Onion and Herb Toad in the Hole

This hearty and fragrant Onion and Herb Toad in the Hole, makes a wonderfully comforting dinner on a rainy night. The goat's milk also adds a deeper flavour to this staple of pub grub!
Ingredients (serves 2):
1 cup plain flour
陆 teaspoon salt
1/2 teaspoon freshly cracked black pepper
2 large eggs
a heaped teaspoon Dijon Mustard
1 陆 cups goat's milk*
2 tablespoons olive oil
2 (100-gram/3.5-ounce) good quality pork sausages (like Toulouse sausages)
a Green Onion
4 leaves fresh Garden Sage聽
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
*I used goat's milk to make it suitable for my Mum, who's allergic to cow's milk
Preheat oven to 200掳C/395掳F.
In a large bowl, combine聽flour, salt and black pepper. Dig a well in the middle and break in the聽eggs. Add聽Dijon Mustard, gently whisking while gradually adding the聽goat's milk, until the聽mixture聽is smooth and silky. Set aside.
Place a medium baking tin on the stove, over a medium flame. Add olive oil. Once hot, add the聽Toulouse sausages, and cook, browning on all sides, about 5 minutes.
Thinly slice white part of the Green Onion, saving green part for later, and stir into the tin. Fry, a couple of minutes.
Finely chop Sage, and stir into the tin, along with dried thyme and rosemary. Cook, a couple of minutes more.
Place the tin in the middle of the oven, and allow to heat, a couple of minutes..
Open the oven door, and quickly pour the聽Yorkshire pudding mixture. Close the oven door, and cook, for a further 30 to 35 minutes, at 200掳C/395掳F.
Finely chop reserved green part of the Green Onion. Set aside.
Serve聽Onion and Herb Toad in the Hole聽hot,聽sprinkled with chopped green part of the Green Onion.

Green Buckwheat Salad (Vegetarian)

This beautiful and flavourful Green Buckwheat Salad, bursting with fragrant herbs, is best eaten in the garden where you picked most of its ingredients; but it also makes an excellent picnic, should you be travelling! Happy Monday!
Ingredients (serves 1):
5 Garden Snow Peas
1/2 cup buckwheat
1 teaspoon coarse sea salt
half a dozen large leaves fresh mint
2 fluffy sprigs聽Garden Parsley
1/3 of a green chili pepper
1 tablespoon olive oil
half a small lemon
a pinch of salt and freshly cracked black pepper
1/4 large cucumber, rinsed
30 grams/1 ounce Feta Cheese
Bring a small pot or saucepan of water to the boil. Once boiling, add聽Garden Snow Peas, and cook, 5 minutes. Lift them out of the water and immediately plunge them in a bowl of cold water and ice, to stop them cooking. Set aside.
Rinse聽buckwheat under cold water, and stir聽into the boiling聽water in the same pot, and cook until just tender, about 10 minutes. Once cooked, stir in coarse sea salt, and allow to boil, 30 seconds more. Drain buckwheat thoroughly, and allow to cool completely.
Finely chop mint and聽Parsley, and add them to a medium bowl.
Thinly slice green chili pepper, and add to the bowl. Drizzle in olive oil. Thoroughly squeeze in the juice of the lemon halve. Season with salt and black pepper, and whisk well, to blend.聽
Cut cucumber into quarters, and then into slices.
Add cooled buckwheat,聽Garden Snow Peas聽and cucumber slices to the bowl, and toss well, to coat in dressing. Crumble in the Feta, and toss gently. Chill in the refrigerator, at least a couple of hours.
Serve Green Buckwheat Salad cold, with a glass of chilled white wine, like a Western Cape Chardonnay or a Marlborough Sauvignon Blanc.
