I decided to make my own interpretation/design of an endermen a while back.
Hairless (besides the flimsy wispy hairs on the back of the neck) with taught, lean, veiny body (despite having zero blood and are more or less hollow). They are perpetually stooped in most circumstances, and have low dragging hands that are elongated and thin to help them eat (chorus fruit or something, who knows if they even need to actually eat). Their eyes are buggy and bright. Their disposition is meek, and that of constant anxiety, they dread being interacted with, they much prefer passive observation. Their core is a pearl that more or less is their energy/heart, and the rest of their insides are hollow or almost woodwind like (they can use air passing through these to click and chirp).
In extreme circumstances when a threat (something making prolonged eye contact) sets them off, they put on a show. They violently suck in air, which collapses their neck/throat and pulls it through their mouth in a very ghastly appearance (kinda like a frog). Their jaw is dislocated to accommodate this stretch, and their eyes bulge considerably from the pressure of their throat/neck. Their lips flip up and over their nose/snout to reveal black needle like teeth (fangs/teeth a bit like a snake/eel). Since the neck is sucked up into the mouth, this pulls their body ramrod straight, drawing up their shoulders and puffing out their chest, which makes their figure much taller and imposing. Their arms are held rigidly at the sights, threatening to lash out at a moments notice. The constant sucking/holding of the air to create this display creates a ghastly shrieking/grunting noise, adding to the intimidation factor. With all that said, this display is not only painful for them to perform and hold for long periods of time, but also distressing to their psyche, therefore they do everything in their power to get the situation over with.

Minecraft Armor Statue Flower/Tree Pot
This is assuming you already have downloaded the mod and created your Statues Book. If not, click here.

What You Need:
Three leaf blocks, one log, one composter + an optional dirt block
This micro-statue requires three armorstands, four if built with dirt.
With the first two leaf blocks placed, I place my first armorstand. On the second page of the book, I selected "Show Arms: Yes"
The current size of the composter, or "pot" is not big enough to support the weight of a small tree! We must go to the "Auto Alignment" page!
We select this button, which will place the Composter as the head-item.
You will now have a bodyless man, with a composter for a head. We will now go to page "Pose Presets" and press "Attention". Armorstands have a big of a curve to them, more specifically their head is slightly tilted down. This fixes it so they can be perfectly alligned.
As this bit is a tad tedious, I choice to place a Lecturn, and put my Statues book on it.
Be sure to stay within a reasonable distance of the stand you're working on. Before I start moving it, I go to "Style Settings" and need to pick two very important options.

"Apply Gravity: No"
I move to the second page, "Nudge Position". I recommend using a Minihud, to get your coordinates and the direction you're facing. You want the composter to touch the floor. For this, I went ahead and hit "Nudge: Y, -8" 3 times, and Nudge: Y, +3" once.
I am facing positive Z, and using the "Nudge Position" it knows which way I am facing. Therefore, to have it closer to underneath the pot, I hit "Z, +8" once, and "Z, +3" Twice. The amount of times you do this is ENTIRELY situational, but you'll get used to it very quickly.
The most important step: I LOCK it on the Utilities page. It must have a white outline.
I think this looks good and even, so I move on. Next is the log.

I do NOT flip to head. I instead select "Block on ground". Due to my wall, there was a shading error, as the Armorstand clipped with it. I was able to move away and face towards the Dark Oak Log wall, and the Stripped Birch had no effect.
I adjusted with the Nudge Position settings until I felt it was in the middle, with a little bit of space not quite touching the Leaf block.
It would look different if you didn't have the Bushier Bush resourcepack. And even with it, I don't quite like how it looks. So, I LOCK the second armorstand.

Adjust until satisfied. LOCK IT!!
Adding Dirt would be the same process, but personally I enjoy it without!

Been a bit hectic in my life lately and haven鈥檛 had much time to play, but messed in my creative world a bit more designing my聽medieval steampunk village, and added way too much to the terrain + walls and I haven鈥檛 even finished it lol.聽
They announced the ReloadedSMP will move on to season 4 (only 4 months into season 3 atm), but didn鈥檛 give a date, so I likely won鈥檛 have time to do all this... That鈥檚 not to mention the rest of the houses and shops and remaining terrain.聽
Anyway, having fun with this build and might move to my own survival to finish and flesh out!
