July 15 to July 27- managed to flake out of doing my Thing A Day posts, and for considerably longer than I thought it’s been at that (feels like a week, it’s been more like two). Haven’t done much in that time other than laundry, and partially cleaning the upstairs bathroom. Need to get out of the doldrums and start doing more stuff. Also resume doing these posts because mostly they’ve been at least partially successful in reminding me to do more.
What I can remember of the last week or so below the cut.
July 19 - dug meat sauce out of the freezer and we had that and pasta. I’m surprised I can even remember back this far.
July 20 - starting prep for a colonoscopy next Monday, so made an easily digestible supper of pan-fried haddock and homemade hash browns. The last “real” meal I’ll have until early next week. Thankfully brother is going on a trip starting tomorrow so I only have to worry about cooking for myself over the weekend. He spent the afternoon making a big pot of sausage & steak chili to take along with him
July 21 - made a vat of stock, partially to use up some freezer burnt chicken (a half chicken and four thighs), but mostly to provide myself with well-cooked chicken and stock for this weekend. Brother forgot to pack his chili, crock pot full of it was sitting out on the counter when I went downstairs to turn off the heat under the stock pot, whoops. Chili is now in fridge.
For supper I made a cheese and chicken sandwich with mayo on white bread, and picked all the very-well-cooked chunks of carrot out of the stock pot to also eat
July 22 - ran two loads of laundry. Deboned the remainder of the chicken and froze most of it. Also divided up and froze the chili and most of the stock (which I’d strained yesterday and then chilled overnight so I could skim off and discard any fat). Cut up a beef roast into stewing beef and froze it in 1 lb amounts for future use.
For supper I cooked some white rice in stock with a little dried tarragon, and added some of the shredded chicken to it.
July 23 - the fun of clear liquids only day! I will not go into the gross details of what prep involves (google peglyte it if you’re curious). When I was finally able to ingest stuff in late evening, my supper was some lime jello made using grape-apple juice, and later a soup mug full of chicken stock.
July 24 - colonoscopy day. Brother drove me there and back. I am now four polyps down, and am being referred to their big polyps specialist to remove a fifth (the big ones apparently need different instrumentation to remove), which will mean re-doing prep at some point in the near future. I am SO not looking forward to that - the colonoscopy itself is no biggie but the prep sucks so very, very much.
Pretty tired since I had to get up at stupid o’clock to do final prep. I will be avoiding blue gatorade for some time to come, since that’s what I was mostly drinking during prep (aside from the Peglyte itself) and now find its flavour revolting as a result.
Had to gently reintroduce my digestive system to food after getting home, so supper was vanilla yogurt, applesauce, a banana, and a slice of white bread and cream cheese, spread out cautiously over the evening.
July 25 - cleaned upstairs bathroom. Brother off at a golfing stag party for someone, so I stayed easy on my digestive system and made tuna rice with green peas for supper. So nice to have a vegetable again after days without any.
July 26 - finally got around to using up the chayote I bought before leaving Toronto (they last forever and a day when refrigerated) and made chayote & chicken wraps using some of the cooked chicken from making stock.
July 27 - supper was chili and rice; some of that steak & sausage chili my brother had made. It was delicious.

Comfort foods that i deeply enjoy
my first comfort food that wins over my heart is Mac and Cheese. It has to be homemade of course the boxed mac and cheese does not make me feel the same way. A warm mixture of butter noodles and 3 or 4 different kinds of my favorite types of cheese with some bread crumbs baked on top will do the trick every time.

Another one of my favorite comfort foods is Beef stew. It is very easy to make in the crock pot and it is a perfect meal and comfort food during the cold months. You get meat and all sorts of vegetables in a stew with a beef or chicken broth (i prefer beef) that warms me up and is a very delicious.

The last food i'm going to mention is Chicken Pot pie. growing up my mom use to make this all the time and it will always be one of my favorite foods to have. A beautiful flaky crust mixed with filling of chicken vegetables and a creamy broth brings a smile to my face everytime.

Today I want to talk to you about some typical recipes of the city of Pistoia. Unfortunately in Tuscany, where this town is located it is one of the least known among the provinces, although its history is very old and art can be found everywhere in its small old town, as in the other towns of its province. In addition, in the province of Pistoia you can find environments that are still intact and rich from the point of view of flora and fauna. So the flavors of this small land, can be savored both in the city and in the small towns that offer many typical local products. Let's start our all-pistoiese menu with appetizers.
The Bruschetta
The bruschetta today normally served with appetizers especially in winter, it is an old tradition of when the peasants could not throw away anything, they used the dry bread making it roast on the fire. Ingredients: slices of bread (strictly Tuscan so without salt) a clove of garlic olive oil goes up just enough. Preparation: They are roasted in the oven some slices of homemade bread, just removed from the oven are rubbed with the clove of garlic that we will have peeled. At this point the bread is toned with olive oil and a pinch of salt. It is recommended to eat it just got hot again.
The black croutons
Another Tuscan specialty is the black croutons that are found throughout Tuscany but which in Pistoia are prepared with a mixture of chicken livers and spleen, unlike other areas where the spleen is not put. Ingredients: 300 grams of chicken livers 150 grams of spleen a celery rib, a small onion and a chopped carrot to make the base of the sauce. some salted caper half a glass of red wine a glass of meat broth or even nut. a clove of garlic a bay leaf a few leaves of parsley salt and pepper butter and oil just enough. 2 or 3 anchovy fillets Preparation: Clean and wash the chicken livers and spleen, pass everything into a food processor to chop it as much as possible. Chop the carrot, celery and onion as finely as possible. Meanwhile, with a little butter and oil in equal quantities, fry the chopped vegetables in a pan that you have already prepared. Also add the crushed garlic clove, parsley and bay leaf, but should be removed as soon as golden brown. At this point add to the base of the sauce the mixture of livers and spleen and simmer for about half an hour adding broth if the mixture tends to dry out too much. After this time add the wine and let it evaporate. Add the capers that you will have chopped very finely, adjust the salt and pepper and continue to add broth let cook for about twenty minutes until the mixture is soft and creamy. Meanwhile, prepare the bread, toasting small slices of Tuscan bread (so without salt). Soak just a portion of the bread in the broth and place a serving of gravy on top. Our black croutons are ready. Another way to bring croutons to the table, in my opinion better, because it allows you to eat them always hot is to have guests prepare the croutons directly on the table, bringing a ceramic bowl containing the sauce with under a small stove that it allows you to keep it warm at all time and the croutons just removed from the oven. It will then be the diners who choose how many croutons to eat. Let's move on to the first. I propose two, the first is the typical dish that is prepared on July 25th which is precisely the feast of the Holy Patron of Pistoia, San Jacopo and it is the macaroni on the duck. A dish therefore rich and hearty. The other is a really poor first course. His name is incarcerated and legend has it that he was prepared by the inmates of the prisons of Pistoia, which was located next to the public slaughterhouses. For this very simple dish were then used the scraps of the slaughterhouse and the less valuable parts of the veal or beef. Let's now move on to the recipes:
Macaroni on duck or San Jacopo.
This dish is considered a unique dish, as the duck sauce that serves to season the macaroni and the larger pieces of duck that will serve for the second, are cooked together. Let's start anyway from the pasta, the macaroni precisely, which are prepared normally at home being very difficult to find on the market ready-made if not in some fresh pasta workshop where you can order them. It is a paste that looks like squares of about 7/8 cm by 7/8 cm. But it is very easy to prepare them if you know how to make a sheet of wheat flour. Ingredients for 4 people: about 400 grams of flour type 00 4 eggs a pinch of salt a drop of olive oil. Work the flour with the eggs that you will love slowly adding a pinch of salt and a drop of olive oil, until you get a homogeneous and smooth dough. At this point you either flatten the dough with a rolling pin until you get a very fine pastry that will then be cut into squares, or you use a dough machine that allows you to smooth strips of dough that will then be cut as before. When cooked, take off the large pieces and set aside in heat to consume them as a second dish, while the remaining sauce will serve to season the macaroni that you will have cooked in plenty of salted hot water. Bring the already grated cheese to the table that everyone will put to their own desire. 5 Easy Dog-Friendly Recipes
It’s so easy to make your dog one of these five dog-friendly recipes:
1. Turkey-Rice Casserole
Dog-friendly Turkey-Rice Casserole.
This recipe makes a great everyday meal, especially with the addition of homemade gravy.
Ingredients:
2 to 3 cups rice (white or brown), uncooked
3 tablespoons olive oil
3 pounds ground turkey
4 cups (or more) frozen vegetable medley (corn, peas, carrots, green beans), defrosted
Directions: 
In a large saucepan, cook desired amount of rice according to package directions. Set aside.
Heat 1 tablespoon olive oil in a large stockpot, and add the turkey. Cook over medium heat until browned, about 5 minutes.
Stir in the vegetables, adding more if you’d like.
Transfer to a large mixing bowl, and add rice. Add gravy (see below) and remaining 2 tablespoons of olive oil. Mix well.
Spoon into plastic bags or containers. Freeze what won’t be eaten within three days.
Gravy
Ingredients:
Meat drippings
6 cups water or stock (vegetable, chicken)
3 tablespoons cornstarch
3 tablespoons water
Directions: 
Mix 3 tablespoons of the water and the cornstarch together until well-combined.
Add this mixture slowly to the meat drippings. Then slowly add 6 cups water or stock, continuing to stir.
Bring to boil on high heat.
Turn down heat to medium until gravy thickens. Stir constantly.
Once desired thickness is reached, turn off heat. Add to meat in desired amount. Freeze or refrigerate leftovers.
2. Savory Stew with Roasted Veggies
Dog-friendly Savory Stew with Roasted Veggies.
When weather turns chilly, most of us take comfort diving into a warm, comforting bowl of yumminess. Maybe our dogs do, too? This stew is a perfect dish to serve up on a cold winter’s night.
Ingredients:
1 pound ground beef, chicken or turkey
1 large potato, peeled and diced
1 large sweet potato, peeled and diced
3 to 4 tablespoons olive oil or coconut oil
1 medium carrot, peeled and diced
½ cup frozen peas
Water
Directions: 
Place potato, sweet potato and carrot in a roasting dish, and sprinkle with 1 to 2 tablespoon(s) of oil. Mix well. Put in a 350-degree Fahrenheit oven for about 60 minutes or until soft and lightly browned and roasted. Set aside.
Sauté meat in a large pot with 2 tablespoons of oil until cooked through. Don’t drain the fat.
Add in the potatoes and carrots. Mix well.
Add 3 cups water to make the dish soupier. Bring to boil, and simmer for 35 minutes.
Cook peas according to package directions. Add to meat and vegetables. Combine well.
Cool, then serve. Freeze what won’t be eaten within three days.
3. Soothing Chicken and Rice
Dog-friendly Soothing Chicken and Rice.
When your dog doesn’t feel well, a serving of warm chicken and rice is just what is needed to soothe an irritated tummy.
Ingredients:
1 cup white rice (uncooked)
3 boneless, skinless chicken breasts, organic if possible
Directions: 
Prepare rice according to package directions. Do not add any seasoning or broth. Set aside.
Place chicken breasts in a pot and cover with enough water so the breasts are submerged. Cover and boil on high heat for 12 minutes or so, until the chicken is cooked all the way through.
Remove from pot and shred the chicken into small pieces.
Mix with rice. Freeze what will not be eaten within 3 days.
4. Calming Chicken Broth
Dog-friendly Calming Chicken Broth.
Along with boiled chicken and rice, broth is a must-have recipe in a dog parent’s arsenal. This is great to add to chicken and rice, on its own or spooned over just about any other dish.
Ingredients:
1 whole chicken, cooked
2 large carrots
2 large potatoes
1 celery rib
Water
Directions: 
Roast chicken or purchase a pre-roasted chicken. Let cool slightly.
Remove and discard the skin, and cut the chicken into pieces. Place in a large pot.
Wash and roughly chop carrots, celery and potatoes, and add to the chicken.
Cover all the ingredients with plenty of water.
Cook on high until it boils. Reduce to simmer, cover and cook for 2 hours. Add water if necessary, and check periodically to ensure it doesn’t boil dry.
Allow it to cool, then skim fat off top.
Remove chicken and vegetables, and strain the broth to remove debris.
Store in glass jars, and use within three days. Freeze excess in freezer containers or bags.
5. Terrific Turmeric Doughnuts
Dog-friendly Terrific Turmeric Doughnuts.
While not technically doughnuts (they’re actually like biscuits), these goodies aren’t just tasty, but they’re full of beneficial ingredients.
Ingredients:
1 cup whole-wheat flour
½ cup unsweetened apple sauce
½ tablespoon baking powder
1 egg
1 teaspoon cinnamon
1 teaspoon turmeric
1 tablespoon coconut oil
1 tablespoon honey
3 tablespoons water
Directions: 
Preheat oven to 350 degrees Fahrenheit. Grease doughnut pan with coconut oil.
Add all ingredients to a food processor, and blend until smooth.
Pour into doughnut pan, fill halfway. Or, you can put mix into a plastic food storage bag, cut a hole in the corner and squeeze mix out of hole into a doughnut shape on a nonstick cookie sheet.
Bake for 20 minutes/16 minutes for doughnuts not in doughnut pan. Check all at 14 minutes.
Once doughnuts cool, remove from pan and frost. Sprinkle with turmeric.
Store in refrigerator, covered.
Frosting:
2 tablespoons whole milk (cow or goat)
2 tablespoons pumpkin puree(not pumpkin pie mix)
Sprinkle of turmeric
