Hey Foodie Fam! 🍜 I apologize for being MIA. I've been cooking like usual and taking pictures, but honestly I've been frustrated with my website. My website is down right now because of malware attacks; over 5,000 to be exact 🙄😡 🍜 Right now, the malware is in the process of being removed, so the site should be up in a few days or less. Serves 4 persons For all the meat-lovers out there, this is a great recipe! From an early childhood, I had 1 favorite dish and that was pork chops with homemade fries! So when my sister just cut the meat with the knife, ate only the "meaty part" and left the juicy, fatty leftovers around the bone, I used to tease her, grab it from her and eat those best parts! No care in the world about the calories lol! Those were the days, ahhh!!            
INGREDIENTS: 4 large Pork chops from the neck! I use these because they have no fat! They are ideal for slow cooking at a very low temperature for a long period of time for succulent meat with a silky, soft texture.

3 tbsp. / 45 ml Olive Oil 125 ml / 0.5 glass White Wine About 200 ml or 4/5 cup Water For the Honey Sauce: 2 tbsp. Greek Honey 4 tbsp. yellow Mustard (mild) 1 tbsp. dry Oregano Freshly ground Salt and Pepper 60 ml / 4 tbsp. Water

METHOD:               A. Cook the pork chops: 1. Place a large non-stick frying skillet over medium fire. Pour the 200 ml water in it. 2. Place the 4 pork chops in the pan. Add a bit more water if needed. It should half cover the meat.

3. When water starts to boil, lower the heat and let pork chops simmer for about 20'. B. Prepare the Honey sauce: 4. In the meantime, make the sauce by pouring about 4 tbsp. water in a bowl.

5. Add the 2 tbsp. Honey in the water. 6. Next add the 4 tbsp. Mustard and the oregano.

7. Season with freshly ground pepper. 8. Use a whisk to blend all sauce ingredients very well, making sure that the honey is completely dissolved! Reserve.

9. Half-way through simmering, turn the pork chops around.

10. When the water has evaporated (which means that meat is cooked through), pour 3 tbsp. Olive oil in the skillet and let pork chops fry for 2' per side. 11. Season now with Salt, to taste. 12. After 2', turn the chops around. 13. Then turn them around once more. 14. Now, deglaze them, by pouring the white wine in the skillet.

15. Cook the pork chops with the wine for 1', turning them around so the wine will go everywhere. 16. Just before you turn off the heat, pour the Honey sauce on top of the meat. Toss the skillet around to help spread the sauce.

17. Turn the pork chops around once more before you turn off the heat. Have a look at this sauce!!! 18. The delicious Pork chops in Honey and Mustard Sauce are now ready to be served! Oh yum!

C. Serving Suggestions: Serve these delicious pork chops on a bed of fresh lettuce and rucola leaves, slices of cucumber, spreading some of the sweet/spicy sauce on top and around the plate!

Here pork chops are served with homemade Fries sprinkled with Feta cheese and oregano (check my separate recipe) and a cool Greek “Savatiano” white Wine!

Από μικρή ηλικία, είχα 1 αγαπημένο πιάτο και ήταν οι χοιρινές μπριζόλες με σπιτικές πατάτες τηγανιτές! Έτσι, όταν η αδερφή μου έκοβε απλά το κρέας με το μαχαίρι και έτρωγε μόνο το "σαρκώδες μέρος", αφήνοντας τα ζουμερά, λιπαρά υπολείμματα γύρω από το κόκαλο, συνήθιζα να την πειράζω, να αρπάζω το υπόλοιπο και να τρώω εγώ αυτά τα καλύτερα κομμάτια! Χωρίς καμμιά έννοια στον κόσμο, για τις θερμίδες! Αυτές ήταν όμορφες μέρες, αχ!
ΥΛΙΚΑ: 4 μεγάλες Χοιρινές Μπριζόλες από το λαιμό! Χρησιμοποιώ αυτές τις μπριζόλες επειδή δεν έχουν λίπος! Είναι ιδανικές για αργό μαγείρεμα σε πολύ χαμηλή θερμοκρασία για μεγάλο χρονικό διάστημα και παράγουν ζουμερό κρέας με μεταξένια απαλή υφή.

3 κ.σ. / 45 ml Ελαιόλαδο 125 ml / 0,5 ποτήρι λευκό Κρασί Περίπου 200 ml ή 4/5 φλ. Νερό Για τη σάλτσα Μελιού: 2 κ.σ. Ελληνικό Μέλι 4 κ.σ. κίτρινη Μουστάρδα (ήπια) 1 κ.σ. ξερή Ρίγανη Φρεσκοτριμμένο Αλάτι και Πιπέρι 60 ml / 4 κ.σ. Νερό

ΜΕΘΟΔΟΣ: Α. Μαγειρέψτε τις χοιρινές μπριζόλες: 1. Τοποθετήστε ένα μεγάλο αντικολλητικό τηγάνι σε μέτρια φωτιά. Χύστε τα 200 ml νερό μέσα σε αυτό. 2. Τοποθετήστε τις 4 χοιρινές μπριζόλες μέσα στο τηγάνι. Προσθέστε λίγο περισσότερο νερό εάν χρειαστεί. Πρέπει να καλύπτει το κρέας περίπου μέχρι τη μέση.

3. Όταν το νερό αρχίσει να βράζει, χαμηλώστε τη φωτιά και αφήστε τις μπριζόλες να σιγοβράσουν για περίπου 20'. Β. Ετοιμάστε τη σάλτσα μελιού: 4. Εν τω μεταξύ, φτιάξτε τη σάλτσα ρίχνοντας περίπου 4 κουταλιές της σούπας Νερό σε ένα μπολ.

5. Προσθέστε το Μέλι στο νερό. 6. Στη συνέχεια προσθέστε τη Μουστάρδα και τη ρίγανη.

7. Προσθέστε επίσης φρεσκοτριμμένο πιπέρι. 8. Χρησιμοποιήστε ένα αυγοδάρτη για να αναμίξετε όλα τα συστατικά της σάλτσας πολύ καλά, σιγουρεύοντας ότι το μέλι έχει διαλυθεί τελείως! Βάλτε τη σάλτσα στην άκρη.

9. Στη μέση του ψησίματος, γυρίστε ανάποδα τις χοιρινές μπριζόλες.

10. Όταν το νερό εξατμιστεί (που σημαίνει ότι το κρέας έχει μαγειρευτεί μέχρι μέσα), ρίξτε 3 κ.σ. Ελαιόλαδο στο τηγάνι και αφήστε τις μπριζόλες να τηγανιστούν για 2' ανά πλευρά. 11. Τώρα αλατίστε! 12. Μετά από 2', γυρίστε τις μπριζόλες ανάποδα. 13. Κατόπιν, γυρίστε τις ξανά. 14. Τώρα ντεγλασάρετε, ρίχνοντας το λευκό κρασί μέσα στο τηγάνι.

15. Μαγειρέψτε τις χοιρινές μπριζόλες με το κρασί για 1', γυρίζοντάς τις έτσι ώστε το κρασί να πάει παντού. 16. Μόλις πριν σβήσετε τη φωτιά, ρίξτε τη σάλτσα μελιού πάνω από το κρέας. Ανακινήστε το τηγάνι για να πάει παντού η σάλτσα.

17. Αναποδογυρίστε τις χοιρινές μπριζόλες για άλλη μια φορά πριν σβήσετε τη φωτιά. Για ρίξτε μια ματιά σ αυτή τη σάλτσα!!!! 18. Οι νόστιμες χοιρινές μπριζόλες με μέλι και μουστάρδα είναι τώρα έτοιμες για σερβίρισμα! Ω ναι!

Γ. Προτάσεις Σερβιρίσματος: Σερβίρετε τις λαχταριστές χοιρινές μπριζόλες πάνω σε φρέσκο ​​μαρούλι και φύλλα ρόκας, φέτες αγγουριού, απλώνοντας λίγο από τη γλυκιά / πικάντικη σάλτσα από πάνω και γύρω στο πιάτο!

Εδώ σερβίρονται οι χοιρινές μπριζόλες με σπιτικές πατάτες τηγανιτές πασπαλισμένες με φέτα και ρίγανη (κοιτάξτε τη ξεχωριστή συνταγή μου) και ένα δροσερό Ελληνικό "Σαβατιανό" λευκό Κρασί!
