supports the idea that Undertaker might already have a history of dealing with the remains of people who have passed through Druitt's doors.
Well, they definitely meet before the events of the Campania, since they already have some sort of dealings with each other, including the Aurora Society. Druitt could easily be the one who introduces Undertaker to Stoker. I very much doubt it would be the other way around, with Stoker making introductions between Undertaker and Druitt.
I'm sure there was more I wanted to get to here, but this reply has been sitting in draft for ages, and I've forgotten whatever else I'd wanted to say. 😬
But Druitt has got to supply more to Undertaker than simply laughter. Knowledge and/or experimentation that leads to medical technology would be very helpful for his current activities.
And we can't ignore the possibility they are also related. Particularly if Undertaker ends up being Cedric K. Rosewood, Rosenthal, Rosedale or any other last name that would make him sound right at home in Scarlet House....

Thinking about the fact that the Viscount of Druitt not knowing yet our!Ciel is a Phantomhive is pretty relevant
Because I was just reminiscing about the theory that Druitt was maybe...

the red dorm prefect at Weston when Vincent and Diedrich were also prefects. This means that, despite the many times our!Ciel faced Viscount of Druitt, including one time without disguise on the Campania, Lord Aleister Chambers doesn’t know that our!Ciel is Earl Phantomhive and, more precisely, Vincent’s son.

I know he’s a character who’s played for laugh, but comic relief in Kuroshitsuji is often hiding something significant and he’s a recurring character, so he’s bound to mean something at some point plot wise, especially since he’s already a prominent member of the Aurora society. 
Anyway all that to say that the moment Druitt realizes that the boy from the Campania is Vincent’s son is probably when we realize what he’s all about in the series. :)) 
PS: maybe the fact that he’s one of Vincent’s old “buddies” from Weston is why UT is fond of him, on top of him being funny? Like how familiar UT is with Dee, even if Druitt was not one of the Evil Nobles?
PPS: there’s also the crack theory that Bravat is the purple dorm prefect from the same gang (bc yeah i totally dig the idea that Weston is super relevant to the plot, if Weston college’s board is related to some sort of dark society, half brainwashing well-born young men who might one day have an important position in politics).

Okay, so. Historically, after Lina Astor "retired", it took three women to fill her role in society, and while I do not see this show lasting long enough for them to ever get rid of two-time Tony winner Donna Murphy, her place was taken over by Bertha's historical counterpoint (Alva Belmont), Mamie Fish (real icon), and a young woman named Theresa Fair Oelrichs--who was the one to enforce the rules of polite society while Mamie threw her raucous parties and Alva was being...well, Alva. Now, Aurora Fane is a little too old to be Theresa's counterpart here, and I don't actually have any point to make, but I, for once, enjoy the dynamic she, Bertha and Mamie have going on. In the ladies club scene in tonight's episode, we can sort of see that power shift going on with Bertha driving Lina away, Mamie watching the drama unfold with unfettered glee, and Aurora being horrified about the complete breakdown of decorum.

Ch196 (p4), The child-whisperer
Apparently, this took more effort on Theo's part than it at first seems. But it's still weird to see how the staff apologizes for "causing a Pomeranian such trouble".

Finny realizes (finally?) that Theo's holding a copy of the Fenian Cycle.

Theo has a way with the younger kids, like Nick, Ginny, and a picky eater named Milly... and the staff has taken notice of it. Theo starts talking a lot like real Ciel here, treating these younger kids as if they are his own siblings, and he has to be the "big brother". Ronnie must be the kid who was sent to real Ciel and Undertaker; apparently, they call this "fledging".
Fledging is a slightly odd term to use here, since it's a reference to a bird's feather and flight muscle development. It would work best here if all the classes were named after birds... instead of dog breeds. But oh well.
He's the oldest now, meaning he should be next to fledge, which I started to suspect when we got spoilers yesterday.
Then he finally notices Snake and Finny.

Doll calling them "friends" makes Theo's eye twitch. Why? What does he think about people associated with Doll? Has he seen quite enough already of people she calls friends? 🤔
A loud bell calls Theo away to his next class, but as he walks past Finny, he says something quite vexing....

Finny is finally starting to realize just how reminiscent of our earl this kid Theo really is. Same clothing style, same reading material, same sort of personality.
And what a loaded compliment! Is he saying he knows Finny and Snake are infiltrating this orphanage based on the way Finny talks? Idk. He definitely has feelings regarding people that Doll calls "friends", and it generally isn't warm fuzzies.
He's very observant and I'm hoping he becomes useful to Finny and Snake. Maybe he has some information about Doll or the Aurora Society members associated with the orphanage. Perhaps Finny and Snake can end up helping him, too....
But the first thing I hope Finny learns from meeting Theo (and Nick) is that all the Pomeranians remind him in some way of our earl and real Ciel. Idk if he will be able to pair up the classes to their corresponding blood types, but I hope he realizes that wherever Pomeranians go when they "fledge" probably has something to do with the blood supply for real Ciel.

Blind World
Under the night sky, two people sat, marveling at the visible aurora. The setting sun illuminated their entire valley, which was surrounded by mountains, above which the glow became even more pronounced. The moon was already high, preparing to take over as soon as the sun dipped below the horizon.
The first person was dressed impeccably. Their clothes weren't new, but they still looked harmonious. It was evident that they were chosen with taste. The second was dressed haphazardly, throwing on whatever felt comfortable at home. Their appearance was jarring, a clash of mismatched items.
The duo sat on a veranda filled with greenery and various trinkets. There was a sense of comfort around them, a feeling of protection and freedom.
The general landscape around them was quite bleak, with an oddly placed house having bedroom windows facing their garden. On the other side was another house, where the neighbors had been a bit wiser, positioning the windows of their bathrooms. Opposite them lay a field of sunflowers, and in the distance, mountains loomed. The sky had a dusty hue.
"It's all because of the Temnodumov law," one said, "which states that the standard for emissions is based on the number of complaints. And since no complaints are coming in, they keep raising the limits to save resources."
"Can we not talk about your conspiracy theories?" The other sighed. "Evolution is a process. We're turning into a toxic world. Why change anything? Mother Earth does everything for us; we just need to adapt."
"But what about those who don't like the direction we're heading?"
"Just look at our neighbors. There's your answer."
Only a few houses in the area had their terraces. Most of the space was built up with rooms. The view was decent but tainted by smog and the lack of forests. Only the distant mountains hinted that somewhere out there were forests.
"Why are people so nosy? Why can't they respect privacy?" The owner lamented, pointing to the neighbor's bedroom window overlooking his garden. "Always peeking into other's plates. It's infuriating."
"Don't get worked up," the guest tried to soothe. "People are curious. Maybe they find comfort in watching your garden."
"But some watch with envy, or worse. I've had to treat my plants for fungi because of them!"
The guest looked around puzzled. "Your plants look fine to me."
"That's because you don't see them as they should be. They should be green and lush."
"Well, I perceive things differently. Your garden is still a cave, but with good ventilation."
"There's always beauty in the sky... why not on Earth?"
"Why bother? People are content. Why waste resources on something that won't profit?"
"Aurora..."
Their conversation paused as both gazed into the sunset, losing themselves in nature's masterpiece. The displays of nature's art are universal, not requiring words. Details might differ, but beauty remains the same for everyone.
