Fall is here and I've been super busy with the new job and winterizing the house. I've been stressed so i wanted to turn to a green tea since they help to relax me and refocus.
While searching for the next tea to evaluate, I came across Tiesta Tea's Pineapple Blues green. Once the package was opened and the kitchen instantly smelled of candied fruit and malt, I had to give it a go.

I’ve not been feeling great recently so I thought I’d give myself a boost by cooking something on the barbecue. I opted for a Boston Butt from @johndavidsons this time. It arrived frozen and took a day and a half to defrost! I then trimmed off some of the fat (there was a MASSIVE fat cap) and dusted it in @angusandoink Porky White Chick. In the morning, before putting it on the barbecue I put a layer of Sweet Bones and Butts on it too. I set my @weberuk 57 kettle up with a 2x1 snake using @weberuk briquettes and some @smokewood_shack wood chunks. Later, when I struggled to get to the temperature I wanted, I realised that I should probably have gone 2x2 instead because it was so cold and windy out! I spritzed the pork every hour with a mixture of chicken stock and @aspalluk apple cider vinegar to help form a nice bark. After 5 hours, I put the pork in a tin with some beef stock, wrapped with foil and finished in the oven. 3 hours later it probed with my @inkbird_uk at 205°F and was ready to come off and rest. Another 2 hours later it was time to pull it and it was perfect. Carnitas de puerco ahumadas. Esta semana usted debe comer con propiedad y elegancia, y para eso le tengo preparadas unas carnitas de puerco. Pero no son cualquier tipo de carnitas, no; las mías las preparo con cabeza de lomo previamente sazonada con sal, azúcar y especias y luego la someto a un tratamiento de humo de cerezo durante una hora y media. De ahí la pieza se va a la vaporera y se termina de cocer. El resultado es una carne jugosa, elegantemente ahumada, con tonos dulces, salados y especiados. Va desmenusada y lista para servirse en tacos. A mí me gustan en tortilla de harina con una salsa de aguacate -o verde- y una picadura de cebolla y cilantro crudos. Con tortilla de maíz también queda de putamadre y le va perfecto un vaso de vino blanco o una cerveza clara. Marque -MAÑANA, porque hoy la ciudad está destruida por el paso del huracán y todo está paralizado- al (81) 1957-7070 y pídales a Chela o a Michelle que le separen su orden (además de los otros guisos que tenemos, claro). La bolsa es de medio kilo y viene con otra bolsa de frijoles, una de tortillas de harina crudas y su salsa correspondiente y cuesta #240. Alcanza más o menos para 4 personas.
