hmm, this banan has been in my mailbox for too long, i think it's time to make banan bread out of it so here's a recipe
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs, beaten
3 (over)ripe bananas, mashed
2 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 Tbsp whole milk
1/2 tsp vanillal
1/2 cup chopped walnuts (optional)
Beat oil and sugar together. Add beaten eggs and mashed bananas. Beat together well. Add flour, baking soda, baking powder, and salt. Stir in milk, vanilla, and nuts. Beat well (by hand, using a mixer for this makes the batter too watery and loose).
Scrape batter into a greased 9x5 loaf pan and bake at 350F for 50-60 minutes or until a toothpick inserted in the center comes out mostly clean. Let cool for 10 minutes before removing to wire rack to cool completely before slicing.

Hiya there, everyone! So this is a little different from my usual post, but I've wanted to share some of my favorite recipes with you all for a while now. I figured since I can't cook for you all in person, I can at least share the recipes I love so you can make them yourselves.
So this first recipe is my honey banana bread recipe that I've been making for about a year now; I hope you all enjoy it, and if any of you make it, please send me pictures so I can see them.

Wet Ingredients:
1 cup of honey
2 to 3 ripe bananas mashed (It depends on how big the bananas are.)
2 eggs
1/3 cup of vegetable oil
1 tsp of vanilla extract
1/4 cup of milk (You can use whatever type of milk you like, I use whole milk because it makes the bread fluffier in my opinion.)
Dry Ingredients:
1 3/4 cups of flour
1 tsp of baking soda
1/2 tsp of salt
1 tsp of ground cinnamon

Instructions:
Preheat oven to 325 degrees Fahrenheit.
Grease and lightly flour a 9 x 5-inch pan.
In a cereal bowl mash up your bananas until it's almost a pudding constancy, then add in your milk and whisk until combined.
In a medium-sized bowl mix together your flour, baking soda, salt, and ground cinnamon.
Then in a large bowl whisks together your honey and oil, before adding in your eggs.
When all three are mixed together add your banana milk mixture until everything is blended together.
Once all your wet ingredients have been combined continue to stir while slowly adding all of your dry ingredients.
After that continue stirring everything together until all of the dry ingredients are mixed in with the wet.
When that's done pour into your pan and sprinkle more cinnamon on top for a little more flavor.
Then put it inside the oven and bake for 55 minutes to 1 hour.

And there you have it honey banana bread!
Small Flavor Tip: You can add other things like chocolate chips, dried fruits, and nuts to have it fit your taste a little bit more. I don't really like those with banana bread so I'll usually spread honey or apple butter on a slice.

Maple Spelt Banana Bread

This Maple Spelt Banana Bread is simple but beautiful. It is fluffy, has a deliciously nutty flavour without nuts, which makes it suitable to your friends and family with nut and/or dairy allergy, and is just delightful with a cup of tea or coffee!
Ingredients (makes a loaf):
½ cup plain flour
1 1/2 cup spelt flour
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
½ teaspoon salt
2 tablespoons butter
3 over-ripe bananas
2 tablespoons demerara sugar
1/3 cup pure Canadian Maple Syrup
4 eggs
1 teaspoon Homemade Vanilla Extract
1/3 cup spelt milk
1 tablespoon pure Canadian Maple Syrup
Butter a large loaf tin, and line with baking paper. Set aside.
In a medium bowl, combine plain flour, spelt flour, baking powder, bicarbonate of soda and salt. Give a good stir and set aside.
Melt butter in a small saucepan over medium heat. Remove from heat once butter is melted; set aside.
Preheat oven to 175°C/345°F.
In a large bowl, mash bananas thoroughly with a fork. Stir in demerara sugar and half of the Maple Syrup, then add the eggs, one at a time, whisking well after each addition. Finally, gradually whisk in Vanilla Extract and spelt milk.
Gently stir spelt flour mixture into banana mixture with a rubber spatula until just blended. Then, stir in remaining Maple Syrup and melted butter until well-blended. Pour batter into prepared loaf tin, and place in the middle of the warm oven. Bake at 175°C/345°F, for 45 minutes or until a toothpick inserted in the middle of the cake comes out clean. 
Let Maple Spelt Banana Bread cool slightly before removing from the pan, and placing onto serving tray. Brush generously with Maple Syrup, to glaze.
Serve Maple Spelt Banana Bread with a nice cuppa.

every. single. time i make banana bread, i go to this recipe. i love this woman.
i also always omit more than half of the sugar, though. i usually just do 1/4 cup brown sugar and 1/4 cup granulated sugar. or like, today i'm outta brown sugar, so just doing 1/2 cup granulated.
i'm also adding half a cup of nuts this time, and in place of the 1 cup almond milk, i put in 1/2 cup coconut milk and 1/2 cup apple juice (idk it's Fall).
it's in the oven! i'll let you know how it goes in an hour.

Budín de banana - Al fuego recetas
Duración:70 minutos.
Comensales: 4
Ideal para desayunos y meriendas. Super rico y fácil de hacer.
La cantidad de los ingredientes es para un molde de 25 cm.
Ingredientes
2 bananas maduras
2 huevos grandes o 3 huevos pequeños (dependiendo del tamaño de los mismos)
100 CC de aceite de girasol
250 gramos de azúcar
300 gramos de harina leudante (o harina común y una cucharadita de polvo de hornear)
Procedimientos
Por un lado, aceitar o enmantecar y enharinar la budinera y encender el horno a fuego mínimo.
Por otro lado, en un bowl o recipiente hondo, pisar las dos bananas con un tenedor.
Agregarle los dos o tres huevos y el aceite y mezclar.
Luego incorporar el azúcar y la harina e integrar todos los ingredientes hasta tener una mezcla homogénea.
Una vez obtenida esta mezcla, la vertemos en la budinera y la llevamos horno en la misma temperatura que lo teníamos por alrededor de 40 minutos mínimo.
Pasado este tiempo, abrir el horno y pinchar el budín para ver si ya está cocinado. Si es así, apagar el fuego y dejarlo por un tiempo dentro del horno apagado.
Luego desmoldar y servir.

BEHOLD MY CHOCOLATE BANANA BREAD RECIPE
note: if youn have unsweetened chocolate powder, then use only 1/4 cup of the unseetened chocolate powder and 3/4 cup of cane sugar instead
Versión en español: - 3 guineos grandes maduros - 1/3 taza de mantequilla con sal (la normal) derretida - 2 cucharadas de aceite de oliva - 1 huevo grande - 2 cucharaditas de esencia de vainilla - 1/2 taza de panela - 2 cucharaditas de polvo para hornear - 1/2 cucharadita de bicarbonato - 1/4 cucharadita de sal - 1/2 cucharadita de canela - 1 taza de harina - 1/2 taza de polvo de chocolate dulce (yo utilizo la universal) - Almendras, nueces, pasas o lo que sea al gusto.
1. Precalienta el horno a 180°C 2. Combina la harina, el bicarbonato, el polvo para hornear, la sal, la canela y el chocolate. 3. En un bol aparte, aplasta los guineos hasta que no queden partes grandes (que no quede muy líquido, debe haber grumos). Una vez que hayas hecho eso, pon la mantequilla derretida, el aceite, el huevo y la vainilla. Después de combinar todo esto, agrega la panela. 4. Pon los ingredientes secos de poco a poco en el mismo bol que los húmedos y combina bien. 5. Pica las nueces/almendras/pasas/whatever y ponlas en la masa. Separa unas pocas no picadas para ponerlas de decoración. 6. Engrasa el molde y pon la masa. Al final, pon los frutos secos no picados arriba. 7. Meter al horno y... nunca le tomo el tiempo, lo saco cuando me lo dice mi corazón, pero después de unos 35 minutos tal vez mete un palillo de dientes, y si sale seco o con migajas (NO LÍQUIDO) significa que ya está.
nota: si tienes polvo de chocolate sin endulzar, entonces solo usa 1/4 de polvo de chocolate sin endulzar y 3/4 de panela

Every once in a while I think abt that post that's like "oh woww I just found the best banana bread recipe ever" and lots of people were all reblogging it like omg this is so good tumblr banana bread ily and I was like. Ok I'll make a batch so I can see if theres anything from this recipe I could use to make mine better! That'll be fun :) and then I made it and it was the fucking dryest bullshit in the world. It was never finished. I hate you banana bread tumblr poster. If you want a good recipe, the bon appetit one is the best one, and I usually also add vanilla and brown my butter before adding it. Going to experiment with a rum glaze soon I'll add that too if it's any good (also pls pls pls sprinkle a layer of white sugar on top it makes the top crunchy)
Also if you want something to spread on it I reccomend equal parts cream cheese and whipping cream, a little vanilla and powdered sugar to taste (add after cream cheese and whipping cream are mixed), and just beat it until fluffy

Nutty Banana Bread

This Nutty Banana Bread makes a deliciously comforting mid-afternoon treat with a hot cuppa on the first snow day* of the season! Happy Sunday!
*It only was a very slight sprinkling, only lasted about an hour this morning and did not stick; but, there was snow today and I'm chuffed about it!
Ingredients (serves 8 to 10):
1/3 cup pecan halves
1/3 cup hazelnuts
1/3 cup almonds
2 tablespoons unsalted butter (or vegan margarine**)
1 cup wholemeal flour
1 cup plain flour
1 teaspoon baking powder
½ teaspoon salt
 3 over-ripe bananas
2 heaped tablespoons demerara sugar
1 teaspoon Vanilla Extract
2 large eggs
½ cup Greek yoghurt (or soya yoghurt**)
**if you're cooking for someone who has a cow's milk allergy
In a frying pan over high heat, toast pecans, hazelnuts and almonds until fragrant. Remove from the heat and let cool slightly before chopping roughly. Set aside.
Preheat oven to 160°C/320°F. Butter a large loaf pan, and line it with baking paper; set aside.
In a small saucepan, melt butter over low heat. Once melted, remove from the heat.
In a medium bowl, combine wholemeal flour, plain flour, baking powder and salt. Give a good stir; set aside.
In a larger bowl, thoroughly mash ripe bananas with a fork. Stir in demerara sugar and Vanilla Extract. Add the eggs, one at a time, whisking well after each addition. Then, alternately stir flour mixture and Greek yoghurt into the banana mixture, beginning and ending with flour mixture. Whilst adding the last of the flour mixture, also add melted butter and toasted pecans, hazelnuts and almonds, folding the whole lot in with a rubber spatula until just blended, saving a few to sprinkle on top.
Pour batter into prepared loaf pan, sprinkle with reserved toasted nuts, and place in the middle of the warm oven. Bake, at 160°C/320°F, 1 hour, until a toothpick inserted in the middle of the loaf comes out clean. Remove from the oven, and let cool in the pan, 15 minutes. Remove from the pan, carefully peeling off baking paper, and let cool completely.
Serve Nutty Banana Bread with a nice cup of tea or coffee.
