Comforting Broccoli Cheese Soup
I’m not sure if there’s a specific reason besides *gestures at everything*, but I’m desperate for comforting things right now. I made one of my favorite soups earlier this week, and then I made another old favorite. Broccoli cheese soup.
One of the great things about soup is how flexible it is, and this recipe is especially so. All the veggies can be fresh or frozen. Don’t like mushrooms? Leave ‘em out. Prefer different cheeses? Switch ‘em up. Can’t handle any heat? Leave out the cayenne. Don’t like all the spices, or aren’t sure about them in this context? Whatever, follow your heart. The only measurements I’d reconsider messing with are for the roux. Stick to (don’t do this, I didn’t calculate parts right in my head, but do stick to the ratios in the actual recipe) 1 part each butter and flour to 4 parts half and half or cream.
1 tablespoon butter
3/4 cup diced onions
1 cup shredded carrots
1/2 cup diced celery
1/2 cup sliced mushrooms
1 teaspoon minced garlic (about two cloves)
2 cups broccoli tops
1/4 teaspoon garlic powder
1/4 teaspoon basil
Dash each cayenne, allspice, and nutmeg
Salt and pepper to taste
2 - 3 cups chicken (or vegetable) broth (or water and Better than Bouillon)
3 tablespoons butter
3 tablespoons flour
1 cup half and half
1 heaping cup of shredded gouda
1/2 heaping cup of shredded cheddar
In a large pot, melt the butter over medium low heat and add the onions, carrots, celery, and mushrooms. Cook until beginning to soften and the onions are turning translucent, then add the garlic. Stir and cook until fragrant, just a few moments, then add the broccoli and seasoning.
Add just enough broth to almost cover. It’s ok if there’s broccoli sticking out. Bring to a simmer and cover the pot. Allow to simmer until the veggies are tender.
When the veggies are almost ready (10 to 15 minutes), in a small pot over medium low heat melt the butter, then whisk in the flour. Allow to cook a few moments, long enough to cook off the raw flour taste, not long enough for it to brown. It should be a soft golden color. Add the half and half, whisking, and allow to cook until thickened. It’ll happen pretty fast.
Once the roux is thick, remove the lid from the big pot and pour the roux in. Stir until smooth and allow to come back to a simmer and thicken.
When the soup is bubbling again and thickened up a bit, add the cheese and stir until it’s all melted and smooth, then turn off the heat and serve.
