How to make Punjabi Chole? | Five Element "Food from Heaven" | Best Online Organic Store

This classic North Indian-style dish, sometimes referred to as Chole Masala or Chana Masala in Punjab, is cooked with white chickpeas, freshly ground spices, onions, tomatoes, and herbs. Chickpeas is a legume that is relished all over India and are referred to as chole in Punjabi, chana in Hindi, and Konda kadalai in Tamil.
It is always preferable to soak the chickpeas overnight or for at least 8 hours before making any kind of chickpea curry, as doing so makes the legume simpler to prepare. Additionally, soaking chickpeas lowers the phytic acid content, which is what causes bloating and flatulence.
Few simple steps to make up this simple chole masala.
Rinse 1 cup of white chickpeas several times in clean water. Then soak them in 3 cups of water for 8 to 9 hours or overnight. After they've soaked, drain the water completely and give the chickpeas another thorough rinsing in fresh water a few times. 
Add the chickpeas to a 3-liter stovetop pressure cooker. Including 2.5 to 3 cups of water and Season with ½ teaspoon salt. Stir very well. Pressure cook the chickpeas for 12 to 15 whistles on medium heat. The chickpeas must be thoroughly cooked and made soft enough to mash with a spoon.
To make chole masala powder:
Add all the whole spices for the chole masala to a pan. Begin to roast them on low heat. The spices used for masala are the following:
2 cardamom
I inch cinnamon
3 to 4 pepper corns
1 medium sized Indian bay leaf
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 to 2 dry red chilli
The spices should be roasted until they are extra browned but not burned, keep stirring frequently. Even when they start to smell good, keep cooking them since they need to be brown more than usual. Let these roasted spices cool and then grind or powder them finely.
In a pan or kadai, heat 1.5 to 2 teaspoons of oil. Add 1/2 teaspoon of the ginger-garlic paste and cook for a few seconds to get rid of the raw aroma. Then add ⅓ cup finely chopped onions. Sauté stirring often till the onions soften and turn translucent or light brown. Add ½ cup finely chopped tomatoes. Sauté the tomatoes often until they soften and the oil starts to leave the sides of the onion-tomato mixture. Reduce the heat.
Then add all of the powdered spices together with ½ teaspoon red chili powder and ¼ teaspoon turmeric powder.
Mix very well. Then add 2 to 3 slit green chilies to the onion-tomato masala mixture. Add the cooked and drained chickpeas. Stir and mix very well, season with salt as per requirement. Mix again.
Cover and simmer on low to medium heat for a thinner gravy. The gravy will thicken and diminish if you cook chickpeas without a lid.
Garnish with chopped onions and coriander leaves, Serve the Punjabi chole with fried Indian bread like bhatura or poori, together with a side of sliced onions.

"Chole Bhature" recipe:-
 Bhature Ingredients
Maida - 500 gms.
100 ms. rawa (sooji) (optional)
Cured - 100 gm. (1/2 cup)
3/4 tea spoon salt.
Sugar - 1/2 tea spoon.
1 tea spoon baking powder.
To fry, use oil.
Ingredients for Chana Masala
Kabuli Chana - 1 bowl (150 gms).
Baking soda - 1/4 tea spoon.
1 tea bag (if you don't have a tea bag, wrap some tea onto a white handkerchief)
3-4 tomatoes
3-4 green chilies
Ginger, cut into 1 inch pieces.
Refined oil - 2 table spoon.
Cumin seeds - 1/2 tea spoon.
Anar dana - 1/2 tea spoon.
1 tea spoon coriander powder.
Red chilli powder - 1/2 tea spoon.
1/2 tea spoon garam masala.
Season with salt to taste.
1/2 tea spoon coriander leaves (chopped)

so this could a personal question and i completely understand if you dont want to answer but i saw that you said you married an indian guy and i just wanted to know what is some of your favourite indian things to eat/make and are some foods you dislike?
for me growing up and now, bitter gourd and lady fingers and okra. i HATED when my mum used to make it but i loved when she made papdi no lot even now when i see her she packs extra for me to take home.
so my experience is colored slightly bc my husband’s family are from gujarat, i’m not sure where your family/home cuisine is or if you’re familiar with gujarati cuisine (i’m assuming you are because of the papdi no lot?)
but stuff i make regularly and eapecially enjoy are: khichdi with khadi (the one i make at home is a masala khichdi), chole, bhartika nu shaak (or bateta nu shaak depending on your dialect), and pav bhaji (that one isn’t super guju but it’s good haha). i can also make some restaurant/punjabi style stuff like saag paneer or khadai paneer, or the big chicken dishes (makhani or butter chicken). when i cook this kind of stuff the fam also likes me to make papad and onion salad and the fixings (but not attanu i’m too scared to try that so i have to rely on storebought or my MIL if she’s made it recently)
i also never used to like okra but my MIL makes a really good dry fried kind with spices inside? it’s hard to learn to cook from her because it’s not like a recipe or anything, she just knows how much to add to things, and that’s one i’ve never been able to recreate properly 😭 when i do it the texture is always awful. i also like her pani puri and dal bhaat but i’ve never tried to make those myself for some reason. and i can make bhakri but i can’t roll them out the right way to satisfy her rip
honestly the only things i really don’t like are the desserts, they are all way too sweet for me. i also don’t really like idli bc the texture is just not good to me. but most stuff i will eat or at least i’m willing to try, even stuff his family don’t think i’ll like (the first time i ate mag and also papdi no lot the faces were like 😮)

I like to think that Marissa's favourite Indian food would be Chole Bhature... I mean look at that material *chef's kiss* 🤌🏼🤌🏼🤌🏼 She definitely does cook for them and she is a decent cook so yeah, she's good 😁 I mean growing up, her mother used to make Indian delicacies from time to time or sometimes the family used to go to local Indian restaurants in Queens, so she definitely acquired the taste and learned to cook some of it!!!
Okay I never thought that much in detail what Ethan's favourite Indian food would be but I think he can handle anything that has less spice to it. Fun fact, of course Marissa is better in tolerating spicy food than Ethan so when that man says that he can handle the spice (I'm referring to hangover scene) ugh nahh but Marissa is better at it 😌 Thinking about it, maybe something fried... you know with cholesterol 😂 I think he will love pani puris/golgappas or samosas! What do you think he will love? Ohhhh Ethan has also learned some recipes from her mother so he also sometimes cooks for her <3
