This recipe, with its inclusion of lettuce, carrots, and lentils, seemed like the perfect compliment to my follicular phase, as well as super delicious. I can't believe this is my first time trying this one!
I quartered this using 1/8 cup uncooked quinoa, slightly less walnuts as I was almost out, and a little more purple cabbage than I perhaps intended. There are a number of different components to prep here, which was at first rather intimidating, but I was pleasantly surprised to find that this took far less time than I thought it would.
I started the quinoa and lentils first and just decided to chuck them in together and see how they got on — as it turns out, surprisingly well. The lentils were just a tad undercooked, but that was fine by me.
I next turned to the slaw, then the peanut sauce, and finally prepped the rest of the filling. All in all, this was a 45 minute process — pretty good for me.
The five spice really gives this an unusual flavor, one that went beautifully with the rest of the components. The peanut sauce was definitely one of the best I've made in a while, and it really does take a lot for one to impress me these days!
Overall, this was such a great meal, so full of delicious flavor and satisfyingly filling. A perfect one to keep in my pocket for my follicular phase!

5 days (!) until the final chapter of A Secret Uncovered! (Are you guys excited yet? Only 5 more days!)
Today we have 5 common questions I’ve never properly answered.
Why the lettuce wraps? - So literally the day I wrote this chapter I went to PF Changs for the first time, so it was totally on my mind. I just thought they were so fun and unique at the time. I was also a bit of an immature writer so I pulled on a lot of my personal experiences (aka I like this so the main character must like it too) instead of thinking about what the character would actually obsess over. But now it’s a thing and I don’t intend to change it.
Did I know where it was going when I started it? - Nope, absolutely not. Originally it was going to be an exploration of a reveal and then I realized in about chapter 4 that I needed a plot. Then that plot ended up becoming a thing.
Inspiration? - I wanted a deeper dive into the post-reveal. I wanted a full on fic that looked at every aspect of the post-reveal process. I carefully chose each interaction that Danny had post-reveal to really showcase all these different aspects and give them the time they needed so we could really sit in those moments.
(Spoiler for current chapters already posted) Was I always going to kill that character? - I was always going to kill someone. I watched a lot of Buffy and Firefly when I planned this out and knew the impact that the right death could cause to readers and to characters. I didn’t really know who that would be until I finished the chapter. Tucker, Vlad, and Jack were also possibilities I toyed with, but in the end I picked the person Danny relied on the most.
Why did Dash choose to bully Danny? - So back when this was written in the early 2000s, there wasn’t the big push in the phandom to redeem Dash. Some fics existed, but there really wasn’t much. So it made sense to me at the time for Dash to continue to bully Danny, and from a story perspective I thought it introduced some additional conflict for Danny to deal with through school. But I’m addressing his reasons for this at the end and I think I’ve got a suitable reason for his actions and a nice way the two of them are going to act towards each other moving forward.

Vegan Lettuce Wraps {Gluten-Free}
Prep Time 20 mins Cook Time 10 mins Total Time 30 mins Servings: 4
Ingredients
1 cup cooked brown rice 1 cup canned chickpeas rinsed and drained 1/2 cup slivered almonds 2 tablespoons raw cashews optional 1 tablespoon gluten free tamari 2 teaspoon chipotle paprika 8 ounces fresh green beans cut into 2 inch segments 1-2 tablespoons coconut oil
Sauce: 2 tablespoon extra-virgin olive oil 2 tablespoons gluten free tamari 2 cloves garlic minced 2 tablespoons ginger minced 1 tablespoon dry white wine 1 teaspoon sesame oil 1/2 cup cilantro chopped Sesame seeds for garnish
2 heads of romaine lettuce washed and removed from stem
Instructions
In a food processor combine brown rice, chickpeas, almonds, cashews chipotle paprika and 1 tablespoon gluten free tamari. Process on high until mixture is broken up into smaller pieces but not completely smooth. In a small bowl combine the sauce ingredients, 2 tablespoons olive oil, minced garlic, ginger, white wine, sesame oil, and cilantro. Mix until smooth. Heat pan over medium heat and add 1-2 tablespoons coconut oil. Add brown rice mixture and cook for a few minutes. Add green beans, mix with the brown rice mixture and cook until cooked through but still crispy. Remove from heat. Add sauce. Mix until thoroughly incorporated. Serve in romaine lettuce leaves, sprinkled with sesame seeds and hot sauce (optional)
