This matcha cookie recipe is bonkers. It uses peanut butter of all things to enhance the matcha flavor and, bafflingly, it fucking works. I believe it's paywalled (but if you go find the video on YouTube and click through there it might let you in) so I screenshotted it from my dinky recipe app. I haven't made the frosting and tbh I might not, they are delicious enough

A little late for the holidays but here! I can't really fit in a page this week so have cookies instead.
Recipe written by @venseyness, transcribed under the cut.
BRIOCHE'S CHIP COOKIES
280g all-purpose flour
5g baking soda
5g salt
225g softened butter
150g granulated sugar
150g brown sugar
10g vanilla extract
2g eggs
400g of STUFF (choc chips (Fair trade chocolate please!), nuts, peanut butter chips, butterscotch chips, go W I L D)
Prehead oven to 190C (Wait if chilling dough!)
Cream together butter and sugars in a large bowl until smooth, mix in vanilla, then eggs one at a time. (You can just use 300g sugar + 20g molasses!)
Sift together flour, baking soda, and salt in a medium bowl, then beat into the sugar mixture until no white streaks remain. The harder you mix, the chewier the cookie!
Fold in your chosen STUFF! (Chill in the fridge for best texture. I skip it! 3+ hr) Then, use a spoon to dollop ping-pong ball size blobs onto a greased baking sheet. (Or use parchment paper! Saves cleanup)
Bake for 9 to 11 minutes or until golden brown and smelling great. Cool and enjoy! (Great for ice cream sandwiches!)

A little late, maybe too late but what is promised is due, I already owed a biscuit recipe and what better time to prepare biscuits than Valentine's Day, well it's not strictly romantic but it's a nice gesture.
I call this recipe
"shy biscuits".
Butter 120g
Sugar 90g
Egg 1
Leavening flour 500g
Salt 1 Teaspoons

Notes in the margin:
- if you see the measurements are a bit strange, it is because they are approximations, I usually do it by eye.
-You can use milk or white chocolate chips, but I recommend dark chocolate as it enhances the flavour.
-Do not handle the dough because it makes the biscuits too hard.
-If you want to add nuts to the biscuits instead of chocolate, do it when they have been in the oven for a few minutes and it's time to bake them on top, otherwise the nuts will be over-toasted and almost impossible to chew (I'm serious, I almost knocked out a relative's tooth).
-It is not necessary to rest the dough and it is kept cold in the refrigerator.
-If you can't find leavening flour, you can add baking soda or yeast to make them rise.

As soon as I saw Hazel from the Monster Road-trip DLC I fell in love. So much so I wanted to try and make a cookie after them. I tried to weigh out the grams as I concocted these but the cups are more accurate. Feel free to try an make these. They’re a funky take on an oatmeal chocolate chip cookie with a dash of warm fall spices.
Recipe:
1 1/4c (320g) Applesauce
1/2c(113g) Butter
1c (240g) Brown Sugar
2c (272g) Flour
2c (160g) Quick Oats
1 Egg
1/2tsp Baking Soda
1/2tsp Salt
1tsp Cinnamon
1/2tsp Nutmeg
1/4tsp Cloves
1tsp Vanilla
1c (160g) Semi Sweet Chocolate
1c (120g) Chopped Hazelnuts
*toast Hazelnuts for extra flavor
In a bowl combine the applesauce and baking soda. In another bowl combine your softened butter, sugar, spices, and vanilla, beat until fluffy. Add your egg in to the butter mix, beat until combined. Then gradually add in your applesauce. Next mix in your oats, then the salt and flour. Once mixed fold in your nuts & chocolate.
Bake at 350 F/175 C for 10-12 minutes.

 100 g butter
40 g sugar
140 g flour
1 egg yolk
vanilla extract
jam of your choice
If you want to make more cookies make sure to
multiply the ingredients ♡

𝐌𝐚𝐤𝐢𝐧𝐠:

Add butter, sugar and an egg yolk to a bowl. Mix untill they form a paste. Add few drops of vanilla extract. Mix untill it's incorporated into the dough.
Add your flour and mix it well. At this point you should be able to knead the dough with your hands.
Place a sheet of baking paper onto a tray and start forming your cookies. Make a heart shape using your fingers and pipe on the jam (it's easier if the jam is smooth without any fruit chunks)
Bake them in a preheated oven at 170°C for 15 minutes.
