Bacon Wrapped Chicken Thighs with Baked Onions. I brined the chicken thighs in pickle juice for 6 hrs. Then seasoned with a smokey bbq rub and wrapped them in bacon. The onions are rubbed down with olive oil and fresh basil and also seasoned with salt and pepper. Roasted all together for 60min at 375掳F. If I would have had yellow onions rather than white, they would have carmelized more.
