Lemon and Tomato Pasta (Vegan)

Fragrant with bright flavours, this Lemon and Tomato Pasta makes a hearty lunch, exactly one one needs after spending a sunny morning pottering in the garden. Happy Thursday!
Ingredients (serves 2):
2 cups short pasta (like fusilli or penne)
2 tablespoons olive oil
陆 large Green Onion
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 1/2 lemons
1/3 red chili pepper
2 small, ripe tomatoes, rinsed
a pinch of fleur de sel or sea salt flakes and freshly cracked black pepper, to taste
2 teaspoons caster sugar
3 leaves聽Garden Basil
2 1/2 tablespoons Limoncello聽
In a pot of聽salted boiling water, cook聽fusilli according to package鈥檚 direction, usually 9 to 11 minutes until聽al dente.
While the聽pasta聽is cooking, heat聽olive oil聽in a large, deep, nonstick skillet over medium heat.聽
Finely chop the Green Onion and stir into the skillet, saving a bit of the green part. Cook, a couple of minutes until softened.
Add dried oregano, dried basil, and grate in the zest of a whole lemon. Fry, a couple of minutes more.
Thinly slice聽red chili pepper, and add to the skillet; cook, 1 minute more.聽
Roughly chop the tomatoes, and stir them into the skillet, along with their聽juice. Increase heat to medium-high, and simmer, 4 minutes, stirring often. Season with聽fleur de sel and聽black pepper, to taste. Then, stir in聽caster sugar until dissolved.聽Thoroughly squeeze in the juice of the lemons, and cook, 1 minute more.
Then, drain聽fusilli, saving about 1/4 cup of its聽starchy water. Stir both into the skillet, coating the聽pasta聽in聽sauce. Give a gentle stir until the聽sauce聽beautifully coats the聽pasta.
Finely chop聽Basil, and stir it in, along with Limoncello, and remove from the heat.聽
Serve聽Lemon and Tomato Pasta hot, sprinkled with reserved green part of the Green Onion, with a glass of聽chilled dry white wine, like a light and citrus-y聽Chardonnay聽or聽Sauvignon Blanc.

Chicken Carbonara

Ingredients
12 oz fettuccine
4 slices bacon
3 garlic cloves, minced
1 boneless skinless chicken breasts, cut into strips
Kosher salt
4 large eggs, beaten
3/4 cup shredded Parmesan
3 tbsp dried parsley
1 1/2 tsp onion powder
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
Instructions
0. Cut your chicken breast into strips (across)
1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
2. Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper-towel lined plate.
3. Add chicken to the skillet and season with salt. Cook, flipping halfway through, until no longer pink, about 10 minutes.
4. Add minced garlic and cook until fragrant, about 1 minute. Turn heat to low.
5. Crush the bacon into pieces. Return bacon to the skillet. Add cooked pasta and toss until combined.
6. In a small mixing bowl, beat the eggs
7. To the eggs, add Parmesan, parsley, onion powder, oregano, basil, thyme, and a dash of salt. Stir until combined
8. Pour egg mixture over pasta and toss until coated. Add a couple tablespoons of the pasta water until creamy.
Add more pasta water by the tablespoonful as necessary.
9. Serve warm

Guiso Carrero (Argentinian Stew)

It's still all for play in Pool D with Argentina and Japan meeting tomorrow, and the winner of that match going through to the quarter finals! I have no particular favourites, but as the nights get much chillier, a warming Guiso Carrero makes a hearty and comforting dinner! Happy Saturday!
Ingredients (serves 4):
2 tablespoons olive oil
725 grams/ 1.60 pound good quality stewing meat (I used veal osso bucco)
1 onion
1 green Garden Bell Pepper, rinsed
1/3 red hot chili pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon Cayenne Pepper
1 large garlic clove, minced
6 tablespoons red wine vinegar
450 grams/1 pound Garden Red Kuri Squash
4 medium or 8 small Garden Potatoes聽
4 Whole Peeled Tomatoes + 1/2 cup of their juice
1 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 1/2 cup Beef Broth, warmed
a dozen fresh Garden Green Beans聽
1 cup egg noodles
Heat olive oil in a large pot over medium-high heat. Add veal osso bucco (or the meat you are using), and brown well, a couple of minutes on each side. Once browned, transfer the meat to a plate; set aside.
Peel and finely chop onion, and stir into the pot. Fry, a couple of minutes, until softening.
Halve and seed Bell Pepper, then chop it and add to the pot. Thinly slice chili pepper, and stir into the pot, as well.
Season with dried oregano and thyme and Cayenne Pepper. Stir in minced garlic, and deglaze with red wine vinegar. Reduce heat to medium.
Peel and seed Red Kuri Squash, and cut it into cubes.
Peel Potatoes and halve (or quarter) them, depending on size.
Add Red Kuri Squash cubes and Potatoes to the pot, stirring well to coat in onion and herbs. Increase heat back to medium-high.
Roughly chop Whole Peeled Tomatoes and stir them, along with their juice into the pot.
Return reserved osso bucco, along with its resting juices, to the pot. Season well with fleur de sel and black pepper. Cover with warmed Beef Broth, and bring to the boil.
Once boiling, reduce heat to medium, cover with a lid, and simmer 45 minutes to an hour.
Rinse Green Beans聽and top and tail them. Add to the pot and cover with the lid. Cook, about 10 minutes.
Finaly, stir in egg noodles, cover with the lid, and cook 5 minutes more.
Serve Guiso Carrero hot, with a robust red wine like an Argentinian Cabernet or a French Ventoux. Buen provecho!
