So, he turned Henri into his servant to do his bidding for him after the boy asked for his name to be detached from the die Heilige family lineage, but a certain fondness for the young Henri grew out of that contract. He was meant to take his soul after the deal with the devil (himself) has been made, but decided to keep on dragging out his inner agony for a bit longer, by forcing Henri to watch as he keeps tormenting his younger sister.

I like to think the pumpkins Goldia interacts with all used to be humans who signed a contract with the Strange Boy, and since the pumpkins are all confirmed to be his servants, this is also precisely what happens once you seal your fate, and give your soul to him.

He keeps Henri around in his human form for a little while longer than he usually does. Only facets of a human's personality remain once they're turned into pumpkins, so that would be pretty boring for the Strange Boy - and same thing would happen to reader. He keeps picking you apart because he wants to keep seeing that agony in your eyes.

Hey, sometimes he'll even try to make you laugh, but he gets mad (he's always grinning, so it doesn't quite show on his expression) when you don't laugh or react to his jokes, so he might pluck your fingernails if he doesn't get the reaction from you he wants.

Come on, now, do you want to join in with the rest of his pumpkins, as a mere, empty vassal, without a soul? He's being quite generous here, doing little theater shows for you (filled with the most difficult to stomach, macabre things imaginable), and you care not one little bit! what an impertinent of a thing you are. He ought to teach you a lesson for it.
