Throughout history, Christian clergy have worn both red and white. The highest offices -- see: the popes -- wear white because it symbolizes purity. Purity has often been associated with holiness as it signifies a lack of sin.
Red has been worn by other offices -- and often by depictions of Jesus -- because it represents holy blood spilled. Martyrs are often depicted in red. Bishops and cardinals also wear shades of red.
Red is also associated with passion and sin, though. Perhaps, it represents humanity itself.
