Sending these sweet treats off to family and friends. This time of year just reminds me to spread the love. My husband and I are carnivores. So I don’t often go to websites like @ilovegan but this is one of our favvvvorite meals. We had it tonight 😋 . I follow her steps — only adjustments are that I add a sliced red onion (toss it in the bowl used for the other veggies to soak up any leftover flavors) and then I do cook my quinoa in chicken broth not veggie 🙃. We top with avocado, as she suggests, and serve deconstructed with some bread and cheese for the kids. (We have also been known to have with leftovers of a spice rubbed pork tenderloin and the flavors go so well together.) . Food Processor Pico de Gallo (Salsa Fresca) - ilovevegan.com

Ingredients:⠀ • 2 tomatoes⠀ • ½ red onion⠀ • ½ jalapeño, seeds removed ⠀ • 2 cloves garlic, minced⠀ • fresh cilantro leaves, to taste⠀ • 1-2 tbsp canola or olive oil⠀ • 1 tsp sugar (optional)⠀ • salt, to taste⠀ • ½ lime, juiced⠀ ⠀ Directions:⠀ 1. In a food processor, pulse tomatoes, onion, jalapeño, and minced garlic until evenly chopped.⠀ 2. Add cilantro, olive oil, sugar, and salt. Pulse to break up cilantro leaves. Stir in lime juice. Taste and adjust seasoning. ⠀ 3. Refrigerate and let marinate for 30 minutes or more before serving to allow flavours to meld.⠀

Dinner! 🍲 This is a mish-mash version of our Korean Potato Bowl recipe (a bibimbap inspired bowl, today’s version made with what we had on hand… What else is new!?)
Here we have white rice, tangy cucumbers and red bell pepper (from the Korean Potato Bowl recipe), Al Gamja Jorim (a soy sauce-braised Korean potato side dish) made with potatoes AND crispy tofu. Plus avocado and sesame seeds on top, cause why not? THIS WAS SO GOOD!
If you want to make something similar you’ll need the following recipes:

I used the Al Gamja Jorim recipe, halving the amount of potatoes and subbing the equivalent for crispy pan-fried tofu (recipe below). I used the “Tangy Cucumber portion of the recipe for the cucumbers and red bell pepper.

THE SITUATION (aka MY SKIN:) Skin type: pale AF, dry + dehydrated skin⠀ ⠀ • pigmentation issues from sun damage (undereyes) and post-inflammatory hyperpigmentation (PIH) from healing/healed breakouts⠀
• acne that meanders between barely there to mild or moderate acne 
• noticing some early signs of aging (I'm nearly 27, BTW)⠀ ⠀ ‼️Here's what you'll find in my routine: 
💳 fairly affordable products (I'm pretty cheap by my skin is important haha)
💎 my hidden gem cleanser: Vanicream a great #crueltyfree dupe for my old favourite (non-vegan) cleanser, Cerave non-foaming.
💦 ultra-moisturizing products for dry skin (especially great for winter) from @deciem's affordable line, The Ordinary (+ all my other TO faves)
💄 a few makeup faves from @deciem that kinda seem skincareish?
⛅️ my new favourite facial sunscreen from @albabotanica (great for makeup wearers!! this stuff is non-greasy, won't sting your eyes, and smells super mellow. if you're slacking on suncare, TRY THIS STUFF!! and don't skip sunscreen through winter either - I learned this the HARD WAY.)

What we're eating today: Peanut sauce tofu & potato veggie stir-fry with brown rice.
Stir-fried broccoli, carrot, and red bell pepper. Crispy fried Sunrise Soya Foods extra-firm tofu and The Little Potato Company Fingerlings. Lots and lots of spicy peanut sauce made with Pulo Cuisine's Kare Kare Toasted Peanut Sauce, soy sauce, sriracha and water. All on a bed of brown rice. 😋😳 Topped with red chili flakes.
