Made lunch (baked lemon and red pepper cod, sauteed beets, and a balsamic vinaigrette salad) with some of my misfit produce. So good.

My misfits box arrived today. It’s so much more than I expected! The produce is beautiful and perfectly edible. Why didn’t I start this sooner?
Bonus: 90% of the packaging was cardboard or paper. Yay for limiting plastics.
