Homeless and unemployed men, guests of Urbain Ledoux, aka "Mr. Zero," enjoy a Christmas Day meal of mulligan stew at his haven for the needy called "The Tub," at 33 St. Mark's Place in 1931. The stew, made of turkey, chicken, goose and squab, was enjoyed by nearly 5,000 guests.

Άστρα στη Γάστρα

Συνεχίζουμε με τις απόκρυφες συνταγές που βρίσκουμε κάθε χρόνο τέτοιες μέρες στο ξεφύλλισμα του βιβλίου της Μεταφυσικής γΑΣΤΡΟνομίας του τόπου μας. Θα αφήσουμε τις αστικές γαστριμαργικές προτάσεις και θα ανηφορίσουμε προς το βουνό των Κενταύρων αναζητώντας εκείνες τις ρουστίκ γεύσεις, που έχουν την τάση να συνδέουν τις παγανιστικές δοξασίες του χειμερινού ηλιοστασίου με την ιουδαιο-χριστιανική παραβολή της Γέννησης του θείου βρέφους καταμεσής του ρωμαϊκού χειμώνα. Σήμερα, παρουσιάζουμε ένα από τα κλασικότερα πηλιορείτικα εδέσματα, που κοσμεί το γιορτινό οικογενειακό τραπέζι τη μέρα των Χριστουγέ��νων και έχει τις ρίζες του σε μια τοπική λαϊκή παράδοση, η οποία αρέσκεται να μπερδεύει γλυκά ετερογενή θρησκευτικο-πολιτιστικά στοιχεία.

Όσοι έχουν περάσει τις μεγαλύτερες νύχτες του χρόνου σε αυτό το μαγεμένο βουνό, έχουν να θυμούνται τη γάστρα με τα σιγοβρασμένα άστρα κάτω από το φως των κεριών στο κέντρο του χωριάτικου χριστουγεννιάτικου τραπεζιού.

Υλικά (για το τέλος των εορτών)

2 οκάδες γιορτινής θαλπωρής (ξεχορταριασμένη και εξωραϊσμένη, τυλιγμένη σε χρυσόχαρτα, από το εναπομείναν παλαιοπωλείο του χωριού)

½ κόκκινη εμαγιέ κούπα τριμμένο χριστουγεννιάτικο ψωμί

πολτός σεληνόριζας (από το Πλιασίδι λένε ότι πιάνεις Σελήνη)

ζωμός από 1 βρασμένο καλικάντζαρο (ή gremlin) που πιάστηκε στα πράσα του μπαξέ.

Για τα άστρα

1½ οκά άστρα, ολόκληρα με τη φλόγα τους, κομμένα σε στρογγυλές απαστράπτουσες φέτες

λίγα στρέμματα ονειροπόλου ορίζοντα, κατά προτίμηση νυχτερινού, φωτισμένου από τα πορτοκαλόχρωμα φώτα του χιονισμένου επαρχιακού δικτύου

1 φλιτζ. τσαγιού μαύρο θαλασσινό νερό από επίνεια στολισμένα με λάμπες θυέλλης ή εναλλακτικά άκραντο νερό από το τάισμα της βρύσης της κεντρικής πλατείας

1 φλιτζ. τσαγιού ξερά κλαδιά από καμπαναριά και μαγικά βοτάνια Πηλίου

αλάτι από δάκρυα χαράς και πολύχρωμα πιπέρια.

Εκτέλεση Βυθίζουμε τα παχιά κομμάτια θαλπωρής στους χυμούς της σελήνης και του καλικάντζαρου, τα ανακατεύουμε και τα αφήνουμε να μαριναριστούν για 3 με 4 ώρες. Σε ένα μεγάλο δοχείο αδειάζουμε τα σπασμένα άστρα μαζί με όνειρα, τα μαύρα νερά και τα μαγικά βοτάνια. Ανακατεύουμε καλά με τα χέρια μας, αλλά προσέχουμε να μην πληγωθούμε. Τα σπασμένα όνειρα χαράζουν και κόβουν φλέβες. Πρέπει να κλαίμε από χαρά που βρισκόμαστε πάλι όλοι μαζί. Τα πιπεράτα νέα είναι καλοδεχούμενα. Ανάβουμε τον πετρόχτιστο φούρνο με τα εκκλησιαστικά ξερόκλαδα. Τοποθετούμε τη μαριναρισμένη κυκλοθυμία των εορτών και τα άστρα στην κεραμική γάστρα. Πασπαλίζουμε τα άστρα με το ευλογημένο ψωμί. Αφήνουμε τη γάστρα στα έγκατα του φούρνου για μιάμιση περίπου ώρα. Σερβίρουμε τις μερίδες στο μεγάλο τραπέζι με υποχρεωτικό χαμόγελο.

Για το τέλος, ας σταθούμε για λίγο στο πόσο βαρύ είναι το συγκεκριμένο έδεσμα, ιδιαίτερα για όλα τα στομάχια των θνητών που έχουν ήδη καταταλαιπωρηθεί από την ασήκωτη κι αχώνευτη καθημερινότητα του παλαιού χρόνου. Για όλους εμάς λοιπόν, που καταφέραμε να περάσουμε το κατώφλι του νέου, τραυματισμένοι ή αποκαμωμένοι, προτείνεται να απολαύσουμε την τοπική αυτή σπεσιαλιτέ μαζί με τυποποιημένα αμερικανικά αναψυκτικά τύπου κόλα, πλούσια σε στοιχεία αεριούχας ελπίδας. Άλλωστε, κι αυτή τη χρονιά, θα συνεχίσουμε να υπάρχουμε ακούγοντας την ίδια εσωτερική φωνή που μας κάνει να ελπίζουμε για έναν καλύτερο κόσμο, έστω κι αν αυτός έχει ήδη αργήσει ασυγχώρητα.

Page 11. --- YULE CHEER IN PEN AND PRISON ---- SPECIAL FARE AT NEW WESTMINSTER AND OAKALLA CONCERT PARTIES TO BRING NOTE OF SEASON'S GAIETY --- The spirit of Christmas will be present inside the grim grey walls of the B. C. penitemtiary and Oakalla prison from Dec. 25, when special menus will provide a welcome change of diet and the inmates will enjoy relaxation from the stem discipline maintained in both institutions.

There will be special Church services by the prison Chaplains Sunday and entertainments for the inmate on Monday afternoon. Similar arrangements have been made for New Year's Day and the Monday following.

Following out the policies of Col. H. W. Cooper, warden of the B. C penitentiary, New Westminster, and Walter Owen, warden of Oakalla, Burnaby, efforts toward humanizing the inmates now held behind steel bars will be increased.

Roast pork, raised on the prison farms, will replace the festive turkey but the traditional plum pudding, fruit and nuts will recall better times spent outside. Practically all the eatables have been produced on the farms and all cooking will be done inside the prison.

Me and my mom attended to a church Christmas meal despite us being atheists. I like these community gatherings ‘cause there’s a change to meet new people and have interesting conversations. This time we sat at the same table with the priest and it so happened that there was an old lady sitting next to me who knew this priest. I knew him from Christmas meals from previous years, but I had never seen the woman before. Both of them were pleasant company; kind and smart and just nice to talk with. “Christmas Enjoyed At the Penitentiaries,” Kingston Whig-Standard. December 27, 1932. Page 2. ---- Concert Was Given at Collins Bay Institution on Monday ---- Christmas was thoroughly enjoyed by the Inmates of Collins Bay Penitentiary.

Religious service were held by the chaplains, Rev. A. Z. Smart, and Rev. Father Brady. His Lordship Bishop Lyon participated in the Protestant service on Christmas Day and Rev. Mr. Smart dedicated a set of communion silver at the service on Monday morning. The menu was particularly tempting Christmas Day and every man in the Institution did full justice to the special treats provided. A radio set had been installed in the mess hall, where the inmates eat, and musical programs were enjoyed at intervals on Sunday and Monday.

The final and crowning treat came on Monday night when a dozen or more of the inmates provided a minstrel show for the entertainment of the others. The show was held in the nicely decorated chapel hall where a stage had been set up, and lasted from seven in the evening till nine. The men had been practicing for the past six weeks at odd times when routine allowed and they gave most creditable performance. It was enthusiastically received by the audience and encores were demanded for almost every number. Whatever the performers may have lacked in musical talent or histrionic ability, they made up in enthusiasm and good nature. The black face comedians put their jokes over in fine style and won the hearty appreciation of the inmates as well as of the warden and officers of the Institution with their good-natured jibes at the authorities. Songs, violin selections, step dances, mouth organ selections, orchestra numbers, and choruses all added variety to the entertainment. The Instruments used were loaned by officers of the penitentiary and the music was procured with the assistance of the chaplains.

Warden Allen addressed the men after the concert and told them that the Collins Bay Penitentiary authorities appreciated the good behaviour that had been manifest throughout the Christmas festivities. He promised another treat at New Years. His remarks were heartily cheered. Rev. Esther Brady also spoke in appreciation of the fine concert that had been put on and said that he had been authorised to Intimate that the good behaviour and whole-hearted cooperation shown this Christmas might in the future lead to other gatherings of a similar nature at more frequent Intervals than had been the case in the past. Deafening cheers greeted these remarks. One of the performers spoke on behalf of the Inmates and after he had voiced their thanks for the consideration shown, he said that it was well known that the warden had a fine voice and the men would like to hear him sing. Warden Allen compiled and earned hearty cheers. Cheers for the warden, Deputy Warden Harroway, and the officers of the Institution completed the entertainment. The men filed out to the mess hall where they smoked a cigaret and listened to the radio for ten minutes and then retired to bed.

No concert was held at Kingston Penitentiary but the inmates enjoyed the special menu and the radio programs which came in on Christmas Day and Monday.
