Blackened Chicken Penne
WITH CHEESY PEPPER JACK SAUCE
Ingredients:
1 Long Green Pepper
1 Package Chicken Breast Strips
2 TBSP McCormick Grill Mates Montreal Chicken Seasoning
3 Servings Penne Pasta
1 TBSP Cream Cheese
2 OZ Shredded Pepper Jack
1 TBSP Hot Sauce
2 TBSP Butter
Directions:
Boil medium pot of water. Core, deseed, and thinly slice 1 green pepper crosswise. Place chicken in a medium bowl and pat dry with paper towels. Toss with 2 TBSP chicken seasoning.
Add 3 Servings pasta to boiling water. Cook until al dente, 9-11 minutes.
Meanwhile, heat a drizzle of oil in a large pan over high heat. Add seasoned chicken strips in a single layer and cook, stirring occasionally, until slightly blackened and cooked through, about 4 minutes. Turn off heat. Transfer chicken to a plate. Wipe out pan.
Heat a drizzle of oil in same pan over medium-high heat. Add the green pepper and season with pepper. Cook, stirring, until lightly browned and tender, 4-5 minutes. Turn off heat; transfer to plate with chicken. Wash out the pan.
Melt 2 TBSP butter in same pan over medium-low heat. Stir in 1 TBSP cream cheese, cooked pasta, and a few splashes of water, if necessary, to create a creamy sauce. Season with a pinch of pepper.
Stir chicken mixture, 1.5 Oz of the Pepper Jack, and a splash or two of water into pan until everything is evenly combined and creamy. Divide pasta between bowls and top with remaining Pepper Jack and hot sauce (if desired).
Side Note: Yes, the photo shows red lentil rotini instead of penne. I used what I had in my pantry.

Tried a beef stew with chicken (the husband is off red meat for a while) and honestly it was delicious! You can’t cook chicken thigh for quite as long as stewing beef, but honestly if you’ve got potatoes, peas, and carrots, the stew doesn’t suffer. Sauté the chicken and onions with rosemary, add the veg, broth, dark beer, and Worcestershire sauce and simmer til everything is fall-apart tender.

メカジキのオイル煮でサラダを☆
宮城県で水揚げされたメカジキが 目に止まり オイル煮を作る事に。
スペイン産の美味しいオリーブオイル,ニンニク,粒胡椒,ローズマリー,ローリエを 小さい土鍋にに入れ,ほんの短時間加熱後 余熱で蒸し煮に。
とってもふっくら‼︎ 柔らかい‼︎
作り置きのエリンギのオイル煮,キャロットラペ,ピクルスを使い,スライスしたズッキーニをくるくる巻いて。
あとはパルミジャーノレッジャーノををスライスして乗せました。
ドレッシングは あえて作らず メカジキを煮たオイルとレモン汁だけで シンプルに。
トーストしたパンに オイルをたっぷり浸して食べるのが オススメ。
ワインに合いますね🎶

𝔰𝔭𝔦𝔠𝔢𝔡 𝔱𝔬𝔪𝔞𝔱𝔬 𝔞𝔫𝔡 𝔤𝔞𝔯𝔩𝔦𝔠 𝔰𝔬𝔲𝔭
note: this recipe also contains instructions for garlic vegan cheese bread - totally optional
this recipe serves: 2
ingredients:
for the soup:
1 tbsp of vegan butter
1 tsp of honey (or whatever sweetener you're into)
1/2 an onion
a handful of fresh cherry tomatoes
a can of chopped tomatoes
1/2 a carton of soya single cream
the odd dash of of soya milk
1 whole bulb of garlic
a vegetable stock pot/cube
1/2 tsp of miso
1 tsp of liquid smoke
1 tsp of dried basil
1 tsp of paprika
1 tbsp of onion powder
1/2 tsp of chilli flakes
1/2 tsp of grated nutmeg
1/2 tsp of oregano
a sprig of fresh rosemary
salt and pepper to taste
a bay leaf
1 tsp of parsley
1 tbsp of garlic powder
for the optional bread:
4 slices of bread (up to you what you choose! I used baguette)
vegan cheese to cover the bread - I used honestly tasty's sham
4 tsp of vegan butter
4 cloves of garlic
a sprig of rosemary
salt and pepper to taste

process:
for the soup
on a lined baking tray add your tomatoes, garlic and rosemary - drizzle this with oil and place into the oven on 100C
while that's happening, dice your onions, fry on medium heat with honey and butter
once translucent - add to a blender, along with your cream, chopped tomatoes, all of your seasoning (apart from the bay leaf)
once cooked - add your tomatoes and garlic, blend until smooth - adding soya milk if needed (if you don't have a blender no worries just mash it up if you wanna)
now pour this out into a sauce pan and heat on low to allow it to thicken and mingle - this is where you add the bay leaf ;)
serve when piping hot and store in a liquid safe container once completely cooled

for the optional bread:
on the same baking tray throw on more garlic & roast
while it's roasting, grate/cut your cheese for the bread and mince your rosemary
once roasted, your garlic should be soft enough to simply spread across your bread - do this then add your butter, salt and pepper, rosemary and finally cheese
pop it in the oven to do good things on grill/high heat

FILIPINO RICE CAKES
*gluten free, vegan, no oven, quick, soft and fluffy*
These rice cakes are called Puto and are very popular everyday breakfast cakes in Asia. They take 5 minutes to mix the batter and 10 minutes to steam them.
2/3 cup (100 g) rice flour (non glutinous)
3,5 (100 ml) oz coconut milk
2 tbsp oil
2 tbsp sugar
1 tsp Baking powder
1/2 tsp vanilla extract (optional)
Heat a pot with water for steaming.
Mix flour, milk, sugar and baking powder. Add oil. If you want yellow puto, add 1/4 tsp turmeric powder, if you want brown puto, add 1,5 tbsp cocoa powder and 1 more tbsp of sugar. If you use brown sugar, the cakes will be slightly "tanned". You can divide the batter and make some white, some yellow cakes. If you use coconut oil, they will smell like coconut even more.
Be very careful with hot steam. Place a steaming rack in a pot with boiling water, put cupcakes mold on the rack, pour the batter into each mold a little lower than the brim. Cover with lid and steam for 10 minutes. If the water boils intensively in the pot, the cakes will rise and open up like a flower, as in the first picture. If the water boils not intensively, they will rise a little like in the last picture.
The steam may condense under the lid and drop down. If you don't like it, wrap the lid in a cotton kitchen towel.

嬉しい事が!
大きいイワシ 5尾が 皿盛りに
買おうと思ったら その隣に三尾のイワシが 残っていて
「最後だから おまけしとくね〜」
頂いちゃいました。
せっかくなので イワシ料理を 2品 作る事に。
* イワシのオイル煮
* イワシの梅酒煮
オイル煮のオリーブオイルは 質の良いオイルで 低温調理。ローズマリーをプランターからひと枝取って香り付け。
梅酒煮は 生姜をたっぷり! 梅酒と醤油で味付けして。
思いがけず 和洋2種類のイワシ料理を堪能出来て ちょっぴり嬉しい日に‼︎
