Pecan & Carrot Lettuce Wraps w/ Red Cashew Sauce
I made these fire carrot lettuce wraps with red cashew sauce at the beginning of the year, and they are a game changer! So fresh, flavorful, and satisfying. Perfect for a healthy lunch or dinner option. #rawvegan #pecan #carrot #lettucewrap #redcashewsauce #meatreplacement

Raw Pecan & Carrot Meat
1 cup of soaked pecan (Soak for 2-4 hours. If can soak overnight)
8 soaked sun-dried tomatoes (Soak for 2 - 4 hours. If you can soak overnight)
1 Tbsp of chopped onion leeks
1 cup of carrots
1 tsp chili powder
1 tsp paprika
1 tsp minced garlic
1/2 tsp crushed red pepper flakes
1 tsp Himalayan salt
2 tsp lime
Orange Pepper Cashew Sauce
1 chopped red bell pepper
1 cup soaked cashews
25 -30 cilantro leaves
2 Tbsp lemon
2 tsp crushed red peppers
2 tsp of nutritional yeast
1 tsp of minced garlic
1.5 tsp Himalayan salt
1 tsp black pepper
Other Ingredients
Lettuce
Crushed Nacho Kale Chips (Topping)
Step 1. Blend all the Orange Pepper Cashew Sauce ingredients until you have a smooth, creamy sauce.
Step 2. Mix all of your pecan & carrots ingredients in a food processor.
Step 3. Build your tacos!

If the food is pretty and served in a visually pleasing manner the amount of digestive juices secreted is greater than if the food appears distasteful or if it is served in unpleasant surroundings… Food that is simply unfamiliar is often automatically rejected. Some people refuse to eat yellow tomatoes because they “look funny.” Thereby they may miss a wonderful taste sensation. All of this may seem obvious, but it is often overlooked in the physiology of nutrition. The body begins to respond immediately when food is placed within the visual field. If the food itself or the surroundings within which it is presented are unappealing, then actual digestion and assimilation of the blood will be impaired. This is crazy to me. Some people have found a way to justify the fact that many Black people live in food swamps made possible by government policies and subsidies. morning routine.
I wake up at 5:30am every day, this is vital for me.
I read manifestations first thing then pick a word from the dictionary to learn - today I learned impresario.
drink 1 litre of plain filtered water.
I head downstairs and put water in the kettle for tea. while it’s boiling I use the washroom.
skincare is very simple. I wash my face with an organic olive oil bar soap and seal the water dripping off my face with shea butter.
I put on music that makes me smile, brew some green or orange pekoe in my tea pot and set it on my desk for the day. then get in my workout gear.
6:40 run + cooldown walk. I listen to tech podcasts while running and watch documentaries dubbed in french while walking.
my friend rises a bit later than me so she likes to meet up for the last portion at around 7:10
I get back home at 7:30, drink another litre of water. refill my bottle, shower and put on my outfit + jewelry.
8:00 study time! I don’t get hungry until lunch.

Salad component
Mmmmk so this FAA program is working don’t get me wrong, but the salad component (must eat 8 Oz of raw veggies or salad with lunch and dinner daily) is really not working out. I either don’t finish them or I skip making it entirely.
I told my sponsor about it and she was just kind of like “this sounds deeper than salad, are you resenting program or frustrated in other areas and taking it out on this one component” and I’m like uhhh yeah ya think! As sweet and helpful as she’s been I thought she’d offer a better solution than “we do it because it works, just eat it”. 😑 gee thanks
Meanwhile I’ve got my little one, my work and my household responsibilities that are just not panning out to the level that I want because “program” is sucking up a lot of time. Also I thought it was cheaper to do this program but honestly it’s about the same because I have to take more trips to the grocery store than before and to multiple locations looking for a good deal on produce or decent quality.
*heavy sigh*
I mean they are right program works but at this cost?! I feel like I obsess more now over food choices because of the restrictions and timing of things that honesty as more days go by I really don’t know about their strictness being right for me.
Thinking of my “why”, I wanted to get the scale and measuring tape to work in my favor (lol) and I wanted good balance all around health wise. They emphasize self reflection and a spiritual connection “to your higher power” and that’s cool. Buuuut the more willing I was to follow the strict guidelines the more other things fell by the wayside. And I don’t feel like if I were off of program everything I’d learned and adopted would go away, I still enjoy not having sugar and flour, and not snacking all the time, the discipline I expressed through 2.5 years in the gym disciplines me in other areas including this one. Put another way, I didn’t run on the treadmill very often and I’m still thriving cardiovascularly and physically.
Idk, someone want to convince me of why I should stick with it or offer some raw veggie “salad” options...doesn’t have to include lettuce, just no sugar no flour and no meat or dairy.

I wasn’t planning to make anything fancy initially but then I realised I still had pink dragon fruit and I didn’t want it to go bad so I made bubble tea again. Vegetables hash 1/2 cup chopped onion 1/2 cup chopped red bell pepper 3 cloves garlic, minced 1 tsp chili powder 11/2 water cups 4-5 potatoes chopped 11/2 cups sweet corn 1-2 zucchini sliced 1 tomatoes chopped Fresh herbs such a basil, dill, parsley and/or thyme Sea salt and black pepper In a large skillet cook onion, bell pepper, garlic and chili powder over medium 3-4 minutes, stirring occasionally and adding water, add potatoes and water. Cover and cook 10-15 minutes. I love eating raw. Fueling up on pure nutrition. Raw green asparagus is super nutritious and filled with vitamin C and folic acid for example. Here’s a recipe idea for you that captures the taste of spring 🌱 Asparagus Strawberry Salad with buck wheat For 2 plates you’ll roughly need 150g green asparagus 250g strawberries 150g buckwheat, soaked over night 2 big handfuls of spinach 2 tbsp Olive oil 4 tbspApple cider vinegar Salt&pepper black cumin Rinse the buckwheat after soaking it over night. Cut the asparagus into small pieces, chopping off the wooden part on the bottom. Cut the strawberries, add the buckwheat, a couple of tablespoons of olive oil and a few more of apple cider vinegar and salt and pepper to taste. Serve the salad on a bed of spinach and top with black cumin. MIDDLE EASTERN BOWL ✨ This really hit the spot for lunch! A bowl filled with plant goodness 🌱 Parsley salad, quick pickled red onion, baked gluten free falafels, babaghanoush, black garlic hummus and pita bread (for my mums plate) Everything homemade and supper yummy! (Except for the pita bread) Falafel recipe: 2 cups of dry soaked chickpeas Big handful of fresh parsley 2 cloves of garlic 1/2 white onion Big handful of fresh cilantro 1tbsp of cumin 1/2 tbsp of paprika Salt and pepper to taste Juice of a lemon 2tbsp of olive oil 1/4 cup chickpea flour Preheat oven to 200 C. In a food processor add your chickpeas onions and garlic ( I like to add this things first, if you add everything together there’s a big chance it would not fit in your food processor and it might get a bit messy) blend this until it’s all chopped up (not mushy!!) then add the rest of the spices and herbs, olive oil and lemon juice, blend it all up again and then start adding the chickpea flour, add this little by little until you have the right consistency, if yours it’s way too sticky then add a bit more flour. transfer the mixture into a bowl and make them into balls by rolling them in your hands, then placed them on a lined baking sheet and bake in the oven for about 30 minutes (I like to flip them halfway in) This makes a lot of falafels so you will have loads of leftover to eat with your salads,wraps, sandwiches , Buddha bowls or just as a yummy high protein snack to eat with some hummus 😋 • • #vegan #veganism #veganfoodshare #whatveganseat #plantbased #falafel #wholefoods #vegetarian #veganfood #superfood #running #organic #govegan #wellness #healthy #crueltyfree #rawvegan #bestofvegan #plantstrong #glutenfree #dairyfree #guthealth #lonijane #buddhabowl #middleeasternfood #mediterraneanfood #plantoverprocessed #foodphotography #runner #vegansofspain https://www.instagram.com/p/CEwl3WFqDzn/?igshid=1wy985sbl5k88
