Have you ever tried banana flour? I think I’m officially in love. 😍 I’ve been experimenting with it recently and I love it. It’s such a good gluten free flour with a great texture!
I made these amazing, super fluffy pancakes with it which turned out delicious. With a sprinkle of cinnamon sugar and sweetened cream cheese on top. 💛

Would you believe me if I told you these pancakes are made with 1 vegetable and three spices?
Well, THEY ARE!
Behold: plantain pancakes, made from 1 green plantain and seasoned with cinnamon, vanilla, and sea salt.
Topped, of course, with peanut butter and blueberry maple syrup.
Happy Sunday to me indeed!
If you wanna make these, simply boil a GREEN plantain (yellow doesn't have enough starch) and, once boiled, pop the plantain in the food processor with your spices.
Process until the plantain forms a ball then flatten them into a pancake shape (I just use my hands) & cook on a dry cast iron skillet until both sides are brown.

Turns out I'm out of maple syrup, so I couldn't try making zucchini "bacon" just yet.
So I made mock apple (zucchini) crisp, zucchini fritters, zucchini "candy", and froze two one-cup portions of shredded (for future muffins).
Here's the recipe for the fritters - they are dairy-free, grain-free, gluten-free, and Paleo:

For the "candy", you just boil small pieces in juice and dehydrate. Your supposed to roll in a mix of powdered sugar and cornstarch after. I was going to use tapioca starch and Truvia, but decided they're fine without. I used Cheribundi (cherry and apple juice mix), so they taste a bit like dried cherries - yum.)
I combined a mock apple crisp with a grain-free apple crisp recipe for the crisp, so I don't really have a recipe for that.
