Freestyle Fruit Crumble

If you have a few basic ingredients and some seasonal fruit—berries, peaches, plums, whatever—then the most delightful summer dessert is about half an hour away. 
If you want an actual recipe, I posted a couple of them here. But you don’t really need one. I had a crumble craving the other night, and quickly pulled together the cup of crunchy, fruity goodness you see above. 
Here’s what to do:  
Cut up any fruit and put it in an oven-safe vessel (or into individual vessels). This could mean a baking dish, sure, but it might also be some ramekins or shallow mugs. I used a combination of nectarines and blueberries, leaving about 3/4 of an inch at the top for the crumble mixture.
Toss the fruit with lemon juice and a little sugar. To thicken the filling, which is nice but not crucial, add a little cornstarch. (About 2 tablespoons for a full-size baking dish, and a scant teaspoon or so for an individual portion.) 
In a bowl, make a mixture of equal-ish parts oatmeal, flour, brown sugar (or other sugar) and chopped nuts if you like, and add a pinch of salt and a dash of cinnamon. Drizzle in some melted butter or olive oil (which is what I used), until the mixture sort of comes together and feels crumbly but not wet. 
Top the fruit with the crumble mixture and bake at 400 degrees until the topping is golden and the fruit is bubbling. (Put a cookie sheet on a lower rack to catch drips.)
Do yourself a favor and make at least twice as much crumble mixture as you think you need. You can store the rest in a baggie in the freezer and have it on hand to make another crumble whenever the craving strikes. Because you know it will.

vanilla caramel frozen yoghurt (148kcals)
serves 3 = 444kcals
one serving = 148kcals

fat free greek yoghurt (252g) ~ 141kcals
carnation caramel (85g) ~ 252kcals
natural honey (15g) ~ 50kcals
vanilla extract (2.5ml) ~ 1kcal
in a bowl ~ mix together the yoghurt, honey and vanilla extract until combined and there’s no lumps left in the yog
pour it into another container or bowl ~ in the other bowl, pour in the caramel and mix until it’s smooth
dollop roughly a little more than half of the caramel onto the yoghurt then use a knife to swirl it into the yog (try and mix it mostly through so that it’s mixed into the bottom but still has a swirl pattern)
dollop the rest of the caramel in 4 blobs then use the knife again to swirl the caramel again but only until it creates a nice pattern
cover the bowl with a lid or tin foil then place it in the freezer for a few hours or until it’s frozen to ur liking then serve <3
so i had leftover caramel and yoghurt from the gluten free apple and caramel cake that i made and i was kinda craving something cold like ice cream so i made this! it’s pretty good nothing amazing but it does the job :) oh and this could easily be made vegan by using dairy free yog like alpro and a vegan substitute for honey like maple syrup! <3

hi hi so i made this caramel apple cake the other day using a Carnation recipe and well idk whether or not to post it cause it’s 154kcals which to me is kinda a lot for a little slice of cake but also it’s not the best like textured cake it’s kinda eggy and i used vegan butter and i can REALLY taste it in the cake which i don’t like lol yeah it might be bc of the changes i made to the recipe but it still tasted quite nice
60g caramel instead of 160g
45g honey instead of 55g golden caster sugar
130g gluten free self raising flour instead of 125g regular sr flour
52g vegan butter instead of 85g buttery baking spread
1 1/2 tbsp soya milk instead of 1tbsp milk
130g natural greek yog instead of 125g half fat créme fresh
60g green apple instead of 385g canned apples
no crumble topping
19.05 x 19.05cm square cake mold instead of 18 x 28cm traybake cake tin
i also baked it for a lot longer cause i didn’t think it looked cooked properly but anyways like i said it’s probably bc i changed the recipe and used a much much smaller tin which might explain why the cooking was different and it only made 9 servings instead of 24….oops maybe i’ll try it again
