Gluten free puff pastry
Recently found this recipe for puff pastry, and knew I had to try it: https://theloopywhisk.com/2022/10/22/gluten-free-puff-pastry/ Did some tweaking and ended up with a pretty good result :)
Mix until wet sand consistency:
2 cups gluten free flour (schär type B) ½ tbsp caster sugar ½ tsp salt 40 g (3 tbsp) cold salted butter, cubed I used my pastry cutter, but you could use a blender or your fingers.
Add and toss with a fork:
120 g cold salted butter, sliced. I used a cheese slicer.
Add and toss, 2 tbs at a time:
1 dl water, iced or very cold
Form into ball, gently Put in plastic bag, roll out into square and chill for 30 mins minimum Laminate using 2 letter folds Chill again 30 mins minimum Use as you like
Bake at 200C until golden and crisp :)

Paneer and Vegetable Korma

Usually korma is made with chicken, but I wanted to try something vegetarian. I'm getting a little sick of chicken! My brother absolutely refuses to eat anything without meat in it, but he liked this just fine. Finally a reprieve from chicken!
Ingredients
♡ 1/4 cup olive or coconut oil
♡ 1 large onion, diced
♡ 4 cloves garlic, minced
♡ 1 tsp ginger paste
♡ 1 small tomato, diced (optional)
♡ 3/4 cup greek yogurt
♡ Bay leaf
♡ 1 tsp ground cumin
♡ 1/4 tsp ground coriander
♡ 1/4 tsp ground cardamon
♡ 1/8 tsp black pepper
♡ 1/8 tsp ground cloves
♡ 1/8 tsp ground cinnamon
♡ 1/2 tsp chili powder
♡ 1/2 tsp turmeric
♡ 1/2 tsp paprika
♡ 1 tsp garam masala
♡ salt, to taste
♡ 1/2 cup carrots, diced
♡ 1 cup potatoes, diced
♡ 1 large zucchini, sliced
♡ Paneer or tofu
♡ 1/2 cup to 3/4 cup water
♡ Cilantro to top
Inatructions
☆ Heat oil in large pan at medium heat. Add onions and stir
☆ Heat onions until almost translucent, then add garlic and ginger paste
☆ Once all items from pan are cooked, transfer them to a food processor or blender
☆ Add tomato and yogurt to the food processor and blend until smooth
☆ Add the blended mixture back into the pan an stir in spices. Saute until mixture reaches a simmer
☆ Add in vegetables and paneer/tofu. Let simmer for 10-12 minutes
☆ Add 1/2 to 3/4 cup water, depending on your desired consistency. Stir and let simmer for 2 to 3 minutes.
☆ Serve topped with cilantro

When I was a kid, Thanksgivings were a haze of color, people, and foods I didn't really like. The textures were unpredictable, the flavor only more so depending on who made the food that year, and things came in weird chunks that fell off your fork. It was loud, my extended family stayed in my house, and as a general rule was quite overwhelming.
As an adult, I don't particularly participate in the holiday. It has become an excuse to visit family, rather than a grand day of celebration. Last year, I hosted my siblings and their partners. We had pizza.
This year, my estranged oldest brother- having recently returned contact with us after 5 years of silence (his silence largely influenced by the fact that he needed space to recover from the cult) is hosting. Having divvied up the task of feeding a monumental amount of people (~18), my brother assigned me the task of 'Dessert'.
Now, I could have just made regular ol' pum'kin pie. Opened a can of the stuff, thrown it into a premade crust, and tossed it into the oven. Which is what I will be doing with the chocolate pudding pie this year. But as previously mentioned, many traditional Thanksgiving foods are just.... Not tasty, to me.
Especially, the pumpkin pie. Thin. Flavorless. Lacking any sort of redeeming qualities, it mocked me. Each year I would try a slice. Maybe, just maybe, THIS year it would be the creamy goodness it always masqueraded as. And it never was. It drove me to create the following recipe from scratch.
Recently I became gluten free (as best I can manage), so this recipe follows that rule. However, I'm sure substitutions of the wheaty nature will not overly change the resulting pie.
It is spongey, creamy, and tastes like pumpkin pie ought to- pumpkin and spices. The pretzel crust adds a layer of salty that enhances the sweetness and balances the creamy texture with a nice crisp.

Gluten Free Pumpkin Pie
2 eggs
1/ 3 cup baking rice flour
1 tsp baking powder
~1/4 cup cream cheese
1/4 cup brown sugar
3/4 cup pumpkin
~2tsp ginger, cinnamon, and nutmeg (to taste)
1tsp almond extract
1 cup crushed gluten free pretzels
2 tbsp unsalted butter
Prep time: ~15 minutes.
Cook time: ~20 minutes.
Yield: 1 pie, 8 servings.
Prep: Set cream cheese out to settle into room temperature beforehand, or microwave it in small increments to soften it.
In a bowl, mix eggs, sugar, pumpkin, and cream cheese. Slowly add seasonings, baking powder, and rice flour.
In a separate bowl, crush pretzels into little bits. Then, use a blender to chop them up into a fine powder. Add butter.
Assembly: Set oven to 350°. Place pretzel mix into pie tin and spread into crust shape. Prebake in oven until brown or crisped.
When the oven is preheated fully, settle the pumpkin mixture into the tin and set in oven. Bake for 15-20 minutes.
The pie is done when the pumpkin is spongey and comes clean from a toothpick test, no major color change.
Optional whipped cream: add 1/4 cup heavy whipping cream and 2 tbsp white sugar to a bowl and whip until peaked.

For those that are interested, this is the sourdough recipe that I've been fiddling with. It gives you a really delicious, thin crusted loaf that's chewy and tender but not gluey. Great flavor, etc.

Not “baklava” but interesting
 So phyllo dough does not work gluten free (to the point where I can distinctly remember people complaining about people suggesting they post a phyllo replacement if their flour blend is so perfect.)
Most of the time, the response was “I can’t” or “you can buy some and try to do it.”
Well, the gluten free baklava replacements tend to be noodle dough, spring roll wrappers, or pie crust.  Noodle dough tends to be too thick, crunchy on the top, and does not tend to keep well.  Rice or tapioca based spring roll wrappers usually have salt in them, are usually both crunchy and chewy, and don’t tend to keep that well.  Pie crust is basically both fatty and like noodles.  Tofu “wraps” might work, and the newer GF flour tortillas might work.
But if what you’re craving is the gooey nut filling, you could make it.
Take honey, heat until it hits soft ball (so 230 - 240 ish, depending on your altitude.)  I stopped at about 230 because it frothed a ton and I didn’t want to mess with it.  Add chopped nuts, some spices, and then cool in an oiled pan.
It’s got that dense richness of a baklava, and you could totally use it as a filling / spread, but it takes minutes to make.

Matzo Ball Soup

This is the only soup everyone in my family will eat (several of my family members are soup haters, unfortunately). It is nice and easy to make, and since the recipe is so basic, you can easily add more ingredients to your tastes.
Ingredients
Dumplings
♡ 2 cups gluten free matzo meal (my recipe for that can be found here)
♡ 1 tsp baking powder
♡ 1/2 tsp salt
♡ 2 tsp dill
♡ 4 eggs
♡ 4 Tblsp olive oil
♡ 1/4 cup + 2 Tblsp water
Soup
♡ 1 Tblsp olive oil
♡ 2 cloves minced garlic
♡ 10 oz can of chicken
♡ 3/4 cup sliced carrots. You can also use baby carrots if you don't feel like cutting anything
♡ 6 cups chicken or vegetable broth
♡ 1 bay leaf
♡ 1/2 tsp onion powder
♡ Salt and pepper to taste
♡ Dill to taste
Instructions
Matzo Balls
☆ In large bowl, mix all ingredients
☆ Cover the bowl and leave in the fridge for at least 30 minutes
Soup
☆ Heat oil in a large pot
☆ Cook the garlic, chicken, and carrots until carrots have softened. If you are using raw chicken instead of canned chicken, cook it separately to avoid risk of food poisoning. I like to shred the chicken
☆ Add broth, bay leaf, onion powder, salt, pepper, and dill
☆ Bring soup to a boil, then cover and let simmer at low heat for at least 20 minutes.
☆ When matzo dough is done chilling in fridge, take it out.
☆ Using a small icecream scoop, scoop out balls and put into soup.
☆ Once again bring soup to a simmer and cover the pot. Let cook for 5-10 minutes
