I was rewatching season 1 of wwdits and when the gang was discussing killing The Baron.
And then the door opens, they all scream and who appears?
Guillermo appearing when "can he even die?" is foreshadowing to him "killing" the baron (but also later on other vampires).
The "is this the new you?" means "so you killed the baron. Are you the vampire slayer now? Is this your identity?" Because remember that Guillermo was torn apart between his ancestry (van Helsing, fate if you will) and his will to become a vampire and the guilt that came with it.

Here me out here me out, dumb season 4 idea:
Guillermo confesses to Colin and/or Nadja that he's in love with Nandor but Laszlo overhears him say "I love him" and just immediately assumes Guillermo is talking about him. A bunch of plot stuff happens all episode while Laszlo, still refusing to be a main character, is off doing his iconic dumbass routine, trying to figure out how to confront Guillermo on his "feelings" for him.
