Yeto's Superb Soup
Tumblr media Tumblr media
We made Yeto's soup!! This soup is full of love! And goat cheese! Highly recommend, astonishingly tasty -- warm, creamy, mild, soothing.
Makes about 6 servings.
In a large pot:
1 butternut squash (peeled & diced small)
1 large yukon gold potato or similar (diced larger)
1 yellow or white onion (diced fine)
smallish chunk of ginger (minced)
~4 cloves garlic (minced)
Large pinch of thyme
Dash of salt and pepper
Water to cover
Bring to a simmer and keep simmering 30min or until veg is soft.
Give it a heavy stir or whisk to break up the chunks; exact texture is up to you!
Add:
1 lb salmon fillet (skin off, chunks ~spoon size)
Simmer another 20min or so. In that time, add:
Generous splash or two of heavy cream
6oz or so plain goat cheese, broken up and stirred around so everything mixes
More salt & pepper to taste
This is basically a chowder and can definitely be adjusted to taste! We had it with garlic butter croutons and that was super tasty -- cannot overstate how shockingly delicious it is. Yeto was right, love is stored in the soup ♥

HELLO THEY ARE IN THE OVEN AS WE SPEAK 🍪
Tumblr media
I'm using the Tollhouse recipe recommended by @tonguetyd and @whataboutyouisamascot (I got it twice so I had to try that one first!!).
This is the first batch, I have a slight feeling they need a little bit more of flour, but we'll see!!

I finally got the approval to share my recipe card (and the little chef yippee I drew) that I did with zincitycorner.
If you'd like to check out the adorable zine or even try out the recipe, I hope you like it!

Snack time!
So there's this midwinter/holiday season snack that I adore, which is a bit of a dark horse perhaps, but an undeniable and certified delicacy nonetheless. I'm talking about putting blue cheese on gingerbread cookies! A concept that sounds weird at first, but then you try it and it just works. Beyond that, it fucks severely.
Now I'm wondering how widespread this combination is. I know it's a thing up here in Finland and the Nordics, from personal experience and also some light internet sleuthing.

Like so
If you haven't tried it, I recommend it. As long as you enjoy blue cheese. And gingerbread, of course.
Feel free to tell me what part of the world you're in and also your unfiltered opinion on this snack.

My friend took me out for biang biang noodles to celebrate my birthday! I got to try a lot of foods for the first time and I feel very spoiled. Also very full.
