Inspired by @restaurant_amusement On the left how they served the dish. On the dish calf and cockles tartare, tarragon and BBQ radish. In our version on the right eye of round and Dutch shrimps Tartare. The eye of round was smoked on maple wood with a temperature around 50 degrees for 15 minutes. Smoked on the Weber Summit. Added to the tartare grilled lime juice and some chives. Made a tarragon/chives oil and prepared BBQ radish. Grilling season is *almost* here! Defined as the weeks between Memorial Day and Labor Day, you have one week to start prepping the first recipes that will grace the open flames of your grill. If we can suggest an option … sausages! It’s one of our favorite grill items. However, in the U.S. alone, we have at least 200 varieties of sausage. So how does one even begin to choose? Well, we’ve highlighted a few of our favorite sausage types below, sure to be perfect for your summer grilling.
Bratwurst – Coming to us from Germany where they have more than a dozen varieties. Here, Bratwurst is typically made from pork or veal and seasoned with nutmeg, ginger, salt, and caraway seeds.

Grilled Bratwurst with Beer, Mustard, and Sauerkraut, Sheboygan Grilled Brats, Grilled Reuben Brats
Italian sausage – This (generally) pork sausage comes in three varieties: hot and sweet/mild. The hot version is seasoned with salt, garlic, anise seed and red pepper flakes. The sweet sausage is seasoned with fennel, in addition to the same spices as the hot. However, it omits the pepper flakes. These two sausages are usually interchangeable depending on your spice preference.

Kielbasa – “Kiełbasa” is the Polish word for sausage, and in Poland it can mean any kind of sausage. Here in the U.S., kielbasa is simply known as “Polish sausage”. Kielbasa is usually a horseshoe-shaped, pork sausage that is most often smoked. However, you can find varieties that are partially smoked and even unsmoked.

Andouille – A smoky sausage, with a bit of a kick, Andouille is known for being the star of Cajun dishes (i.e. jambalaya and gumbo). But did you know that Andouille originated from France? Andouille can be used in any recipe that calls for smoked sausage if you want to add a little heat.
