bought stuff to make a steak dinner yesterday but then i got put on the schedule so instead of steak dinner it's gonna be steak lunch!!!

With most of the classic burger meals migrating to the "Culinary Collection" section on Home Chef, the remaining meals (that fall somewhere within the sandwich alignment chart) are often in the realm of the Bacon Jam Steak Sandwich with roasted potatoes. I was surprised to find this recipe remained at the standard meal kit tier given its inclusion of bacon. Bacon on top of another protein has often come at a premium. The seasoning for the potato wedges was black garlic pepper which I was happy to finally get. The first time I had a recipe that included this spice, it didn't actually include the pack of spice in the bag of ingredients. I tried to find some in the store and it was sold out so I went without. This time, however, I was able to experience the elusive black garlic pepper flavors. Not bad. Kinda earthy and peppery, which was unsurprising. Now, I can substitute more easily in the future if it is, again, omitted. The "Bacon Jam" was created by caramelizing onions and then reducing down with water and brown sugar. The recipe had the bacon and onions go in at the same time, but caramelizing onions takes far too long so I started them much earlier. They are even already cooking in the "prep" shot. They ended up a little overdone but I managed to salvage enough for both sandwiches. The steak strips themselves were rather basic. Salt, pepper, and reducing down with some water and demi-glace. I'm more comfortable letting the steak strips sit and sear than in the past and the tongs I use for pasta are quite adept at separating and flipping the floppy steak strips. This allows me to get a nice sear while still orchestrating an even doneness. While not technically a hamburger, I thought an over-easy fried egg would do well as an addition. The combination of the bacon/onion jam, the tomato slices, and the steak plus the egg yolk was quite nice. I even used the potato wedges to sop up what was left. Pairing for this sandwich was a Great Lakes Hazecraft Hazy IPA. I wanted something refreshing and hoppy to go with the meal but not an IPA that was too bitter since the overcooked onions ran the risk of adding their own bitterness. Worked out about as well as I could've hoped. This sandwich was close enough to fall into the "burgers and beers" category of classic pairings.

Honey and Whisky Glazed Roast Pheasant
Pine honey and Benromach Peat Smoke Scotch Whisky glazed roast pheasant with a haggis and chestnut stuffing. Served with gold salted duck fat fried waffle cut potato crisps, pickled red onion, watercress, vinaigrette. I cooked two pheasants and greedily devoured one of them, unapologetically stripping the meat off the carcass with my hands mopping up the whisky glaze from the roasting pan as if I hadn't eaten for months. The smokiness in the whisky is a perfect match with the pheasant coupled with the richness of the honey. Accentuated with a glass of whisky alongside. Benromach Peat Smoke is produced in small batches and matured in first-fill bourbon barrels offering fragrant vanilla notes which lead to lemon sherbet and apricot, finishing with smoky bonfire embers due to the heavily peated barley... A beautiful winter tipple during these cold, dark months. 'Please enjoy Benromach responsibly'!
The whisky and honey glaze is ultra-simple to make and would easily go well brushed onto a steak, a burger or other roast meats. Here's the recipe:
120ml Benromach Peat Smoke Scotch Whisky
140ml pine honey
2tbsp soft dark brown sugar
1tsp garlic granules
1tsp onion granules
1/4 tsp cayenne pepper
a splash of Henderson's Relish (or Worcestershire Sauce)
Simply put all the ingredients into a pan, bring to the boil then reduce to a simmer until the glaze thickens to a syrupy consistency.

To roast the pheasant:
1 pheasant
a generous handful of cooked haggis
a generous handful of roasted chestnuts, crushed
8 juniper berries, crushed to a powder
sea salt and black pepper
rapeseed oil
Pre-heat your oven to 180°C. Mix the haggis and chestnuts and stuff into the cavity of the pheasant. Place on a roasting tray and smother the bird with a little rapeseed oil. Season with crushed juniper berries, sea salt and black pepper. Roast for 30-45 minutes depending on the size of the bird. Once cooked, the internal temperature of the breast meat should read 63°C with a digital temperature probe, the leg meat 80 to 82°C. Brush the bird at intervals with whisky and honey glaze. Let the bird rest for about 10 minutes before carving.
For the waffle cut crisps:
2 medium-sized Maris Piper potatoes, peeled
300g duck fat (or 300ml rapeseed oil)
Gold salt (optional) or sea salt
Use a mandolin with waffle cut setting to slice the potatoes. Heat the duck fat (or rapeseed oil) in a pan to 170°C. Fry the potato slices for about 30 seconds until golden. Drain on kitchen paper and sprinkle with sea salt.
For the pickled red onion:
1 medium red onion, sliced into wedges
100ml red wine vinegar
½ tsp sea salt
½ tsp sugar
¼ tsp chilli flakes
Put the red wine vinegar, salt, sugar and chilli flakes into a small pan and bring to the boil, reduce to a simmer until the sugar has dissolved. In a small bowl, pour the contents of the pan over the red onion and leave to cool for at least an hour or refrigerate overnight.
For the vinaigrette:
50ml white wine vinegar
1 tbsp cold water
1 tbsp whole grain mustard
¼ tsp sugar
Sea salt and black pepper
200ml rapeseed oil
Put all of the ingredients apart from the rapeseed oil into a jug, then slowly pour in the rapeseed oil while blitzing with a hand blender until the vinaigrette has emulsified. Store in the fridge until needed. Will keep for a couple of weeks.

Okay put together a menu for an all day eat-a-thon. This includes breakfast, brunch, lunch, afternoon snack, dinner, dessert, and late night snack
Damn, let’s see. Hmmmmmm
I like something easy for breakfast, so probably get started with a few big bags of chips, biscuits and gravy, hashbrowns, and some juice or a protein powder fruit shake.
For brunch, maybe something slightly more substantial, probably chicken fried steak and gravy, mashed potatoes, maybe some French toast, hot cocoa shake might be nice, some subway sandwiches (I’m thinking tuna or maybe chipotle chicken), a nice thick soup I think (probably broccoli cheddar or baked potato soup; maaaaaybe baked macaroni and cheese), and maybe some pretzels or something.
Lunch, gotta start ramping it up a bit I think, so let’s do a couple large pizzas, a few sandwiches and maybe a large side salad (I like chicken Caesar), some donuts, I think I’d want some snacks like a couple bags of Sourpatch Kids or licorice or snickers or something, and I think some Tropicana and a peanut butter gaining shake would be good.
Afternoon snack could be just about anything, probably several more bags of chips and candies and stuff. Cookies would be nice. However many I have access to, lol. I tend to just graze and keep putting stuff in my mouth until I run out. More fruit smoothies and gaining shakes for sure. I think I could go for some fries and chicken strips too.
Dinner’s gotta be a big one: gimme some thick-ass lasagna, buckets of fried chicken and potato wedges and gravy, a few big salads, mozzarella sticks, garlic bread, dumplings and rice and soy sauce, and keep the gaining shakes and smoothies flowing (maybe throw some wine in there).
Dessert, let’s have unlimited fudge brownies (LOVE them), a cake or two, ice cream (cookies and cream or chocolate fudge, maybe mint chocolate) with as many real cookies and cream and candies as we can get in there, and naturally several more shakes filled with all of them combined.
And then snacks can be whatever’s left, I’ll eat absolutely anything easy that late in the day, lol

everytime I see this scene from it reminds me of the idea I had for a restaurant that’s basically Chuck E Cheese but replace the pizza with french fries (since I’m a huge fan of french fries and I’d usually get them as my only meal when I go to restaurants)

also, you know those conveyor belt sushi restaurants where a big conveyor belt is around the tables where the customers sit (kind of like a bar but with an conveyor belt up front), and the chefs being in the center cooking everything, and would serve plates of food onto the conveyor belt, where the customers can get what comes their way as the plates move along the path, and if you don't see what you want you'd ask the chefs, and they'd determine how much you pay by counting the amount of empty plates stacked in a pile from what you've eaten, you know that kind of restuarant, well I would do the same thing for my idea for this place just replace the sushi with french fries, with one side being the conveyor belt and tables and the other being the arcade, and we’d have the best arcade games around
top it off with a setting that’s a mix of nature and Sci-Fi B-Movie (so kind of like what’s going on here in Pajama Sam 3) & I’ve got a good place here

Kalinka isn’t the most organized and they could be more generous with their bread but the food is homestyle and comforting and the service was friendly. If you like sour cream and dill, you’ll get plenty. I was also apparently the very first person to place an online order on their new website.
I placed the order on their website and received a confirmation via email. It said the order would take 30-60 minutes. I didn’t hear from them an hour later, so I called. The woman who answered the phone could not find my order. I explained that I placed it on their website. She said the website was new and she could not access any orders placed through the website. What??? So I placed the order over the phone and waited another 25 minutes. The food was ready on time and by the time we ate it at home, we were starving. The server was apologetic.
There are no vegetarian entrees but they do have several kinds of fish. Other offerings include pelmeni, schnitzel, kabobs, chicken kotlet, jarkoe pork, jarkoe beef, veal shoulder, etc.
Beef stroganoff with mashed potatoes (you could also have rice or fried potatoes) and a side of sour cream, $21.50. This was a good size with strips of beef, a bit of pickle and something that tasted like sauerkraut, lots of beef gravy, a big scoop of mashed potatoes sprinkled with fresh dill. I hadn’t had beef stroganoff in years and this hit the spot. The gravy was a tad salty but I liked the unexpected addition of pickles and the beef wasn’t tough. The mashed potatoes were buttery and pretty smooth.
Borscht ($9.50) beef base with carrots, potatoes and beets and sour cream on the side. There was one chunk of beef. A little pricey perhaps but comforting, sweet and earthy.
Assorted spreads ($8.50) 4 kinds – cheese, eggplant spread, eggplant caviar and adjika pepper spread with warm, sliced white bread: The bread was fresh and soft with a chewy crust. I noticed other people were given rye bread (in the uploaded pics). We didn’t get any. Enjoyed the spreads but the amount of each was so small. The eggplant caviar was my least favorite (too salty). The cheese spread seemed like feta? Pretty good with the other spreads.
Salmon steak with veggies ($20.75): Big piece of salmon, nicely cooked, tartar sauce and a wedge of lemon on the side. Kraut and plenty of veggies (zucchini, carrots, bell pepper).
Due to COVID-19, indoor dining was not offered but they had a tent in the parking lot with a few tables. Parking was easy to find. I wish they had comped the bread, especially with the ordering mishap.

Two posts in a row! I’m on fire!
Because of the long weekend that I’ve mentioned earlier, I thought I’d make a few extra things yesterday to kick this post off.
I’ve been reading Aaron Franklin’s book, Franklin Steak: Dry-Aged. Live-Fired. Pure Beef, and I learned a few new things about cooking steak, and the ideal ways to cook certain cuts of beef.
I’m no stranger to making steak at home, but learning about other techniques, origins of grilling techniques, and even places to order meat online, was pretty cool. Near the end of the book, Aaron brings up some recipes for sauces and other accompaniments that go well with steak, and I decided to do the one featured on the cover: the salsa verde.

The beef in all it’s glory.
It’s pretty simple to make, and although it was packed with flavor, it was really refreshing to eat, and paired so well with the steak. Might have to do with the acidity of the lemon zest and capers in the sauce. I think the flavor really comes through because of the chopped anchovies.
Although you see a little bit of it on the steaks, I’ve completely forgot to take pictures of the actual sauce and the process of making it since I wanted to show it off. Again, super simple, and I’ll out how I went about making this. You can read more at the jump!
Ingredients:
2 bunches parsley, flat-leaf
4-6 cloves garlic
3 olive oil-packed anchovy fillets
1 tsp. fine salt (sea salt is what I used)
1/4 cup small capers, drained
1 cup extra-virgin olive oil
1 tsp. honey
1 tsp. rice vinegar
1 lemon
Pro strats: If you want to make this, make it hours in advance, or even overnight, before you make your steak.
You want the flavors to sit 
1. Pick the parsley leaves from the stems and throw away the stems. You’ll want to collect all the leaves, and then finely chop the parsley. Once that’s all chopped up all nice and fine, set it in a bowl.
2. If you’ve got a mortar and pestle, throw the garlic and the salt into the mortar, and grind the heck out of the garlic and the salt to make a paste. If you don’t have one, you can use the back of your knife to smash the garlic. Salt the garlic, and then continue to chop and flatten with the back of your knife until you get a nice paste going. Rubbing the mixture with the back of your knife will help with the paste process too.
3. Once you’ve got your garlic paste, chop up the anchovy fillets and add to the garlic paste, and doing the paste process again. Once your paste is ready, go ahead and add it to the bowl of parsley.
4. Next, you’ll want to finely chop your capers. Add the capers to the bowl.
5. With a zester, zest the lemon and add it to the bowl with everything else. If you’re like me and don’t have a zester, use a vegetable peeler to peel the lemon, cut into thin strips, and then chop it all up, so you get zest-like pieces to add to the bowl.
6. Lastly, add the oil, honey, and vinegar to the bowl and mix it well. Store it in a container with a tight cap, and let it sit overnight so you can let all the flavors of the ingredients come together. You’ll want to bring it to room temperature when you’re ready to serve it.
Really easy to make, and really goes well with almost everything. I even made some potato wedges and was adding a little bit of the salsa verde on them. I think it would go great on fish and chicken.

I ranked the following based on taste alone. I made no consideration for ambiance or the general dining experience or whatever. I included meals I got to go. I included food trucks, catered meals, and fast food.
This month has three serious contenders to make my Best Meals of the Year list. If any of them don't make that list, it's going to be one hell of a year for eating.

The Big Texan
On my family trip this summer, eating was pretty hard. We had grown accustomed to eating one meal a day and it being from a gas station. For days we had eaten nothing but chicken strips and potato wedges for our one meal and then snacked throughout the rest of the day. On our final leg of the trip, we had made it to Amarillo, Texas. Thank. God. The trip was amazing, but I was ready to be home; we were all absolutely exhausted. Once we arrived, it was around 8:00 pm. We had not had our one meal yet so I was starving. My stepdad was very excited about staying in Amarillo because of the very famous “Big Texan.” The Big Texan is a restaurant known for its steaks, and has even become a large tourist attraction. When we arrived, I saw cars with license plates from Colorado, Washington, even Alaska! Seeing that people from everywhere come to this restaurant, I got just as excited as my stepdad was. My stepdad walked into the restaurant to ask for a table and he learned that it was another hour wait before we could get seated. by this time it was already 8:30 pm so it was probably going to be 10:00 pm before we got to eat. I was pissed to say the least. Who wants to eat their first meal at 10:00 pm?! My stepdad walked out and said that he wanted to wait because he was looking forward to their steak, so we stayed sadly. While we waited impatiently, we decided to go into their shop and to appease me, my stepdad bought me a cowboy hat for fun. For the moment, I was having a good time... until we sat at our table. All of the tables were about one foot apart, which really did not match the prices on their menu. All four of our meals were about $20 a piece; my mom, stepdad, and I got steak and my brother got ribs. We received our food around 10:00 pm and I have never been so disappointed in my life! The steak did not even have salt and pepper on it! At that point, I would have rather eaten fried chicken and potato wedges from the gas station because at least it had flavor. My stepdad paid $100 for this terrible meal, and I will never forget that moment.
