Applejack - nonbinary butch lesbian :) definitely "my gender is butch" vibes yknow. she bakes a lot with pinkie! mostly fruit(/apple) pies and tarts but anything else too. shes pretty good at it and they have a lot of fun

pear butter: bi trans demigirl. i think she can dance pretty well and also made her own clothes sometimes

tree hugger: trans lesbian. i dont know why but i feel like shes a physical therapist at least part time. maybe i just have pt on the brain bc i need to do mine but like listen. pt massages at the very least

rarity: trans bi. this is extremely random but i think she gets cold very easily and ends up wearing lots of fancy coats that she makes herself

moondancer: nonbinary lesbian!! maybe butch but definitely gnc. I think maybe the reason she looks so much like twi is because part of her always subconsciously wanted to be like her in some ways, namely being a highly respected student prolific enough to study under celestia of all people. When twilight came back, she reflected and realized this and shaved off her mane and cut her tail :)
