remember when i said i will be tweaking the leche flan dessert and turning it into something more special? well, this is it -
the halo-halo for my dad's dinner party with friends.

i sliced up my leche flan into pieces to add it into an assortment of filipino delicacies.

however, i call this the dry halo-halo because it is usually served with milk and shaved ice which seemed too tedious and messy for us to do.
surprisingly, it turned out to be a crowd favorite!
to make this dessert, fill up your bowl with the following ingredients:
leche flan
ube (purple yam)
macapuno strings
queso ice cream
jellies

PASTILLAS DE LECHE
The other day, I found myself craving for something sweet. Being lazy didn't really help considering most desserts required a lot of work to make. That's when I realized that there was one fool-proof dessert that i knew how to make. A relatively easy but delicious dessert called pastillas. Of course being a dessert, this caters to the people who have a sweet tooth.

Besides this delicacy being able to appease the cravings of your sweet tooth, plus its relatively cheap ingredients, it is quite easy to turn it into a business opportunity.
It is known to have originated in San Miguel, Bulacan. Originally made by farmers who had tended to cows. It was once called "pastillas de leche" which in English is translated to "milk pills" or "milk tablets". Despite its noticeably Spanish name, the dessert is said to still have originated within the Philippines. Within the province of San Miguel, a pastillas festival is held every single year where they wrap these candies in colorful and decorative wrapping paper called "pabalat" which is Tagalog for "wrapper".

Traditionally made with carabao milk, it is safe to say that creating authentic pastillas de leche candies would be hard and fairly more time consuming. However, Filipinos have a recipe that does not require using carabao milk that is hard to find in most stores. The recipe requires only 3 ingredients which are milk powder, condensed milk and white sugar.
The recipe used with make about twenty 2-inch tablets. It calls for the following:
1 cup of powdered milk
⅓ cup of condensed milk
⅕ cup of white sugar
The first step to making this delicacy is to add 1 cup of milk powder into a large bowl to prevent spilling.
Next is to pour your ⅓ cup of condensed milk gradually while mixing it together with your milk powder.
Mix it for a while preferably with a fork, whisk or any utensil that doesn't restrict too much movement until the mixture begins to resemble a shaggy dough.
When it resembles a dough like texture, kneed it with your hands until it becomes smooth. Next, shape your candies, you can do it traditionally like tablets or you can make them into small spheres.
Lastly, prepare your sugar in a deep container as to prevent spilling and roll your freshly made pastillas into your white sugar.
That's it! You just made pastillas!

"oh, your cat is adorable," you coo, dropping to your knees with a grin. you extend your hand to the grey cat, the cat sniffing you curiously as its slowly approaches you. "a boy?"
"girl," mick lets you know with a grin. "her name's cement." he pops his head out of the kitchen. "get it? cause she's grey?"
"that's so funny! like my cat!" you shriek, starting to pat the cat on its head. "actually... cement looks a lot like concrete." you lift your head. "doesn't she?"
mick hums, trying to pull up an image of your cat from the back of his mind. truthfully, he's only ever seen concrete twice during your time together.
the first was when he'd found her roaming around the day she slipped out of your apartment and then another time when he spent the night over at yours after you started dating.
"huh," he laughs, "i guess you're actually kind of right. even their fur colour's kind of similar."
"you know, when concrete was a kitten, she used to have this white patch of fur in the shape of a heart right above her tail. it barely resembles a heart now," you explain as you get to your feet. you saunter towards the kitchen where mick stands.
"a heart-shaped patch as kitten?" mick snorts with a laugh. "that's cute– oh my god! that's the cat my sister wanted to adopt but the lady said she'd given the cat to the wrong person!"
"oh, my god!" you laugh, throwing your head back with a laugh. "that was you? the guy who reserved the cat with the heart patch!"
"i can't believe i never noticed that!" mick laughs. "you got it from that one lady in the suburbs with the big house? mama cat was a friendly white cat?"
"exactly her," you grin. "wow, guess you're really like... meant to be my boyfriend or something."
"i guess you're stuck with me then," mick beams, leaning down with puckered lips. "because the universe said so."
"we have to get our cats in for a playdate soon." you glance over your shoulder at cement now padding towards the area her water bowl was placed. "they're siblings, how sweet."

Hello from my somewhat sunny room.
Newsflash: it did not rain today! or yet because it is only 4 pm and who knows what tonight may hold for those of us who are obsessed with weather. I check the forecast on my phone regularly. Am I the only one who does that? Anyway, the mere sight of sun made me happy. Thank you, Lord. :)
LECHE FLAN. The whole purpose of this post to begin with.
Before I continue, the reason for the recipe was because Spanish friends of my father will be coming over for dinner tomorrow and this Filipino delicacy was for the dessert. Although, I think there is a Spanish counterpart for this sweet thing. They call it Tocino del Cielo, but the twist that we are presenting this with is the Halo Halo. Ha! I do not think they have that, do they?
That post will be for tomorrow.
AGAIN, LECHE FLAN.
It is your typical flan - a delicious amalgam of egg yolks, milk, sugar and vanilla extract baked in pan called llanera.
What makes ours different is that it is steamed over a stovetop instead of it being baked inside the oven. Again, is that something uniquely Filipino? If you happen to chance upon my post and you are not from my country, tell me how you prepare you flan. I am curious.
I got my recipe from Panlasang Pinoy hahahaha. My go-to cooking bible. He is just good. I trust his Filipino recipes. He knows what he is doing.

Leche Flan recipe by Panlasang Pinoy
Prep: 10 minutes | Cook: 45 minutes | Yield: for three people

Ingredients
5 pieces eggs
0.5 can condensed milk (14 oz)
0.5 cup fresh milk or evaporated milk
0.5 cup granulated sugar
0.5 teaspoon vanilla extract
Instructions
Using all the eggs, separate the yolk from the egg white (only egg yolks will be used).
Place the egg yolks in a big bowl then beat them using a fork or an egg beater
Add the condensed milk and mix thoroughly
Pour-in the fresh milk and Vanilla. Mix well
Put the mold (llanera) on top of the stove and heat using low fire
Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color. Note: Sometimes it is hard to find a Llanera (Traditional flan mold) depending on your location. I find it more convenient to use individual Round Pans in making leche flan.
Spread the caramel (liquid sugar) evenly on the flat side of the mold
Wait for 5 minutes then pour the egg yolk and milk mixture on the mold
Cover the top of the mold using an Aluminum foil
Steam the mold with egg and milk mixture for 30 to 35 minutes.
After steaming, let the temperature cool down then refrigerate
Serve for dessert. Share and Enjoy!

Have you ever seen anything like this? It's my mom's steamer! Instead of a stovetop, I placed the leche flan inside and waited for 30 minutes. :) It's a brilliant piece of art.
and, voila!

Yup, I was the one who took a bite off that thing. I do not understand why the edges are jagged though? I was using a spoon.

Different kakanin (rice cake) deserts at my big fat Filipino reunion.
A core memory is being the same height as a wedding banquet table and walking off with handfuls of palitaw to gorge on as a kid
My favorite is the white palitaw made with pounded sticky rice or mochi flour but the kutsinta, the brown rice cake was also delicious, it has an amazing chewy texture. Both are coated in fresh grated coconut 🥥

"are you listening?" lily prompts, tapping the back of your hand from across the table. "this is important - you'll fail the quiz if you get this question wrong."
you tear your eyes away from the scene on the garden table across the lawn and turn to lily. "yes. sorry, i got distracted."
lily tries to follow the direction you'd been staring in and quickly slumps her shoulders at the realisation. "i was hoping you wouldn't see that."
because there's logan, slumped shoulders with his eyes trained on his laptop screen with a girl sitting next to him. her laptop also propped up on the table with her head resting on his arm.
"you knew?" you tilt your head.
"yeah, i've uh," lily clears her throat, "i've seen her in the house a couple of times. logan's girlfriend."
"girlfriend," you say in a dry laugh with a small nod. you return your attention to the screen of your laptop, still nodding with your jaw clenched. "interesting."
"they just started dating recently," lily explains quickly, sitting up slightly to try and reach for you across the table. "they met through max. she's one of the girls in his engineering class. is it a problem? we can move to the library... if you want."
"nothing," you laugh, "it's just funny how you said she's his girlfriend,"
lily presses her lips together. "yeah, oscar said-"
"i don't wanna talk about logan anymore," you laugh, shaking your head with a laugh. "good for him to not drag it out."
"hey, sorry i'm late," mick sighs, slotting himself into the empty spot next to you. he presses a kiss to your cheek and pulls you in for a tight side hug. "i got held up in class."
"we barely started," lily laughs. she points her pen at you. "she knows."
"you knew too?" you gasp, turning to mick with your jaw dropped.
mick looks between the two of you, eyebrows raised in confusion. he folds his arms and leans forward to rest his elbows on the table. "know what?"
"logan's girlfriend."
"oh," he presses his lips together, "yeah, max told me that his friend really hit it off with logan at one of their parties at their frat house." he leans into you. "are you okay?"
"yes, of course," you laugh. "i was just caught a little off-guard. anyway, how was your class?"
