My world famous brownie recipe (alright two countries love it but they’re in different continents it counts)
1 cup flour (130g)
1 tsp baking powder
1 tsp salt
1 cup unsalted butter (230g)
2 1/4 cups sugar (450g)
5 eggs
roughly 3/4 cup dutch processed coco powder (110g) the dutch processed is important as this process has less acidity & will affect the taste)
1 tbsp vanilla
300g chocolate chips idc what type you use it’s up to you hell put butterscotch in there for all i care
1. Mix the flour, baking powder, & salt in a bowl set aside
2. boil the shit out of the butter & sugar. it should come together to make a kind of airy bubbly mixture when it’s at that point pull off the heat & let sit 5-10 minutes. This process will help ensure you get that nice flaky top
3. add eggs & coco to a mixer with the whisk attachment & whisk till it’s all together (idk exactly what this does i saw it on a few recipes & took it. i imagine it does something to the texture as well as makes the eggs less likely to scramble if you add the melted butter sugar in too soon)
4. slowly pour or spoon in the butter sugar mixture to the egg mixture. whisk on medium until the bottom of the bowl is no longer warm. scrape down the sides then add vanilla & mix
5. add in flour & mix till just combined scrape down the sides again & mix more
6. fold in chocolate chips by hand
7. pour into a 9x13 & bake for 30-35 minutes
(if you wanna have fun with it freeze a sheet of nutella before you start baking then sandwhich it between two layers of brownie batter then bake it)

Ingriedients:
262 Grams Butter
275 Grams Dark Chocolate
525 Grams Muscavado sugar (it's this weird fancy uber dark sugar but it completly chnages the brownie, dont skip/ replace with normal sugar or it will turn too sweet! you'll only find it in rich people super markets tho :/)
6 eggs
180 Grams Flour
Don't stress about not having a gram scale, a table spoon is 17 grams and a cup is about 240 grams, don't stress about being uber precise, leave those worries for when you make pastries
Steps:
1) melt the butter and chocolate together
2) mix the sugar and eggs together in a big bowl
3) mix these two mixtures in the large bowl together
4) add the flour and mix
5) put in the oven and bake at 155 C/ 311 F until the toothpick/fork come clean (typically takes 30 min)
6) serve with vanilla ice cream
this isthe best brownie recepie on earth, very moist, once i forgot a slice in the cuboard for a month and it was still moist when i cut into it (this is due to the Muscavado sugar)
also mind you this was originallly a recepie for a resturant filled with people so i had to divide thwe ingridients by 4 which is why we got some weird numbers

Ingredients:
•5 tablespoons unsalted butter
•1 1/4 cups granulated ((regualr)) sugar
•2 large eggs + 1 egg yolk ((cold))
•1 teaspoon vanilla extract
•1/3 cup vegetable oil
•3/4 cup unsweetened cocoa powder
•1/2 cup all purpose flour
•1/8 teaspoon baking soda
•1 tablespoon cornstarch
•1/4 teaspoon salt
•3/4 cup semisweet chocolate chips
Directions:
Preheat oven to 325°F. Use a squared pan ((preferred 8 by 8-inches)) and spray with nonstick cooking spray
In a microwave safe bowl, add the butter and sugar. Microwave for about 1 minute. Whisk in the eggs, egg yolk, and vanilla. Then stir in the vegetable oil and cocoa powder.
With a rubber spatula, stir in the flour, baking soda, cornstarch, and salt until completely combined. Stir in the chocolate chips.
Spread the brownie batter evenly into the prepared pan. Place in oven and bake for 30 minutes, or until the brownies are set and a cake tester inserted has moist crumbs attached. Do not over cook, it won't be good and chewy. Let it cool before cutting and serving

RED VELVET BROWNIES
Ingredients
BROWNIES
1 (4-oz.) bittersweet chocolate baking bar, chopped
3/4 cup (6 oz.) salted butter
1 1/2 cups granulated sugar
4 large eggs
1 1/4 cups cups (about 5 3/8 oz.) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon table salt
1 (1-oz.) bottle red liquid food coloring
2 teaspoons vanilla extract
CREAM CHEESE FROSTING
 (8-oz.) pkg. cream cheese, softened
1/2 cup (4 oz.) salted butter, softened
6 cups (about 24 oz.) powdered sugar
2 teaspoons vanilla extract
Directions
Prepare the Brownies: Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease (with cooking spray) foil.
Microwave chocolate and butter in a large microwavable bowl on HIGH until melted and smooth, 1 1/2 to 2 minutes, stirring at 30-second intervals. Whisk in sugar; add eggs, 1 at a time, whisking just until blended after each addition.
Whisk together flour, baking powder, and salt in a medium bowl. Gently stir flour mixture, food coloring, and vanilla into chocolate mixture, stirring just until well incorporated.
Pour batter into prepared pan. Bake in preheated oven until a wooden pick inserted in center comes out with a few moist crumbs, 25 to 30 minutes. Transfer to a wire rack, and let cool completely, about 2 hours.
While Brownies cool, prepare the Cream Cheese Frosting: Beat cream cheese and softened butter in bowl of a heavy-duty stand mixer fitted with paddle attachment on medium speed until creamy. Reduce speed to low, and gradually beat in powdered sugar until blended. Beat in vanilla. Increase speed to medium-high, and beat until light and fluffy, about 1 to 2 minutes. Cut brownies into squares. Using a piping bag fitted with a large star tip, pipe frosting on top of brownies. Or spread frosting over brownies.

best brownies in the known universe (at least, according to my grandma)
some year and a half ago when i was getting ready to move out i combed through all the family recipes that lay lost to time and one of the ones that i found was my grandmas brownie recipe. idk where she got it from (nor can i ask cause she has dementia) and its a printed out email she sent to my mom in june 2000. but by george these the best brownies i have ever tasted. would she be pleased that i am sharing this recipe with my vast following? absolutely.
YOU WILL NEED:
5 tablespoons butter (unsalted) 1 ounce unsweetened baking chocolate (or as much as your heart desires) 2/3 cup unsweetened good cocoa powder 1 cup sugar (white) (superfine preferred, normal works fine) 1 cup sifted white flour (can use gluten free) 1/2 teaspoon baking powder as much cinnamon as your heart desires (your heart needs to desire at least some cinnamon. its essential to the recipe) 3 egg whites 1 egg splash of vanilla extract (again, non negotiable step!)
preheat your oven to 325 degrees. grease a square baking pan (9x9 preferably).
in a small saucepan over medium heat melt the butter and baking chocolate. while that is melting, sift together the flour, baking powder and cinnamon into a small bowl. once the butter and chocolate is done melting add the cocoa powder and cook it together for 1 minute. add in the sugar and stir. it will get very thick. this is correct.
set that aside to cool. while thats cooling take a large bowl and put in your egg whites, egg and vanilla. beat it up with preferably a whisk but you can use a fork if youre fresh out of whisks. once the chocolate is cool enough to not scramble your eggs dump it in the eggs and mix it together. add the flour in gradually and keep mixing until its smooth and happy.
spread into your greased baking pan. put it in the oven for EXACLTLY 18 MINUTES. very crucial step. they will come out slightly under done. that is what we want. as they cool they will continue to cook in the pan. we dont want them to get hard and sad. they are not good when they are hard and sad. do not overbake them. you will be sad.
slice them up and as the official last step on the original recipe says: EAT ENJOY AND MAKE MORE! (theyre very good with mint chocolate chip ice cream)
