Big breakfast today. I wish I had been hungover for this.

I'm a big believer that if you're having bacon for breakfast, you should have at least three pieces. Two eggs, two slices of cheese, a big kaiser bun AND three pieces of bacon is a bit of a push though.

I broke the rules. I did two of the eggs as a lazy omelette, as per the recipe, but the remaining two I fried normally. Every breakfast sandwich needs a gooey yolk. No argument. I can't fucking stand the omlette loaf all the chains use for their breakfast sandwiches these days.

Tony says to serve with shitty coffee, but I just couldn't. Went well with an Ethiopian dark roast, if that's your thing.

Taste is 4 out of 5. The kaiser wasn't exactly right, so it changed the texture of the sandwich.

Difficulty is a 2 out of 5. Don't burn your bacon, and you've got this.

Time was about 30 minutes. 15 minutes for getting the bacon ready, 15 minutes for eggs and assembly.

Halve the eggs and bacon for a regular old breakfast sandwich. If you're hurting on a Sunday morning and need something to fill your stomach, go for the double. Then take a nap.
