Salmon Street Tacos
Ingredients:
152g (~1/3 lb) Salmon
151g ( just under a Cup) Cooked White Rice
68g (just over 1/2 Cup) Green Beans, cut to 1/2 inch
57g (just under 1/2 Cup) Shredded Sweet Potato
Directions:
1. Cook rice according to the instructions on the packaging and set aside.
2. Steam the green beans
3. Use a fork to shred them apart and set them aside
4. Steam the shredded sweet potatoes until tender and no longer crunchy
5. Cook salmon in a nonstick pan over medium to medium-high heat until internal temperature reaches 165 F
6. Fill soft taco shell with rice, green beans, shredded sweet potato, and salmon
7. Enjoy!
