Ingredients
2 croissants
1 tbsp salted butter
1 tbsp honey
60g burrata
Balsamic glaze
1 tbsp pistachios, chopped
4 slices Mortadella
Method
Flatten your croissants fully with a rolling pin.
Melt 1 tbsp of butter in a pan in medium heat. Place two croissants in the pan and flatten with the back of a spatula.

My theory as to why there are suddenly so many novelty croissant stores is that
1.) As far as pastries go, croissants are easier to make/mass produce.
2.) Even thoguh they're not complicated they ARE labour intensive.
3.) They always look good or at least somewhat appetising, so they're easy to market.
So as a business model they make sense as a common luxury to sell

Café Nido, 2810 Hyperion Ave, Los Angeles (Silver Lake), CA 90027
Café Nido is easy to miss since the entrance is from the parking lot and it’s surrounded by tall walls with no windows. It’s a beautiful, open courtyard café with a French mini van parked inside filled with books that you can read or buy. It looks like it used to be a nightclub/bar and the shelves still hold lots of bottles of hard alcohol.
There is no kitchen but they will make cold croissant sandwiches and toast with butter, jam, or honey. The pastries (cookies, croissants) are not made in-house but they did choose a good bakery. For drinks, they use Counter Culture coffee beans for hot and cold espresso drinks and cold brew. They also have tea and juice.
Fontal & Calabrese sandwich ($12) had slices of fontal cheese and three slices of Calabrese (salami) and that’s it. I found the lack of effort they put into making the sandwiches pretty discouraging. But the butter croissant was nice and flaky and the cheese and Calabrese were also good quality.
Cold brew coffee ($4.50): seemed fine
The vibe is laid back but a lot of seats are uncomfortable and there are so many flies. Also, parking is tough to find. They have a parking lot but it only has six spaces.
