#creamy pasta

I had creamy pasta for dinner tonight. If I keep eating every day like this, I’m gonna end up being as fat as my dad always said I was.

My aunt’s dog is on heat. She has to wear a nappy inside. It’s not like a nappy you put on a human, but a special nappy for dogs: it has a hole for the tail and it has velcro straps so you can just pull it past her hind legs and then strap it on. You put a pad (one a human would use when they’re on their period; not some other form of pad) on the bottom of the nappy before you put it on, and thus you’re able to just put the nappy through the wash periodically and it’s fine.

In other news, I now know how to unwrap a pad.

Creamy Tomato and Spinach Pasta

  • ½ lb penne pasta
  • 1 small onion
  • 2 cloves garlic
  • 1 Tbsp olive oil
  • 15 oz can diced tomatoes
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • pinch red pepper flakes (optional)
  • ½ tsp salt
  • freshly cracked pepper to taste
  • 2 Tbsp tomato paste
  • 2 oz cream cheese
  • ¼ cup grated Parmesan
  • ½ 9 oz. bag fresh spinach

  1. Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender (7-10) minutes. Drain the pasta in a colander.
  2. While waiting for the pasta to cook, dice the onion and mince the garlic. Cook both in a large skillet with the olive oil over medium-low heat until softened and transparent (about 5 minutes).
  3. Add the diced tomatoes (with juices), oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic. Stir to combine. Add the tomato paste and a ½ cup of water to the skillet and stir until the tomato paste is dissolved into the sauce.
  4. Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet with the tomato sauce. Use a whisk to stir the sauce until the cream cheese has fully melted in and the sauce is creamy. Add half of the Parmesan to the skillet and whisk until it is melted in. Add the remainder of the parmesan and whisk until melted in again.
  5. Add the fresh spinach and gently stir it into the sauce until it has wilted (3-5 minutes). Add the pasta and stir until it is well coated in the creamy tomato sauce. Taste and adjust the salt and pepper as needed. Serve warm.

Tofu and Spinach pasta sauce

I was craving a creamy curry pasta sauce so I made this from what I had in the fridge:

100g extra firm tofu

Half an onion

About 8 cherry tomatoes

3 handfulls of spinach

Soya single cream

Smoked paprika

Garam Masala

Garlic powder

Curry seasoning mix (coriander, turmeric, fenugreek, jeera and black pepper)

Chili powder

I fried the tofu with salt, pepper, smoked paprika, Garam Masala and garlic powder in olive oil adding diced onion first, tomatoes and chopped spinach later in the process. Then added the cream and more and rest of the spices as was needed. Also because I didn’t have the whole bottle of cream and it wasn’t quite enough I added some cashew milk into the mix.

Then I enjoyed it with some wholegrain spaghetti and rucola. Mmmmm
