We felt so festive and peaceful making these wintery gingerbread biscuits this afternoon. Cosima and I plan to make a gingerbread house this Christmas, so we needed to test out some gingerbread and royal icing recipes. The ones we tried worked really well (despite my making the gingerbread dairy free) so I’m excited to give the house a go in a couple of weeks’ time! I’ve never piped royal icing before so it’s a bit rough and ready but hopefully I’ll improve with practice!

Paradise Bakery Sugar Cookie
1 cup granulated sugar
1 cup powdered sugar
2 cups shortening
¾ tsp. vanilla
1 large egg, beaten
4⅓ cups cake flour
¾ tsp. baking soda
¾ tsp. baking powder
¼ tsp. salt
plain or colored sugar, for decorating
Heat oven to 375 degrees.
In a medium bowl, cream together sugars and shortening using an electric mixer. Mix on slow speed 30 seconds, then scrape down the bowl with a spatula. Increase speed to medium and mix for 3 minutes.
Slowly add vanilla and beaten egg while mixing.
In a separate bowl, combine cake flour, baking soda, baking powder and salt. Gradually add the flour mixture to the creamed mixture, mixing on slow speed until just blended. Do not over mix. Scoop with an ice cream scoop and roll in sugar. Place on baking sheet. Flatten slightly with palm of hand.
Bake 9 to 10 minutes.
Cookies are done when small cracks appear and are pale golden. Ideally, do not let edges brown. Makes about 3 dozen cookies.

1. Preheat oven to 160°C (320 F)
2. Mix 110g cake flour, 20g potato starch and a pinch of salt in bowl
3. Mix 40g beet sugar syrup, 10g honey and 30g vegetable oil in a small bowl
4. Once thoroughly mixed, spread between parchment paper and roll out with rolling pin
5. Use a bear cookie cutter to cut out the shapes
6. Draw the face (we used a nail dot pen), place the almond and have the bears hug them tight
7. Use leftover dough to make the tails
8. Bake for 10 minutes. Reduce heat to 150°C (300 F) and bake for an additional 10 minutes
9. Take out of the oven and they’re done!

Happy Easter, friends!
Made some lovely dairy free Easter cookies with Cosima. She got very good at delicately removing the cookie dough from the stamps and flopping them onto the baking trays, this was a fun activity (and yummy too!)
Used Nigella’s cut out cookie recipe but substituted Flora plant butter. I’ve used coconut oil in the past and preferred it with that, to be honest.
